The easiest 15-minute cream cheese berry tart image

Looking for an easy dessert to whip together this Summer? Make a Berry Tart with puff pastry, fresh berries and a light and fluffy cheesecake filling. It's light, fresh and oh so good!

1 package puff pastry (2 sheets)
3 cups berries - I used strawberries, blueberries and raspberries
2 T. sugar or splenda naturals
1 8-ounce package cream cheese (I used light cream cheese)
1 cup heavy cream

Steps:

  • Pre-heat oven to 400 degrees. Combine the two pieces of puff pastry together to fit your baking sheet, rolling with a rolling pin. You can use a little water to fuse the two edges together.
  • Cut the edge of the tart about 2 inches in all the way around. Add a little water and lay the edges on top of the tart, forming a rim to hold the filling in. You can also just fold the edges over to create a rim too.
  • Prick the puff pastry with a fork. Place it in the oven for 10 minutes.
  • While the puff pastry bakes, chop up the berries in a bowl and stir in the sugar.
  • Also make the filling. Whip the cream cheese and heavy cream together until light and fluffy.
  • When the puff pastry is cooked, take it out of the oven and let it cool. Then add the filling and put the berries on top.

0.5 (8 ounce) package reduced-fat cream cheese, softened (Neufchà ,tel)
2 tablespoons reduced-sugar orange marmalade
0.5 (8 ounce) container frozen light whipped dessert topping, thawed
3 cups assorted fresh berries (such as sliced strawberries, blueberries, raspberries, and or or blackberries)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/3 cup shortening
4 -5 tablespoons cold water

Steps:

  • Preheat oven to 450°F Prepare Single-Crust Pastry. On a lightly floured surface, flatten the ball of pastry dough with your hands. Roll dough from center to edge into a circle about 11 inches in diameter. To transfer pastry, wrap it around the rolling pin. Unroll pastry into a 9-inch tart pan with a removable bottom. Ease pastry into tart pan, being careful not to stretch pastry. Press pastry into fluted side of tart pan. Trim pastry to the edge of the tart pan. Prick the bottom and side of pastry generously with the tines of a fork. Line pastry with a double thickness of foil.
  • Bake for 8 minutes; remove foil. Bake for 6 to 8 minutes more or until pastry is golden brown. Cool in pan on a wire rack for 30 minutes.
  • In a medium bowl, beat cream cheese with an electric mixer on medium to high speed about 30 seconds or until fluffy. Beat in marmalade. Fold in whipped topping. Spread cream cheese mixture in bottom of cooled crust. Arrange berries on cream cheese mixture.
  • Single-Crust Pastry:
  • In a large bowl, stir together 1 1/4 cups all-purpose flour and 1/4 teaspoon salt. Using a pastry blender, cut in 1/3 cup shortening until pieces are pea-size. Sprinkle 1 tablespoon cold water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat moistening dough, using 1 tablespoon cold water at a time, until all the dough is moistened (4 to 5 tablespoons cold water total). Form dough into a ball.

2 cups sliced fresh strawberries
1/2 cup boiling water
1 Jell-O™ gelatin strawberry sugar free
3 pouches (1.5 oz each) Nature Valley™ roasted almond crunchy granola bars (from 8.9-oz box)
1 package (8 oz) fat-free cream cheese
1/4 cup sugar
1/4 teaspoon almond extract
1 cup fresh blueberries
1 cup fresh raspberries
Fat-free whipped topping, if desired

Steps:

  • In small bowl, crush 1 cup of the strawberries with pastry blender or fork. Reserve remaining 1 cup strawberries.
  • In medium bowl, pour boiling water over gelatin; stir about 2 minutes or until gelatin is completely dissolved. Stir crushed strawberries into gelatin. Refrigerate 20 minutes.
  • Meanwhile, leaving granola bars in pouches, crush granola bars with rolling pin. Sprinkle crushed granola in bottom of 9-inch ungreased glass pie plate, pushing crumbs up side of plate to make crust.
  • In small bowl, beat cream cheese, sugar and almond extract with electric mixer on medium-high speed until smooth. Drop by spoonfuls over crushed granola; gently spread to cover bottom of crust.
  • Gently fold blueberries, raspberries and remaining 1 cup strawberries into gelatin mixture. Spoon over cream cheese mixture. Refrigerate about 3 hours or until firm. Serve topped with whipped topping.

1 bag (8 oz) animal crackers
1/3 cup butter or margarine, melted
1 teaspoon ground cinnamon
2 tablespoons sugar
1 package (8 oz) cream cheese, softened
1/2 cup sugar
2 tablespoons lemon juice
1 cup whipping cream
1/2 pint (1 cup) fresh blackberries
1/2 pint (1 cup) fresh raspberries
1/2 pint (1 cup) fresh blueberries
1/4 cup strawberry jam
1 tablespoon orange juice

Steps:

  • Heat oven to 350°F. Place animal crackers in food processor; cover and process about 1 minute or until crumbs are finely ground. In medium bowl, mix cracker crumbs, butter, cinnamon and 2 tablespoons sugar. Press mixture in bottom and up side of ungreased 9-inch tart pan with removable bottom. Bake 8 to 12 minutes or until golden brown. Cool completely, about 20 minutes.
  • In large bowl, beat cream cheese, 1/2 cup sugar and the lemon juice with electric mixer on low speed until blended. Add whipping cream; beat on high speed 3 to 5 minutes or until light and fluffy. Spread mixture in tart shell. Refrigerate at least 2 hours.
  • Arrange berries on chilled filling. In small microwavable bowl, microwave jam uncovered on High about 20 seconds or until warm. Stir in orange juice; mix well with fork. Brush strawberry glaze over berries.

I just watched Paula make this on TV. They look delicious! I reduced the sugar from 1 cup (personal preference) You can use other flavored pie fillings in place of the blueberry or even fresh fruit.

2 (8 ounce) packages cream cheese, softened
3/4 cup sugar
1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21 ounce) can blueberry pie filling

Steps:

  • Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a muffin pan.
  • Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition.
  • Place a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers.
  • Bake for 20 minutes. Allow tarts to cool completely. Serve with blueberry filling on top, or pie filling of your choice.

1 1/2 cups vanilla cookie crumbs
6 tablespoons unsalted butter, melted
8 ounces cream cheese, softened
2 large eggs, room temperature
1/2 cup sugar
1 tablespoon vanilla extract
2 teaspoons lemon peel, fresh grated
2 cups blueberries, fresh
1/2 cup red currant jelly, melted

Steps:

  • Crust:
  • In a bowl combine the cookie crumbs and melted butter. Press the crust over the bottom and along the sides of the pan to form an even crust. Bake for 12 minutes. Remove pan and cool on a wire rack.
  • Filling:.
  • Mix cream cheese, eggs, sugar, vanilla and lemon peel in a mixing bowl. With an electric mixer, mix on medium speed until well combined and smooth.
  • Spoon filling onto the prepared crust and spread evenly.
  • Bake for 20 minutes until filling is firm.
  • Remove tart from oven and cool on a wire rack.
  • Topping:.
  • Over a medium low heat, melt red currant jelly until liquified. Remove from heat and pour over rinsed, picked over blueberries. Combine well to coat berries.
  • Spoon berries over the filling, cool for 15-20 minutes prior to refrigerating for at least 2 hours.

sweet pastry dough
pie weights or raw rice for weighting shell
1 cup mascarpone cheese (about 8 ounces)
1/3 cup well-chilled heavy cream
1/4 cup sugar
1 1/2 cups small strawberries
1 cup raspberries
1 cup blueberries
1 cup blackberries
2 tablespoons sweet orange marmalade
2 tablespoons dark berry liqueur such as blueberry, blackberry, or cassis

Steps:

  • Preheat oven to 375°F.
  • On a floured surface with a floured rolling pin roll out dough into an 11-inch round (about 1/8 inch thick) and fit into a 9-inch tart pan with a removable fluted rim. Roll rolling pin over top of shell to trim dough flush with rim and with a fork prick bottom of shell all over. Chill shell 30 minutes, or until firm.
  • Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven 20 minutes and carefully remove foil and weights or rice. Bake shell until golden, about 10 minutes more, and cool completely in pan on a rack. Shell may be made 1 day ahead and kept in pan, loosely covered, at room temperature.
  • In a bowl with a whisk or an electric mixer beat together mascarpone, cream, and sugar until mixture holds stiff peaks. Spoon mixture into shell, spreading evenly.
  • Quarter strawberries and in a large bowl combine with remaining berries. In a small saucepan simmer marmalade and liqueur, stirring, until reduced to about 3 tablespoons and pour over berries. With a rubber spatula gently stir berries to coat evenly. Mound berries decoratively on mascarpone cream. Tart may be assembled 2 hours ahead and chilled. Bring tart to room temperature and remove side of pan before serving.
