1 (20 oz.) can crushed pineapple in juice
1 (3.4 oz.) package instant coconut cream pudding mix
1/2 cup flaked coconut
1 (8 oz.) tub Cool Whip, thawed
4 ounces cream cheese, softened
1/3 cup granulated sugar
1 (20 oz.) can pineapple tidbits, well drained
2-3 cups miniature marshmallows

Steps:

  • In a large bowl, combine crushed pineapple with juice, pudding mix and coconut. Mix well. Fold in Cool Whip.
  • In a separate bowl, beat cream cheese and sugar with an electric mixer until smooth. Fold into pudding mixture.
  • Fold in pineapple tidbits and marshmallows. Cover and chill until ready to serve.

Steps:

  • Combine pudding mix and the entire can of crushed pineapple in a large bowl.
  • Stir until completely combined.
  • Fold in Cool Whip, rum extract, marshmallows, coconut, and nuts.
  • Chill until ready to served.

1 teaspoon caster sugar
1 tablespoon coconut cream
50 ml Bacardi Carta Blanco
50 ml fresh pineapple juice
ice, cubed
To garnish:
slice of orange

  • 1. Place the pineapple chunks (reserving one for a garnish) into a blender and add the caster sugar and the coconut cream
  • 2. Add the Bacardi Superior rum 3. Add the pineapple juice 4. Add some cubed ice 5. Blend all the ingredients together until you have a smooth consistency 6. Pour into a long glass 7. Garnish with a pineapple chunk, slice of orange and cherry on a cocktail stick and a straw

Nonstick cooking spray, for spraying the baking dish
1 box yellow cake mix, plus ingredients on the box
1 1/2 cups heavy cream
3 tablespoons sugar
2 teaspoons coconut extract
One 16-ounce jar maraschino cherries (24 cherries for the holes, the rest for garnish), stems removed
1 cup cream of coconut, such as Coco Lopez
1/2 cup drained crushed pineapple
2 tablespoons dark rum
1/2 cup toasted coconut

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • Prepare the cake mix in a bowl according to the package instructions. Pour into the prepared baking dish and bake according to the instructions. Let cool for 10 minutes.
  • Combine the heavy cream, sugar and coconut extract in a chilled metal bowl. Whip the cream with a whisk or electric hand mixer until soft peaks form. Refrigerate.
  • Using the handle of a wooden spoon, poke holes in the cake, 6 across in each of 4 rows, to make 24 holes. Press a cherry into each hole.
  • In a medium bowl, whisk together the cream of coconut, crushed pineapple and rum. Slowly pour and spread over the cake and let stand until the liquid is absorbed into the holes, about 10 minutes.
  • Spread the whipped cream over the top of the cake, sprinkle with toasted coconut and garnish with the leftover maraschino cherries.

0.5 cups powdered sugar

0.75 cups pecans

1.5 packages cream cheese
0.75 cups granulated sugar
2.5 teaspoons vanilla
20 ounces pineapple
1 cups coconut
16 ounces whip light
2 cups marshmallows

Steps:

  • Preheat oven to 400ºF. Beat butter with electric mixer 10-20 seconds. Add powdered sugar; beat for 10-20 seconds. Add flour and beat with electric mixer on low for 1 minute. Beat on high for 2 minutes. Stir in pecans.
  • Spread in ungreased 13x9-inch glass baking dish. Bake for 14-16 minutes or until edges are brown, cool completely.
  • In a large bowl, beat the cream cheese, granulated sugar and vanilla until smooth. Stir pineapple and 1 cup of coconut into cream cheese mixture. Fold Cool Whip and marshmallows into mixture. Spread over crust; sprinkle 3 Tablespoons of coconut over top. Cover and refrigerate 8 hours before serving.
