PINEAPPLE WALDORF SALAD

- Drain pineapple reserving 1/2 cup juice (discard remaining juice or save for another use). In a bowl, combine the pineapple, apples, celery, raisins and sunflower kernels. In another bowl, combine the mayonnaise, yogurt, sugar and reserved pineapple juice. Pour over fruit mixture and toss to coat. Refrigerate until serving.

WALDORF SALAD
This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also. Newer versions have left out some of the ingredients which add variety in texture and taste. It's a classic American salad which was developed by the Waldorf Astoria Hotel in New York City.

Steps:
- Combine first six ingredients; sprinkle lemon juice on top.
- Combine gently--best to use your hands to mix.
- Mix mayonnaise with sugar and cream and stir until sugar is dissolved.
- Dress the salad with this.

- Can be prepared several hours ahead of time if necessary.

PINEAPPLE WALDORF SALAD - NO MAYO
The last time I made waldorf salad, my 4-year-old son asked if we could have it without mayo the next time. I was worried about the apples browning and I didn't have any lemon juice. I did have some crushed pineapple which did the trick and it all tastes really good, too.

BANANA WALDORF SALAD
It's my favorite way to eat fruit. Easy and colorful for a summer barbeque. Great way to get kids to eat fruit. Not as sweet as whipped cream topping.

- Stir sour cream and sugar together until well mixed.
- Peel bananas and cut into chunks. Add to mixing bowl. Stir in diced apple, pineapple, grapes, walnut halves and raisins and sour cream mixture.
- Chill in refrigerator about an hour if possible.
- Options: I occasionally add 1/4 cup shredded coconut, 1/2 cup mandarin oranges or 1/2 cup diced celery just for something different.
- Refreshing summer side dish.

WORLD'S FINEST WALDORF SALAD
This salad has been in my family for years. We always went to Great Grandma's for Christmas. Then it was Grandma's, then Mom's, and now my house. It wouldn't be Christmas without this great salad on the table.

- In a large bowl, put diced apples, diced celery, drained pineapple, chopped cherries (about 1/2 the jar or as desired), and chopped walnuts. In a small bowl, mix together mayonnaise, 3 Tblsp. pineapple juice, and 2 Tblsp. cherry juice. Stir well and add more mayonnaise to get the right consistency. It should be like bottled salad dressing or a tad thinner. Mix with apple mixture, stirring until well coated. Chill, covered until serving time (about 1 hour). I never measure this so the amounts are a guess. You can use more or less of any of the ingredients.

AMBROSIA WALDORF SALAD
It's hard to believe that cranberries, apples, green grapes, pineapple, mashmallows and Cool Whip can make such a delightful tasting salad. It's abit different from the usual Waldorf Salad, but a great compliment to your holiday meal.

- In a large bowl, combine the cranberries and sugar; mix thoroughly.
- In a 3-quart (12 cup) bowl, add the marshmallows, apples, grapes, and pineapple.
- Add the cranberry/sugar mixture; mix well.
- Fold in the Cool Whip.
- Cover, and chill in the refrigerator until ready to serve.
- *Note: If using rather large grapes, cut them in half.
- If the grapes are small in size, I do not bother cutting them in half.
PINEAPPLE WALDORF SALAD
I found this on the internet a couple of years ago when our apple tree was very abundant. I am not sure where it came from but it is good. The tree is loaded again this year so I expect to be making it again soon. Cook time is chill time.
