MEXICAN MEATLOAF

- Preheat the oven to 375 degrees F.
- In a heavy skillet, add the oil and heat over medium-high heat. Add the onion and cook several minutes, until softened. Add the garlic and cook for a minute or two longer. Add to a large bowl and let cool for a few minutes. To the bowl add the eggs. Beat lightly. Add in the salt, pepper, cayenne, cumin, ketchup, and sour cream (or substitute) and mix together. Add in the bread crumbs, ground beef, and chorizo, and mix together lightly, but thoroughly.
- For Individual Servings: Portion out into six servings. Form into oval egg-shaped loaves about 3 inches tall with curved tops (dividing is easiest done by estimating half of the mixture, then thirds.) Place on a foil-lined rimmed sheet tray (foil is optional, for easy clean up) an inch or so between each loaf. Bake at 350 degrees to 165 degrees F, about 20 minutes depending on oven. Do not over bake.
- For Large Meatloaf: Put the mixture into loaf pan or form a loaf-shaped meatloaf on foil on a sheet tray and bake until the meatloaf registers 160 degrees F, about an hour to an hour & 10 minutes. Remove from the oven and carefully pour off any accumulated drippings.
- Serve with glaze, drizzled and/or passed at the table and lime wedges for garnish.

GLAZED CHIPOTLE MEATLOAF RECIPE

- Preheat oven to 350 F degrees. Add butter to small skillet and melt over MED heat. Add onion and cook 4-5 minutes, until soft and slightly browned on the edges, stirring occasionally. Add garlic and cook 1 minute. Set aside to cool slightly.
- Add diced bread pieces and milk to a large mixing bowl and stir to combine. Add beef, cheese, cilantro, minced chipotle peppers, chili powder, cumin, salt, pepper, beaten egg and cooked onion mixture. Mix together until just combined.
- Lightly spray a meatloaf pan with nonstick cooking spray. Pat meatloaf into prepared pan.
- Combine sauce ingredients in small bowl. Slather about half the sauce on the top of meatloaf, and bake for 60-90 minutes, until meatloaf is about 150-155 F degrees. Let stand 10 minutes before serving. Use the remaining half of the sauce to spoon over the top or dip the meatloaf in as you eat :)

HONEY CHIPOTLE GLAZED MEATLOAF

- Preheat the oven to 350 degrees.In a small bowl, whisk the ketchup, honey, finely minced chipotle pepper, adobo sauce, cumin, cilantro and Worcestershire sauce then set aside.
- In a medium mixing bowl, combine the ground beef, onion, cilantro, breadcrumbs, milk, whisked egg, Worcestershire, cumin, salt, pepper and shredded cheese. Using your hands, combine until it's well blended.
- Shape the meat into a loaf without packing it too tightly (packing the meatloaf too tightly dries it out) and place in the baking dish.
- Bake uncovered 35-40 minutes or until the meat is cooked through all the way.
HONEY CHIPOTLE MEATLOAF

- Preheat the oven to 350 degrees F. Line a baking sheet with foil and coat with nonstick cooking spray.
- In a large mixing bowl, using your hands, combine all the meatloaf ingredients; mix thoroughly. Transfer to the prepared baking sheet and shape into a loaf approximately 2 inches high by 4 inches wide, making it as uniform as possible. Smooth the top and place in the oven on the middle oven rack. Bake for 60 minutes; set a timer for 30.
- While the meatloaf is cooking, make the glaze. In a medium bowl, whisk together the honey, 2 tablespoons minced chipotle peppers, and vinegar.
- When the timer beeps at 30 minutes, generously brush the glaze over the top of the meatloaf. Place back in the oven for another 10 minutes. Repeat the glaze two more times in 10 minute intervals.
- The meatloaf is done when the internal temperature reaches 170 degrees F. Let cool for 5-10 minutes before slicing and serving.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, carrots, green chilies, cilantro, ketchup, pickled jalapenos, Worcestershire sauce, eggs, bell pepper, garlic, onion, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. CHEDDAR-CHIVE MEATLOAF WITH SPICY BARBECUE GLAZE

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, Cheddar, oats, carrots, chives, Worcestershire, eggs, onion, garlic, ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.

CHIPOTLE MEATLOAF
From Cooking Light- can use all ground turkey instead of turkey and breast-even sub ground beef or pork for that matter. I always soften my onions before adding them to meatloaf or meatballs. When I make this, I omit the basil, and up the chipotle, cumin and pepper. I also add black pepper and dried chipotle pepper to the sauce.

- To prepare meat loaf, chop chile. Combine chile, adobo, onion, and next 14 ingredients in large bowl, stirring to combine. Place turkey mixture in a 9x5 inch pan coated with cooking spray. Bake, uncovered, at 350°F for 30 minutes.

- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Beat the eggs in a large mixing bowl until smooth, then whisk in 1/3 cup barbeque sauce, garlic, chipotle chiles, adobo sauce, kosher salt, black pepper, celery salt, cumin, and Worcestershire sauce until evenly smooth. CHIPOTLE HONEY GLAZED MEATLOAF

- 1. Preheat the oven to 350. 2. Chop carrots add to large skillet with 3 tablespoons of oil and saute (they are going to take the longest to soften). 3. Chop red pepper and add to pan. 4. Chop celery and onion and add to pan. Season and saute for about 10 minutes until the vegetables are soft and have just hint of color. 5. Move the vegetables to a food processor until the vegetables are a fine mince, but not pureed. 6. In a large bowl, add Parmesan cheese, parsley, egg, garlic, sweet potato, thyme, pureed vegetables, ground beef, salt and pepper and 2/3 of the glaze. Mix well. 7. In batches, add to food processor and give it a couple of pulses to loose up the ground beef. 8. Press into a loaf pan and then turn the pan upside down on a baking sheet and remove the loaf pan. 9. Bake for 45 minutes. 10. After 45 minutes, coat with remaining glaze and increase the oven temperature to 425 and cook until internal temperature is 155 and glaze is golden brown and delicious (about 20 minutes). 11. Remove from oven and let it rest for 10 minutes.
