3/4 cup green onion, chopped
3/4 cup mayonnaise
3 teaspoons lemon juice
2 garlic cloves, crushed
3/4 teaspoon tarragon
1/2 cup butter, melted
1 garlic clove, crushed
6 sheets frozen phyllo dough
6 boneless chicken breasts
6 slices swiss cheese
1/2 cup parmesan cheese, grated

Steps:

  • Make sauce by combining green onions, mayonnaise, lemon juice, garlic cloves and tarragon. Set aside.
  • Brush one sheet of phyllo with butter.
  • Place one chicken breast in one corner.
  • Spoon on the sauce.
  • Top with slice of cheese.
  • Roll over the phyllo sheet placing the fold inside.
  • Brush with melted butter.
  • Sprinkle with parmesan cheese.
  • Bake for 1 hour in a preheated 350°F oven.
  • Tip: Notes Remove phyllo from freezer night before. When ready to prepare, take out 6 sheets and return package of phyllo to freezer. Place you phyllo between damp sheets of paper towels. Cover with tea towel to keep them damp, otherwise they will dry up and become brittle.

12 sheets phyllo dough (14x9 inches)
3 cups diced cooked chicken
1/2 pound sliced bacon, cooked and crumbled
3 cups frozen chopped broccoli, thawed and drained
2 cups shredded cheddar or Swiss cheese
6 large eggs
1 cup half-and-half cream or evaporated milk
1/2 cup whole milk
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375°. Brush sides and bottom of a 13x9-in. baking dish with some of the melted butter. Place one sheet of phyllo in bottom of dish; lightly brush with butter. Repeat with five more sheets of phyllo. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out. , In a large bowl, combine the chicken, bacon, broccoli and cheese; spread evenly over phyllo in baking dish. In a small bowl, whisk the eggs, cream, milk, salt and pepper; pour over chicken mixture. Cover filling with one sheet of phyllo; brush with butter. Repeat with remaining phyllo dough. Brush top with remaining butter. , Bake, uncovered, until light golden brown and thermometer reads 160°, 35-40 minutes. Let stand for 5-10 minutes before serving.

4 ounces butter, divided
1 onion, finely minced
8 ounces mixed mushrooms, finely minced
2 tablespoons parsley, minced
1 garlic clove, minced
3 teaspoons all-purpose flour
1/4 cup dry vermouth or 1/4 cup dry white wine
salt and pepper
2 tablespoons olive oil
4 boneless skinless chicken breast halves
8 sheets phyllo dough
1 1/4 cups butter, melted
2 cups breadcrumbs
8 ounces feta cheese

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a skillet, melt 2 or 3 tablespoons of the butter; saute the onion until golden. Remove onion and set aside.
  • Melt 2 or 3 tablespoons butter in the same skillet; saute the mushrooms until all juices are absorbed.
  • Add the onions, parsley and garlic and saute 1 minute.
  • Stir in the flour and blend well.
  • Add the vermouth or dry white wine.
  • Stir over medium heat until thickened.
  • Season with salt and pepper to taste.
  • Remove mushroom mixture from skillet and set aside.
  • In same skillet melt remaining butter with olive oil and saute chicken until lightly browned, about 1 minute per side.
  • Remove from heat.
  • Brush one sheet of phyllo dough with melted butter and sprinkle with bread crumbs.
  • Place a second sheet of phyllo over the first; butter and sprinkle with bread crumbs.
  • Place a chicken breast in the lower half of the phyllo.
  • Put 1/4 of the mushroom mixture and 1/4 of the feta over the chicken.
  • Fold up the sides of the phyllo over the chicken, envelope style.
  • Repeat with remaining chicken breasts.
  • Place on a baking sheet, seam side down, and brush with butter.
  • Bake for 35 minutes, or until browned.
  • NOTES :
  • Recipe may be prepared in advance up to the point the chicken is wrapped in phyllo then frozen.
  • To serve, bake frozen at 350 degrees Fahrenheit for 50 minutes.

  • Preheat oven to 400℉ (200℃). Halve chicken breasts & pound flat. Melt butter. Layer 4 sheets of phyllo, buttering each sheet. On each chicken breast sprinkle 1 tablespoon shallots and ¼ teaspoon of sage. If using fresh sage use one whole large leaf for each breast. Lay one ounce of cheese on each breast & roll up. Place breast in the middle of the phyllo, at one end; roll once, fold in sides, brush with butter and continue rolling, buttering as you go. Lay all on ungreased cookie sheet and bake 25 minutes until browned and the breasts have been cooked through. If you have a thermometer the breasts should reach an internal temperature of 165 degrees F.

2 tablespoons extra-virgin olive oil
6 skinless, boneless chicken thighs (about 1 1/2 pounds), cut into 1-inch pieces
Kosher salt and freshly ground pepper
1 teaspoon paprika
1 small bulb fennel, cored and chopped, plus 2 tablespoons chopped fronds
1 red bell pepper, chopped
2 cloves garlic, finely chopped
1/2 cup basmati rice
1 1/2 cups low-sodium chicken broth
1/4 cup sun-dried tomatoes, chopped (not oil-packed)
1/4 cup pitted kalamata olives, chopped
Finely grated zest of 1 lemon
3 scallions, thinly sliced
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh oregano
4 ounces manouri cheese or goat's-milk feta, crumbled (about 1 cup)
8 sheets frozen phyllo dough, thawed
1 stick unsalted butter, melted

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken all over with salt, pepper and the paprika. Add to the pot and cook, turning once, until lightly browned, about 5 minutes. Transfer to a plate.
  • Add the fennel bulb and bell pepper to the pot and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, 1 minute. Add the rice and cook, stirring, until lightly toasted, 2 minutes. Add the chicken broth and return the chicken to the pot; bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender and the chicken is cooked through, 16 to 18 minutes. Transfer to a bowl and let cool slightly, about 10 minutes. Add the sun-dried tomatoes, olives, lemon zest, scallions, parsley, oregano, fennel fronds and cheese; stir to combine.
  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Lay out 1 sheet of phyllo on the parchment and brush generously with melted butter. Layer another sheet of phyllo ontop; brush with butter. Repeat with the remaining 6 sheets of phyllo; do not butter the last sheet. (Reserve about 2 tablespoons butter to brush the outside of the strudel.)
  • Mound the chicken mixture down one long side of the phyllo, about 2 inches from the edge. Use the parchment to lift the phyllo and roll it around the filling to make a long cylinder with open ends; arrange seam-side down on the parchment. Cut several small slits in the top of the roll and brush with the reserved melted butter.
  • Transfer to the oven and bake until golden brown and crisp, about 30 minutes. Let cool slightly, then cut into thick slices.

Steps:

  • Heat oven to 375. Lightly butter cookie sheet.
  • In a large bowl, combine all ingredients excpet phyllo and butter. Set aside.
  • Layer phyllo sheets, brushing each with butter - 2 stacks of 6 sheets.
  • Spread 1/2 chicken mixture along short edge of each stack of phyllo sheets.
  • Allow mixture to cover only 1/4 of sheets and leave 1 1/2 inches uncovered at each side.
  • Fold sides in and brush with melted butter.
  • Roll jelly-roll fasion and place on cooke sheet, seam side down. Brush with butter.
  • Bake at 375 for 20-25 minutes, or until phyllo is browned and crispy.
  • Cut each in half.

3 cups chicken broth or water
2 skinless boneless whole chicken breasts ( 1 1/4 pounds)
1 cup nonfat sour cream
3 tablespoons minced scallions
2 tablespoons fresh lime juice
1 fresh jalapeño chili, seeded and minced (wear gloves)
1 teaspoon ground cumin
2 egg whites, beaten with 2 tablespoons water
12 phyllo sheets, thawed if frozen, halved lengthwise to form 11- by 26-inch rectangles, stacked between 2 sheets wax paper, and covered with a dampened kitchen towel
Accompaniment: tomato salsa if desired

Steps:

  • In a deep 12-inch skillet bring broth or water to a boil and add chicken breasts in one layer. Reduce heat and poach chicken at a bare simmer, turning once, 7 minutes. Remove skillet from heat and cool chicken in poaching liquid 20 minutes. Cut chicken into 1/4-inch cubes.
  • In a large bowl stir together chicken, sour cram, scallion, lime juice, jalapeño, cumin, and salt and pepper to taste. Chill filling, covered, at least 2 and up to 3 hours.
  • Preheat oven to 400°F and lightly coat 2 baking sheets with cooking spray.
  • On a work surface arrange 1 phyllo rectangle with a short side facing you and lightly brush with egg wash. Put 1 heaping tablespoon filling in center of lower third of rectangle and fold long sides of phyllo over filling to cover. Lightly brush folded phyllo with egg wash and roll up jelly-roll fashion. Make more rolls with remaining phyllo and filling, brushing with egg wash in same manner.

2 teaspoons ground cumin
2 teaspoons paprika
2 teaspoons poultry seasoning
2 teaspoons chili powder
2 teaspoons grill seasoning (recommended: Montreal Seasoning by McCormick), half a palm full
2 tablespoons chopped parsley leaves, a handful
4 sheets phyllo dough
4 tablespoons butter, melted

Steps:

  • Preheat oven to 425 degrees F.
  • Place chicken in a bowl and mix with spices and parsley. Place a piece of phyllo on a nonstick cookie sheet, butter it and top with a second sheet. Divide the chicken in half. Form a 1-inch thick log the length of the long side of the phyllo dough. Roll the log in phyllo tightly. Cut the chicken filled phyllo into 4 "cigars" and brush with a dab more butter. Repeat to make a total of 8 chicken and phyllo roll-ups.
  • Bake 12 to 15 minutes until golden.

MOROCCAN CHICKEN BASTEEYA

2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 tsp grated fresh ginger
¼ tsp hot pepper flakes
¼ tsp saffron threads
2 cups shredded dark meat
½ cup chicken broth
¼ cup chopped dried apricots
¼ cup chopped green olives
2 tbsp lemon juice
1 cinnamon stick
½ tsp each salt and pepper
2 eggs, beaten
2 tbsp chopped fresh cilantro
2 tbsp chopped fresh parsley
¼ cup whole toasted almonds
1 tbsp icing sugar
½ tsp ground cinnamon
8 phyllo sheets
⅓ cup butter, melted

Steps:

  • Heat oil in large, nonstick skillet set over medium-high heat; cook onion for about 5 minutes or until tender. Stir in garlic, ginger, hot pepper flakes and saffron; cook for about 2 minutes or until fragrant. Stir in chicken, chicken broth, apricots, olives, lemon juice, cinnamon stick, salt and pepper. Simmer for about 10 minutes or until liquid has evaporated. Let cool completely; discard cinnamon stick.
  • Whisk together eggs, cilantro and parsley; stir into chicken mixture. Set aside. In food processor, combine almonds, icing sugar and cinnamon; pulse until finely chopped.
  • Preheat oven to 375°F (190°C). Grease 9-inch (23 cm) deep dish pie plate. Brush 1 sheet of phyllo with butter (keep remaining phyllo covered with damp tea towel to prevent it from drying out); top with another sheet of phyllo. Repeat to make 4 layers. Place layered phyllo in centre of pie plate, pressing to fit. Scrape chicken filling over phyllo; fold corners toward centre of pie (phyllo should not cover filling completely).
  • Drape sheet of phyllo over filling; brush with butter and sprinkle with some of the almond mixture. Repeat layers with remaining phyllo, butter and almond mixture. Carefully tuck edges into pie plate, under bottom layers of phyllo.
  • Bake for about 30 minutes or until very golden brown. Let stand for 5 minutes before cutting into wedges.

This stunning pie serves up the familiar flavour combination of chicken and mushrooms in a new and exciting way. Kale and wild rice complete the pie filling for a hearty, delicious dish. Take the time to try this recipe - you'll love it!

1.7 lb boneless, skinless chicken breast(s)
1 cup wild rice, cooked
1 tbsp olive oil
2 cups green onion(s), sliced
8 oz mushrooms, sliced
2 cups kale, shredded
3 tbsp whole wheat flour
¾ cups low-sodium chicken broth
¾ cups evaporated milk, partly skimmed, 2% MF
½ tsp salt
½ tsp black pepper, freshly ground
1 tsp dill, fresh, minced
¼ cup parsley, fresh, minced
1 - 2 tbsp marjoram, fresh, minced
8 sheets phyllo dough, about 200 g
¼ tsp paprika
1 tsp poppy seeds
2 tbsp olive oil, for brushing on phyllo

Steps:

  • Preheat the oven to 350°F (175°C).
  • Poach the chicken in enough water to cover over low heat. Remove from heat and cool. Dice chicken into smaller pieces approximately 1 inch (2.5 cm) square.
  • Heat the olive oil in a large non-stick pan over medium-high heat. Add the green onions, sliced mushroom and shredded kale. Sauté and stir for 5 minutes, or until vegetables are tender. Stir in cooked chicken and cooked wild rice.
  • Sprinkle flour over cooked vegetables and stir to blend. Reduce the heat to medium, and add the chicken broth, evaporated milk, salt, black pepper, minced dill, parsley and marjoram. Simmer for 10 more minutes until sauce is thickened.
  • To assemble, remove phyllo sheets from package. Return remainder to box and refrigerate for another use. Use kitchen brush to paint bottom of pie plate with olive oil and top with fillo sheets. Stagger sheets around plate so they hang over and can be drawn up and over filling to encase the pie. Use a pastry brush to sprinkle olive oil between sheets as you go. The oil heats and expands during baking helping the phyllo to be crispier but don't over do it as you don't want the pie to be greasy. Spread filling over phyllo and draw sheets up and over filling towards centre of pie. Use your brush to spread a bit of oil over top of sheets. Sprinkle with sweet paprika and poppy seeds for a decorative affect.
  • Bake pie in preheated 350°F (175°C) oven for 45-60 minutes or until top is lightly browned and filling is set.
  • Cut into six wedges and serve.

1 lb fresh spinach, microwaved in covered bowl 'til just soft,and seasoned with
1 tablespoon lemon juice

1/4 lb fontina, sliced (or other sharp or rich cheese)
1/2 cup flour, seasoned with
1/2 teaspoon salt, and
1/8 teaspoon pepper
6 tablespoons olive oil
1 tablespoon dried basil
1 teaspoon dried tarragon
salt and pepper
4 phyllo pastry sheets (approx. 12" x 18" ea.)
2 tablespoons butter, melted & combined with
2 tablespoons olive oil (for brushing phyllo)

Steps:

  • PREPARE THE COMPONENTS:
  • Dredge chicken breasts in seasoned flour & brown in 2 T Olive Oil over med-high heat, 'til nicely browned, but not cooked through - Set aside
  • Carmelize onions by sauteeing over low heat in 2 T olive oil, stirring occassionally, until soft, brown, and becoming sticky - Set Aside
  • Saute chopped mushrooms in 2 T Olive Oil until soft; add Basil, Tarragon, Salt & Pepper to taste - Set aside
  • ASSEMBLE THE PACKAGES:
  • Lay a sheet of phyllo on counter - brush lightly with mixture of melted butter & olive oil (Keep phyllo tightly wrapped at all times until ready to use - if not, it will become dried-out & unusable almost immediately)
  • Fold in half & brush top again
  • Set a chicken breast at center toward bottom; spread 1/4 of onions, 1/4 of spinach, 1/4 of mushrooms, & 1/4 of sliced cheese on top
  • fold phyllo in on both ends & bottom, and roll up like an envelope, brushin dry areas w/ oil-butter mixture as you go

1 packages chicken cutlets
1 packages pesto sauce
56 slices mozzarella
56 slices prosciutto
1 packages phyllo dough
0.25 cups butter
1 cans mushroom soup
0.5 cups milk

Steps:

  • Start by layering ingredients; place chicken first, then pesto sauce enough to cover chicken. Place a slice of mozzarella and then Prosciutto to finish it off. Then roll it all up. You may use a toothpick to hold it in place. It's best to make all the chicken rolled up first then roll them up in dough.
  • After you've rolled them up, cut the phyllo dough in half lengthwise. Take a sheet of phyllo dough, remember to layer a moist paper towel on the rest of the phyllo because they will harden up if you don't. Brush Crisco all over one side of the phyllo. Then remove the toothpick from the chicken and place it on the bottom of the phyllo dough by you, right in the middle. Then begin by rolling it up and when you get to halfway tuck in the sides of the phyllo. Place it in a pan and finish by brushing more Crisco on it.
  • Place it in a preheated oven at 350 for 1 hour. While this is preparing, mix the mushroom soup with milk. You can either serve it over the chicken when it's done or serve it as gravy for those who may not want mushroom soup.
