Here's a simply perfect appetizer for your next cocktail party: shrimp poached in Chinese seasonings and served with a flavorful dipping sauce of hoisin and sesame oil.

40 large shrimp, peeled (remove vein if you like)
1/2 cup soy sauce
1 star anise
1 tablespoon Sichuan or black peppercorns
5 slices ginger
1/2 cup hoisin sauce
2 tablespoons sesame oil

Steps:

  • In a large saucepan, combine shrimp, 3 cups water, soy sauce, anise, peppercorns and ginger. Bring to a boil, then turn off heat and let sit, undisturbed, for about 30 minutes. If you are not serving right away, refrigerate shrimp in liquid; recipe may be prepared to this point a day before serving.
  • When ready to serve, drain shrimp, and put on a platter. Whisk together hoisin and sesame oil in a small bowl; serve shrimp with this sauce.

This is a variation of a recipe which I found in an old cookbook I purchased over 25 years ago titled, The Encyclopedia of Creative Cooking. I have changed it slightly to adapt to a less expensive version. It is really good with any kind of fish...but my favorite is with fresh salmon. If you read the entire recipe you will see that although it looks complicated at first glance it really is very easy and quick to make. Preparation time includes thickening time of cooking the sauce.

8 fish fillets
1/2 cup milk
1 teaspoon salt
1/4 teaspoon black pepper
2 (6 1/2 ounce) cans shrimp, drained
1/3 cup margarine
1/2 cup flour
2 teaspoons salt
1/2 teaspoon black pepper
1 1/2 teaspoons sweet paprika
1 teaspoon parsley flakes
1 1/2 quarts half-and-half
1 (4 ounce) can mushrooms

Steps:

  • Sauce:Melt margarine in a saucepan over low heat.
  • Stir in flour then gradually add the half and half.
  • Cook over medium heat until thickened, stirring constantly.
  • Add remaining ingredients and simmer over very low heat while preparing fish.
  • Fish:Roll up each fillet from the larger end and secure with a toothpick and place in a glass 9 x 13 baking dish.
  • Add milk, salt, and pepper to the fish.
  • Cover with waxed paper and microwave for 3 minutes on full power.
  • Remove fillets from baking dish, discard liquid and then put the fish back into the dish.
  • Pour hot shrimp sauce over the fish and bake for 15 minutes at 350 degees.

2 teaspoons sea salt
2 lemons, halved, plus more for serving
3 bay leaves
1 handful fresh thyme leaves
1 handful fresh flat-leaf parsley
1/4 cup seafood seasoning (recommended: Old Bay or Zatarains shrimp boil)
2 pounds jumbo shrimp, with shells, heads, and tails on
Bloody Mary Cocktail Sauce, recipe follows
4 ripe tomatoes, coarsely chopped
2 celery stalks, coarsely chopped
1 medium onion, coarsely chopped
1/2 cup ketchup
2 tablespoons grated fresh or prepared horseradish
1 lemon, juiced
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
1 shot pepper vodka
1 teaspoon celery seed
Sea salt and freshly ground black pepper

Steps:

  • Fill a large pot with about a 1/2 gallon of water, add the salt and squeeze in the lemon juice; toss the halves in there too for extra flavor. Add the herbs and seafood seasoning. Bring to a boil over medium-high heat and simmer for 5 minutes to infuse the water with the aromatics.
  • Reduce heat to medium-low and add shrimp. Simmer, uncovered, for 5 minutes or until the shrimp are bright pink and the tails curl. Using a slotted spoon, remove the shrimp from the poaching liquid and chill thoroughly before peeling. Serve with lemon wedges and Bloody Mary Cocktail Sauce as part of a raw shellfish bar.
  • Combine the tomatoes, celery, and onion in a blender and puree to break the vegetables down. Add the remaining ingredients and puree until smooth. Chill before serving with a raw bar.

WINE-POACHED MAHIMAHI AND SHRIMP

Number Of Ingredients 10

6 5-ounce skinless mahimahi fillets (each about 1 1/2 inches thick)
2 teaspoons olive oil
3 cups bottled clam juice
1 cup dry white wine
1/2 lemon, thinly sliced
3 garlic cloves, peeled
1/4 teaspoon dried crushed red pepper
1/2 pound uncooked medium shrimp, peeled, deveined
Sautéed Fennel, Capers and Arugula
Fresh fennel fronds

Steps:

  • Pat fish dry with paper towels. Sprinkle with salt and pepper. Heat 1 teaspoon oil in large nonstick skillet over medium-high heat. Add 3 fish fillets to skillet. Cook fish on one side only until brown, about 3 minutes. Transfer fish to plate. Repeat with remaining 1 teaspoon oil and fish fillets.
  • Combine clam juice, wine, lemon slices, garlic and crushed red pepper in heavy large skillet. Cover and simmer until flavors blend, about 10 minutes. Add fish and any accumulated juices to skillet. Cover and simmer until fish is opaque in center, about 10 minutes. Using slotted spoon, transfer fish to platter. Add shrimp to fish cooking liquid. Simmer until shrimp are just cooked through, about 2 minutes. Using slotted spoon, transfer shrimp to platter with fish. Tent with foil to keep warm.
  • Remove garlic and lemon slices from cooking liquid; boil until liquid is reduced to 1 cup, about 20 minutes.
  • Divide Sautéed Fennel, Capers and Arugula among 6 plates. Place 1 fish fillet atop each. Top each with 3 shrimp. Spoon reduced fish cooking liquid over. Garnish with fennel fronds.

This has been a hit with all family members! We enjoy it served with fresh green beans or broccoli and a large salad. This is a dish we used to pay dearly for in a restaurant but now that I figured out how to make it at home we save lots of money!

3 -4 lbs salmon fillets
1 1/2 cups chicken broth
2 stalks celery
1/2 medium onion
4 tablespoons butter
4 tablespoons flour
1/2 teaspoon salt
2 cups milk (I prefer whole)
8 ounces monterey jack cheese, shredded
1 (6 ounce) can crab
2 (6 ounce) cans baby shrimp

Steps:

  • In a large skillet (I use my electric skillet), simmer chicken broth, celery pieces (about 3 inches long) and onion slices.
  • I use the vegetable pieces to make sort of a"trivit" under the salmon, so make them chunky.
  • Simmer for about 15 minutes.
  • Lay the fillet over vegetables, tucking under the tail end and continue to simmer until done through, about 30 minutes.
  • Make sure it is flaky and done all of the way through by seperating the fish with a fork.
  • If it is still bright orange, simmer longer.
  • Meanwhile make the sauce by melting the butter then adding the flour.
  • Cook for about 1 minute, then gradually add the milk.
  • Heat through but do not boil.
  • Once hot, gradually add the cheese and stir until it is all melted.
  • Add the crab and shrimp, heating gently until hot.
  • Remove the fish from the skillet and discard the broth and vegetables.
  • Serve the fish and sauce seperately as some like more sauce than others.

1 cup dry white wine
6 whole black peppercorns
1/2 lemon
1 Turkish bay leaf
Pinch of coarse kosher salt
8 uncooked unpeeled large shrimp
Dipping sauce:
1/4 cup crème fraîche or sour cream
1 tablespoon chopped fresh chives
1 teaspoon prepared white horseradish
1/2 teaspoon finely grated lemon peel
Coarse kosher salt
Whole fresh chives (for garnish)

Steps:

  • For shrimp:
  • Fill medium bowl with ice water; set aside. Combine 2 cups water, wine, and next 4 ingredients in medium saucepan. Bring to boil. Add shrimp; reduce heat to low, cover, and poach just until shells are pink and shrimp are opaque in center, 3 to 4 minutes. Using slotted spoon, transfer shrimp to bowl with ice water; reserve poaching liquid and lemon half. Drain and peel shrimp, leaving tails intact. Devein shrimp.
  • For dipping sauce:
  • Squeeze juice from reserved lemon half into poaching liquid in pan. Boil liquid until reduced to generous 2 tablespoons, about 20 minutes. Strain; cool.
  • Mix crème fraîche, chopped chives, horseradish, lemon peel, and 1 tablespoon reduced poaching liquid in small bowl. Season sauce with coarse salt and black pepper. DO AHEAD: Shrimp and sauce can be made 1 day ahead. Cover separately; chill.
  • Spoon dipping sauce into short glasses. Arrange shrimp on rims. Garnish with whole fresh chives.
