1 cup blanched almonds
2 cups butter, softened
2-1/2 cups confectioners' sugar, divided
1 large egg yolk, room temperature
3 tablespoons whiskey or orange juice
2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
Additional confectioners' sugar

Steps:

  • Place almonds in an ungreased 9-in. square baking pan. Bake at 350° until lightly browned, 5-10 minutes, stirring several times. When cool, process in a food processor until finely chopped; set aside. , In a large bowl, cream butter and 3/4 cup confectioners' sugar until light and fluffy. Add the egg yolk, whiskey or juice and vanilla; mix well. Combine the flour, baking powder and reserved almonds; gradually beat into creamed mixture., Shape tablespoonfuls of dough into 3-in. logs. Place 1 in. apart on ungreased baking sheets; shape into crescents. Bake at 350° until set and bottoms are lightly browned, 14-18 minutes. , Carefully roll warm cookies in remaining confectioners' sugar. Cool on wire racks. Sprinkle with additional confectioners' sugar.

These are a Greek celebration cookie - while they're most popular at Christmas, you also see them at weddings, Easter and other holidays as well. They're almost always served with a powdered sugar topping; at Christmas, it's traditional to stick a whole clove in the top to represent the gift of spices that the Three Wise Men brought to Bethlehem.

3/4 cup walnuts
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup confectioners' sugar
1 large egg yolk
1 tablespoon brandy
1 teaspoon pure vanilla extract
1 to 2 tablespoons orange flower water
3/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Toast the walnuts until golden brown and fragrant, about 6 minutes. Let cool, then chop about half of the nuts (you should have about 1/2 cup chopped). Pulse the remaining nuts in the food processor until finely ground (about 1/4 cup ground).
  • Stir the flour, baking powder, salt and nuts together in a medium bowl. Set aside.
  • In another medium bowl, beat the butter, sugar, egg yolk, brandy and vanilla extract together with an electric mixer on medium-high speed until the mixture gets light and fluffy, about 10 minutes.
  • At low speed, stir in the nut mixture to make a crumbly dough. Cover the bowl and set dough aside at room temperature for 1 hour.
  • Preheat oven to 350 degrees F. Line two baking sheets with parchment or coat with nonstick spray.
  • With a tablespoon, scoop out 1-inch pieces of dough and roll into balls between the palms of your hands. Pinch the ends of the balls to make a football shape. Place the cookies on the prepared baking sheets. Bake until the cookies set and start to brown, about 18 minutes.
  • Remove cookies from the oven and immediately sprinkle them lightly with the orange water. (If you don't have a brush, simply dip your fingers into the water and flick it over the cookies a few times.) Take care not to douse them, just enough for them to carry the scent of flowers.
  • Put the confectioners' sugar in a bag, and add 5 to 6 of the warm cookies to it. Very gently toss the cookies to coat with sugar. Remove them from the bag and cool cookies on a rack. Repeat with remaining cookies. Serve.
  • Busy baker's tips: Dough can be frozen for up to 2 weeks. Store baked cookies in an airtight container for up to 1 week. Baked cookies can be wrapped in plastic, then aluminum foil, for up to 2 weeks. To serve, let cookies come to room temperature before dusting with confectioners' sugar.
  • Cook's Note: If you can't find orange flower water, try specialty stores or online.

3 sticks unsalted butter, soft
1/2 teaspoon kosher salt
1/4 cup powdered sugar, plus additional for coating
1 egg yolk
2 tablespoons brandy
1 teaspoon vanilla extract
3 cups all-purpose flour, sifted
About 45 whole cloves

Steps:

  • In the bowl of an electric mixer fitted with the whisk attachment, combine the butter and salt and whip until light and fluffy, 3 to 5 minutes. Add the sugar, egg, brandy, and vanilla and beat until all of the ingredients are integrated. With the mixer on low speed, gradually add sifted flour to the butter mixture. Using a rubber spatula, remove the dough and transfer it onto a piece of waxed paper or parchment. Refrigerate for about 45 minutes before rolling.
  • Preheat the oven to 350 degrees F.
  • After the dough has cooled, pinch off small pieces and roll them into about 1-inch balls. Place them in a single layer with space in between each, on a greased baking sheet. Repeat the process until all of the cookie dough has been rolled. Place a clove in the center of each cookie. Alternatively, shape the ball into half moons with a clove in the center of each.
  • Place the sheets in the oven and bake until the cookies are just slightly brown, about 15 minutes. Allow them to cool thoroughly, and then roll them in powdered sugar.

Basically a Greek butterball cookie recipe. These, with Melomakarona, are found in every Greek home during the Christmas Holidays. I go through phases. One year, or for a couple of years, these are my favourites, then Melomakarona are, and I keep switching back and forth. They're both wonderful! These keep wonderfully, long after Christmas is over, if any are left.

2 cups butter, at room temperature or 450 g butter
1 cup icing sugar
2 egg yolks
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon brandy
1 teaspoon vanilla extract
3 -4 cups flour
1 1/2 cups almonds, chopped and roasted
orange flower water (available in many ethnic groceries) or ouzo
extra icing sugar, for rolling the cookies in

Steps:

  • Cream the butter and sugar in a mixer for 15 minutes, until it begins to turn white. Mix in the baking powder, baking soda and salt.
  • Add the egg yolks, the brandy, vanilla extract, and gradually add the flour, until you have a dough that is neither too soft nor too firm (you may need to add slightly more than the amount I've written); stir in the almonds.
  • Let the dough stand for an hour at room temperature, covered with a clean dish towel.
  • Next, with small amounts (about 1 1/2 teaspoons of dough), shape small rounds by gently rolling the dough around between the palms of your hands.
  • Arrange the round cookies on a buttered pan and flatten ever so slightly on top with your hand.
  • Bake at 350F for 15-20 minutes.
  • Immediately upon removing the kourambiedes from the oven, sprinkle them with rose water (or orange water or ouzo. I do this by putting a small amount of the liquid in a bowl, wetting my fingertips, and shaking the droplets over the hot cookies a few times. The scented water or ouzo gives the cookies a very delicate fragrance).
  • Roll the hot cookies in icing sugar to cover and let cool.
  • When cool, arrange on a pretty holiday platter, sieving more icing sugar between the cookie layers to give a snowdrift effect.

2 cups sifted all-purpose flour
½ teaspoon baking powder
1 cup butter
¼ cup confectioners' sugar
1 egg yolk
2 tablespoons brandy
½ teaspoon vanilla extract
½ cup finely chopped blanched almonds
36 whole cloves
⅓ cup confectioners' sugar for decoration

Steps:

  • Sift flour with baking powder. Set aside.
  • Cream butter and gradually add sugar and beat until fluffy. Add egg yolk, brandy and vanilla. Beat again until very light. Stir in almonds.
  • Blend in flour mixture, mix to form a soft, smooth dough. Chill 30 minutes or until it can be handled easily.
  • Preheat oven to 325 degrees F (170 degrees C).
  • Shape level tablespoonfuls of dough into crescent-shapes. Place 1 inch apart on ungreased cookie sheet. Insert whole clove into center of each. Bake for 25-30 minutes or until light...do not brown. Cool on rack. Dust generously with confectioners' sugar.

My best friend when I was growing up was Greek, and I fell in love with the culture and the food. This was always my favourite - thanks to Georgia for giving me the family recipe! I'm putting it here for safe keeping.

250 g butter (softened)
3 tablespoons icing sugar
1 egg yolk
1 tablespoon brandy
1/2 cup chopped almonds (Toasted)
2 1/2 cups flour
1 teaspoon baking powder
2 teaspoons ground cloves
5 -6 cups icing sugar (for dusting)

Steps:

  • Cream butter & icing sugar until light.
  • Add egg yolk and brandy, mixing well.
  • Fold in almonds, flour, baking powder & cloves.
  • Break off small pieces of dough & shape into 'S' shapes or crescents.
  • Bake at 180 deg C for +/- 20 min until lightly golden.
  • Let them cool for 10 min, then dust with some icing sugar.
  • Store in container & dust with rest of icing sugar.
  • Tip: Seal & store for 2 days (if you can resist!) as this improves the flavour.

1 cup slivered almonds
1 1/2 pounds fitini butter or 6 sticks unsalted butter
1 cup powdered sugar
1 1/2 teaspoons vanilla extract
(Optional: 1/2 teaspoon ground gum powder from Hios Island in Greece)
1/4 cup rose water
1/4 cup ouzo
1 large egg
2 egg yolks
3 teaspoons baking powder
4 pounds all-purpose flour
2 cups powdered sugar
1/4 cup water
1/2 cup rose water

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a large baking sheet lightly with butter or cooking spray.
  • Fry or bake slivered almonds until a light golden brown.
  • Beat butter in blender or with a hand mixer on high for 20 to 30 minutes until white, light and creamy. Add the egg and yolks one at a time mixing well to incorporate.
  • Add 1 cup powdered sugar, vanilla, optional gum powder, rose water, ouzo and then almonds.
  • Next sift together baking powder and flour. Slowly add to mixture,
  • The final dough should be soft and easy to work with. So now form them into small balls -- about a fist-full. Form like dumplings and imprint thumb on all sides of the cookie.
  • Bake for 10 to 20 minutes until light golden brown. Immediately splash with hand a mixture of 1/4 cup water and 1/2 cup rose water.
  • Finally, place cookies on a serving tray and use a sifter to sprinkle powdered sugar on cookies until coated.
  • Then say, "Hopa" and enjoy with friends and family!!!

1 pound cold unsalted butter, cut into large pieces
2 egg yolks
1 teaspoon vanilla extract
1/2 cup confectioners' sugar, plus extra for dusting
2 tablespoons brandy
4 to 5 cups all-purpose flour, sifted

Steps:

  • Preheat the oven to 350 degrees F.
  • Beat butter for 10 minutes with electric mixer until very light and creamy. Beat the egg yolks and vanilla in a separate bowl until lemon-colored, 1 minute. Add 1/2 cup sugar and beat for 10 minutes. Add egg mixture to butter and add brandy and the flour, a little bit at a time, until dough is soft.
  • Shape tablespoonfuls of dough into small crescents or balls and place on an ungreased baking sheet. Bake until very lightly browned, about 25 minutes. Cool for about 10 minutes on the baking sheets. Sprinkle liberally with sifted confectioners' sugar while the cookies are still warm. Continue to cool to room temperature.
  • Cook's Note: If the dough gets too warm and sticky while rolling the balls, re-chill it before continuing.

1/4 cup cognac (vanilla, almond) or 1/4 cup other flavoring (vanilla, almond)

Steps:

  • Mix sugar, Crisco & butter until fluffy. Add eggs & beat well. Mix baking soda with lemon juice in a glass (it will fizz) & pour into mixture.
  • Add ouzo & mix. Add baking powder to flour & add flour gradually to the mixture. Mix in almonds.
  • Use cookie cutters or shape into circles & crescents.
  • Bake at 350°F for 20-25 minutes until light brown.

1 pound unsalted butter, melted and cooled
3-1/2 cups confectioners' sugar, divided
1 large egg yolk
1 teaspoon vanilla extract
6 cups all-purpose flour

Steps:

  • Preheat oven to 400°. In a large bowl, beat butter and 1/2 cup confectioners' sugar until blended. Beat in egg yolk and vanilla. In another bowl, whisk flour and baking powder; gradually stir into butter mixture until blended (mixture will be crumbly). , Shape heaping tablespoons of dough into crescents. Place 1 in. apart on ungreased baking sheets. Bake 12-15 minutes or until edges are lightly browned. Remove from pans to wire racks to cool 15 minutes., Place remaining sugar in a small bowl. I haven't made this recipe yet. It is posted for the Zaar World Tour 2006. The cookbook I found this recipe in says that Kourambiethes are a Christmas specialty in Greece. Prep time includes 1 hour refrigeration time.

Number Of Ingredients 10

8 ounces unsalted butter
3 1/2 ounces slivered almonds
2 cups plain flour
1 teaspoon baking powder
3/4 cup icing sugar, sifted
1 egg yolk
1 teaspoon vanilla
1 tablespoon ouzo
4 tablespoons almond meal
1/2 cup icing sugar (extra, for dusting)

Steps:

  • Gently melt the butter over low heat in a small heavy-based saucepan; without stirring or shaking the pan. Carefully pour the clear butter into another container, leaving the white sediment in the pan to be discarded. Refrigerate for 1 hour.
  • Preheat the oven to 325 and line two baking trays with parchment paper.
  • Grind the slivered almonds to a medium fine meal.
  • In a bowl, sift the flour and baking powder together.
  • Using an electric mixer, beat the chilled butter until light and fluffy. Gradually add the icing sugar and combine well. Add the egg yolk, vanilla, and ouzo and beat until just combined. Fold in the flour, ground almonds and the almond meal.
  • Shape heaped tablespoons of mixture into crescents, place on the baking trays and bake for 12 minutes, or until lightly colored.
  • Remove from the oven and dust liberally with icing sugar. Leave to cool on the trays for 10 minutes.
  • Line a baking tray with parchment paper and dust the paper with icing sugar. Lift the warm biscuits onto this and dust again with the icicng sugar. When the biscuits are cool, dust them once again with the icing sugar before storing them in an airtight container.

  • Preheat the oven to 200C / 390F. To prepare this kourabiedes (kourambiethes) recipe start by roasting the almonds. Place the roughly chopped almonds (150g/ 6 ounces) or almond silvers on a baking tray and sprinkle with some water. Bake them for 7-8 minutes, until roasted, being careful not to burn them. Set aside or put in the fridge to cool.
  • In a blender, add the raw almonds (50g/ 1.8 ounces) or the pistachios and blend, until powdered. Set aside.
  • In a food processor, add the cold butter and sugar; mix for about 10 seconds, until the butter ‘breaks’ and is completely dissolved. Add the powdered almonds, a pinch of salt, the rosewater and the vanilla extract; mix for 10-20 seconds, until combined. At the end, add the baking powder and flour and mix again for 10-15 seconds.
  • Place the mixture in a large bowl and add the roasted almonds; blend lightly with your hands. For the kourabiedes to remain fluffy, it is important that the butter doesn’t warm up and melt. So wait for a while for the roasted almonds to cool, before adding them to the butter mixture.
