Time 25m

Number Of Ingredients 10

8 oz / 250g dried fettuccine
3 tbsp / 50g unsalted butter
1 small shallot ((US) / eschallot (Australia), very finely minced (Note 1))
½ cup / 125 ml heavy cream ((Note 2))
¾ cup / 185 ml freshly grated Parmigiano Reggiano or parmesan ((Notes 3 and 4))

  • Meanwhile, melt the butter in a deep fry pan over medium high heat. (Note 7)
  • Add the shallots and sauté for 2 minutes or until tender.

CREAMY SALMON PASTA

Creamy salmon pasta image

Indulge in this creamy salmon dish for two. It's comforting and filling, and ready in just 30 minutes. Serve with a green salad

Provided by Anna Glover

Categories     Dinner

Time 30m

Number Of Ingredients 9

2 salmon fillets
1 tbsp olive oil, plus 1 tsp if roasting
175g penne
2 shallots or 1 small onion, finely chopped
1 garlic clove, crushed
100ml white wine
200ml double cream or crème fraîche
¼ lemon, zested and juiced
½ small bunch dill, finely chopped

Steps:

  • You can either steam or roast the salmon, depending if you want to turn the oven on or not. To roast, heat the oven to 200C/180C fan/gas 6, place on a baking tray, drizzle with oil and roast for 12 mins until opaque and the flesh starts to flake when pressed. To steam, place the fillets skin-side down in a steamer, and steam over a pan of simmering water for 8-10 mins until cooked.
  • While the salmon is cooking, boil the pasta for 10 mins until al dente, then drain, reserving 100ml of the pasta water.
  • Heat the oil on a medium heat in a wide frying pan and fry the shallot for 6 mins until softened, but not turning golden. Add the garlic and fry for a minute more until fragrant. Add the wine, bubble for a few minutes until reduced by half, then add the cream and season well. Bring to a very gentle simmer.
  • Flake the cooked salmon into big chunky pieces, leaving the skin behind. Add to the sauce with the cooked pasta. Add the lemon zest, a squeeze of the juice and most of the dill. Add a splash of the pasta water to the sauce to coat the pasta if you need to. Toss gently to keep the salmon in big pieces. Check the seasoning, if using double cream you may need a squeeze more lemon juice. Grind over some black pepper and scatter over the remaining dill. Serve with a green salad.

Number Of Ingredients 18

1 pound salmon fillets
1/2 tsp EACH salt, garlic powder
1/4 tsp EACH paprika, onion powder, pepper
1 tablespoon lemon juice
1 tablespoon unsalted butter (cubed)
3 cups broccoli florets
1 1/2 tablespoons olive oil
8 oz. fettuccine
1 tablespoon butter
1 tablespoon olive oil
4 cloves garlic (minced)
2 tablespoons flour
1 1/2 cups low sodium chicken broth
1/2 cup heavy cream
1/4 cup prepared pesto
1/4 teaspoon salt
1 tablespoon lemon juice
1/2 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Cook pasta in salted water according to package directions until al dente. Reserve 1 cup pasta water before draining pasta. Toss drained pasta with a drizzle of olive oil to keep it from sticking. Set aside.
  • Add salmon to a piece of foil skin side down and fold foil up around salmon to create a boat (don't cover); place on a baking sheet. Rub salmon with seasonings, drizzle with lemon juice then top with butter.
  • Line the remaining pan with foil (optional for easy cleanup). Add broccoli and drizzle with 1 ½ tablespoons olive oil and sprinkle with 1/8 teaspoon salt and 1/8 teaspoon pepper. Toss to coat then spread into an even layer. Bake broccoli and salmon at 400 degrees F for 12-15 minutes or until salmon is almost opaque throughout (internal temp of 125-135 degrees F) and easily flakes with a fork.
  • Meanwhile, melt butter in olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds. Sprinkle in flour and cook, while stirring for 1 minute.
  • Turn heat to low and slowly whisk in chicken broth, heavy cream, pesto, and salt stirring constantly until smooth. Increase heat to medium high and bring the sauce to a simmer. Simmer until thickened, stirring often, approximately 3-5 minutes. Reduce heat to low and stir in lemon juice followed by Parmesan cheese until melted.
  • Stir pasta and broccoli into the sauce until well combined. Flake salmon into large chunks and toss with pasta (it will break up more when tossing), adding additional reserved pasta water or heavy cream if needed to reach desired consistency. Taste and season with additional salt, pepper and/or lemon juice to taste.

This simple creamy salmon pasta is quick and easy to make, delicious and flavorful, and loaded with salmon. A weeknight dinner in under 30 minutes.

Provided by Sam Hu | Ahead of Thyme

Categories     Pasta

Time 30m

Number Of Ingredients 15

1 pound dry pasta, spaghetti, fettuccine, or linguine
2-3 pieces salmon fillets, about 2-inches wide (1 pound)
1/2 teaspoon salt (or to taste)
1/2 teaspoon ground black pepper (or to taste)
1 tablespoon olive oil
2 tablespoons butter
1 medium onion, diced
1 tablespoon garlic, finely chopped
1/2 tablespoon cornstarch (or all-purpose flour)
1 cup heavy cream
2 tablespoons white wine
1 teaspoon Italian seasoning
1/3 cup Parmesan cheese, grated
2 tablespoons fresh parsley, finely chopped
1 lemon, sliced into wedges

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat. Add pasta and cook until al dente (fully cooked but still firm), or according to package directions, about 8-10 minutes. Drain well and set aside in the pot. Drizzle a little olive oil and toss together to keep the pasta from sticking together.
  • Pat dry salmon fillets and season with salt and pepper. Set aside at room temperature for 10 to 15 minutes.
  • In a large skillet, heat oil for 2 minutes over medium-high heat until the hot oil sizzles. Sear the salmon fillets (skin side facing up first) for 5-6 minutes on each side until golden browned and fully cooked. When salmon is cooked, the flesh will turn opaque, and it will flake easily when inserting a fork. Transfer the cooked salmon onto a plate and use 2 forks to shred it into flakes.
  • Add butter, onion, and garlic to the same skillet, and sauté until fragrant, about 1 minute. Stir in cornstarch and mix well until combined, about 1 minute. Add wine and stir well to combine, about 1 minute.
  • Add heavy cream, Italian seasoning and Parmesan cheese. Stir well and bring the sauce to a simmer. Reduce heat to medium and keep stirring until thickened to a desired consistency, about 4-5 minutes.
  • Return the cooked shredded salmon to the skillet and toss in the creamy sauce over to coat.
  • Add cooked spaghetti into creamy salmon sauce and toss well to combine.

CREAMY SALMON PASTA

Creamy Salmon Pasta image

This creamy salmon pasta, made with freshly baked and flaked salmon fillets is a delicious and easy meal to make. Super quick as well!

Provided by Gav

Categories     Mains

Time 15m

Number Of Ingredients 12

100g Fresh egg pasta (or whatever pasta you prefer)
1 clove garlic, finely chopped
1 tbsp lemon juice
Salt & Pepper
1 tbsp olive oil
Zero calorie spray
1 red chilli (medium hot)
120g Fresh Atlantic Salmon Fillet
50ml White Wine
50ml Single Cream
1 tsp coriander puree (or preferably fresh chopped coriander - I did not have available!)
Grated parmesan for the sauce or garnish

Steps:

  • Pre-heat your oven to 180C. I use my New Wave oven for this as it does not need pre-heating.
  • Spray an oven tray with some zero-calorie spray and place the salmon fillet on top. Season the salmon with salt and pepper, and cover with the lemon juice. Place in the oven and cook at 180C for 10 minutes.
  • When the salmon is cooked, remove from the oven and flake it using two forks.
  • While the salmon is cooking, boil the pasta in some salted water, according to the manufacturer's instructions. (I use a bit of olive oil in the water to prevent it from sticking).
  • When the pasta is cooked, drain it over the pan, discarding the drained water. Then return the pasta to the pan.
  • While the pasta is boiling, saute the garlic in the olive oil in a cast-iron skillet for one minute. Then add the chopped chilli and cook for about 30 seconds. Then add the wine and turn off the heat. Let the wine evaporate with the heat of the skillet. Keep stirring until wine has almost evaporated.
  • When ready to serve add the cream to the skillet, turn the heat back on and bring to a boil, adding the coriander and stirring all the way. Season with a little salt and pepper if needed. When it begins to boil, remove from the heat.
  • Then add the sauce and the salmon to the pasta, mixing well, before serving.

  • Next preheat the oven to 180°C (360°F). Lay the salmon fillets side by side in the centre of a piece of foil and sprinkle over the caraway seeds.
  • Wrap the foil loosely around the salmon leaving enough room for air to circulate around whilst cooking. This will cook the salmon more evenly. Place the foil package on a tray and bake in the oven for 15 minutes.
  • Whilst the fish is cooking, start to prepare the sauce. On a medium heat gently fry the chopped garlic in 1 tbsp of oil for around 30 seconds to just allow the flavour to release (don't fry for too long as garlic burns easily and creates a bitter taste).
