The grilled caramelized pineapple takes this dish over the top. These Brazilian Beef Kabobs with Pineapple and Peppers are very easy and so delish! Marinaded, smoky, and full of flavor goodness.

- In a heavy glass measuring cup or bowl, melt butter in the microwave. Whisk in brown sugar, cinnamon, and pinch of salt if using unsalted butter. Brush all sides of pineapple.
- Whisk together all marinade ingredients in a small bowl. Add in beef chunks to a large zip top bag or bowl. Add marinade and toss well to coat the beef with the marinade. Place in fridge for at least 2 hours to overnight.
- Prepare grill for direct medium-high heat.
- Thread chunks of beef on to skewers and alternating with pineapple chunks and bell peppers.
- Grill the kebabs for about 6-8 minutes, turning them to char peppers and pineapple on each side, or until beef reaches medium rare.

GRILLED PINEAPPLE BEEF KABOBS

- Make the marinade: In a large plastic bag, add beef, salt and pepper and toss until the meat is coated. Add the brown sugar, olive oil, sesame oil, red wine vinegar, soy sauce and whole grain mustard. Toss until coated. Chill for at least 30 minutes, preferably 4 hours.
- Heat up a grill. Alternatively, heat a grill pan over medium high heat.
- Soak kabob skewers in water for 30 minutes. Remove beef from the marinade and shake off any excess liquid, reserving the marinade.
- Thread beef, onion, bell pepper and pineapple onto skewers as desired.
- Place the kabobs on the grill and brush with some of the reserved marinade. Cover and cook for 5 minutes. Flip the kabobs over after 5 minutes and brush on the rest of the marinade. Cover and cook another 5 minutes for medium rare or continue to cook until desired doneness.

- In a small bowl, combine first six ingredients. Pour 3/4 cup into a large resealable plastic bag; add beef. Seal bag and turn to coat; refrigerate 1-4 hours. SUNNY'S QUICK BEEF AND PINEAPPLE SKEWERS

- Add the honey, orange juice, olive oil, salt, red curry seasoning and black pepper to a medium bowl. Whisk until the honey and oil are dispersed. Reserve 1/4 cup of the marinade, then divide the remaining marinade in half between two resealable plastic bags. Add the beef chunks to one bag and the pineapple to the other bag. Seal both bags and let rest at room temperature for 2 hours. If you are using wooden skewers, soak them in water while the beef and pineapple are marinating.
- Preheat the grill to 400 degrees F.
- Remove or strain the beef and pineapple chunks from the bags and discard the marinade. Pat everything dry. Build the skewers by alternating between the beef and pineapple, placing 3 to 4 pieces of each on each skewer. Place them over the direct heat of the grill and cook on each side for 1 to 2 minutes. Brush the skewers with the reserved marinade. Remove from the grill and serve with yellow rice, if using.
SUNNY'S PORK KEBABS AND BAKED PINEAPPLE RICE

- In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ginger, vegetable oil, gochujang and garlic. Pour into a large resealable plastic bag and add the pork, moving the bag around to ensure the marinade coats all of the pork. Seal the bag and refrigerate for 1 1/2 hours.
- After 1 1/2 hours, remove the bag with the meat from the refrigerator and let sit at room temperature for 30 minutes. If using wooden skewers, soak in water at this point.
- Heat a grill or grill pan to medium-high heat.
- Remove the pork from the marinade and discard the marinade. Thread 5 to 6 pork cubes on each skewer. Season the pork on all sides with a pinch of salt and a few grinds of black pepper. Grill and flip to cook on all sides until cooked through, 2 to 3 minutes on each side. Serve immediately with Sunny's Baked Pineapple Rice (or cover with aluminum foil until serving).
- Preheat the oven to 350 degrees F.
- Put the rice and pineapple in an 8-by-8-inch baking dish. In a medium pot on high heat, add the coconut milk, butter, salt, some black pepper and 1 cup water. Cook until the butter melts and the mixture is just below simmering. Pour over the rice and immediately cover tightly with aluminum foil. Bake until the rice is tender and the water is absorbed, 35 to 40 minutes.
- Add the almonds and scallions, fluff with a fork and serve warm.

- Drain pineapple saving juice.
- Combine juice and next 6 ingredients, mix well.
- Pour in large shallow dish.
- Add meat, cover and marinate in refrigerator over night.
- Drain meat, retaining marinade.
- Bring marinade to a boil in a saucepan.
- Add mushrooms, reduce heat and simmer, uncovered, for 10 minutes.
- Drain, saving marinade.
- Alternate meat, pineapple, mushrooms, onions, green peppers and potatoes as desired on skewers.
- Grill over medium coals 10-15 minutes, basting frequently with marinade and/or BBQ sauce.
