- In a large bowl, combine the first six ingredients. Crumble beef over mixture; mix well. Shape into six patties. Place on broiler pan coated with cooking spray. , Broil 6 in. from heat for 5-6 minutes on each side or until juices run clear. Sprinkle with cheese. Broil 1 minute longer or until cheese is melted. Serve on buns with lettuce and tomato.

CHEESEBURGER MEATLOAF

- Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
- Mix together the bread and milk in a bowl and set aside.
- Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
- Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
- Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
- Slice and serve with the sliced red onions and dill pickle chips.
OPEN-FACED PIZZA BURGERS

- In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, 3-5 minutes, breaking into crumbles. Drain. Stir in the pizza sauce, mushrooms, sugar and oregano; mix well. Spoon onto buns; sprinkle with mozzarella cheese. , Place on ungreased baking sheets. Broil 4 in. from the heat until cheese is melted, 2 minutes. , To freeze for quick lunches later, place the split and toasted buns on a baking sheet. Spoon the meat mixture onto buns; freeze for 1 hour. Transfer to freezer-safe airtight containers., To use frozen burgers: Thaw completely in the refrigerator. Sprinkle with cheese. ROME-STYLE PIZZA BURGERS
Steps:
- Heat a griddle or large cast-iron pan over high heat. Add the canola oil and let heat until it begins to shimmer.
- Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 1 1/2 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper.
- Put the burgers on the griddle or in the pan, divot-side up. Cook the burgers, flipping once, until golden brown on both sides and cooked to medium doneness, about 8 minutes total.
- While the burgers cook, combine the tomato sauce, Calabrian chiles, basil and some salt and pepper in a small saucepan over medium heat. Cook until warm, 4 to 5 minutes, then remove from the heat and set aside.
- Top each burger with 2 slices of the mozzarella. Carefully add 1/4 cup of water to the pan and immediately cover tightly with a lid. (If using a griddle, do one at a time and use a sandwich dome or stainless-steel bowl to cover.) Count to 10. Lift lid or dome to make sure that the cheese is totally melted (if not, cover again and count 5 second longer). Transfer the burgers to a plate and loosely tent with foil.
- Place the burgers on the bottom halves of the focaccia slices. Top with the tomato sauce, arugula, Parmigiano-Reggiano, a drizzle of balsamic vinegar and the top focaccia slices and serve immediately.

- Heat oven to 350°F. Generously grease loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches; coat with Parmesan cheese.
- Mix milk, oil, basil, red pepper and egg in large bowl. Stir in remaining ingredients. Spread in pan. Sprinkle with additional grated Parmesan cheese if desired.

- Preheat oven to 400°F
- In large skillet, combine the first 7 ingredients. Cook over medium heat for 15 minutes, stirring occasionally. Cool 10 minutes.

- Combine beef, tomato paste, salt, sugar, garlic powder, Italian seasoning, pepper, and oregano in a large bowl. Mix thoroughly. Cover and refrigerate to let flavors marry, about 4 hours.
