2 ounces chilled vodka, citrus vodka or limoncello (Italian lemon liqueur)
2 ounces prosecco or other sparkling wine or Champagne
2 sprigs fresh mint

Steps:

  • Blend lemon sorbet on low speed and pour in vodka or lemon liqueur in a slow stream. Add prosecco or Champagne. Pour cocktails into a chilled martini glass and serve, garnished with a sprig of mint.

4 cups caster sugar
1 (750 milliliter) bottle Champagne

Steps:

  • Combine water and sugar in a heavy bottom pot. Boil until reduced to a thin syrup, about 1 hour.
  • Pour syrup into a heat-proof bowl and let cool to room temperature, about 2 hours.
  • Pour Champagne into the syrup and mix until fully combined. Transfer mixture to an ice cream churner. Churn per manufacturer's directions until icy and no longer runny, about 35 minutes.

2 cups (500 ml) freshly squeezed pink grapefruit juice
3/4 cup (150 g) sugar
1 cup (250 ml) Champagne or other sparkling wine
Champagne or other sparkling wine, for serving

Steps:

  • In a small saucepan, warm 1/2 cup (125 ml) of the grapefruit juice and the sugar, stirring until the sugar completely dissolves.
  • Pour the mixture into a medium bowl and add the remaining grapefruit juice and the Champagne or other sparkling wine. Cover and refrigerate until thoroughly chilled.
  • Freeze in an ice cream machine according to the manufacturer's instructions.
  • To serve, scoop the sorbet into chilled serving glasses or Champagne flutes and pour Champagne or other sparkling wine over. Serve right away.

1 (750 milliliter) bottle champagne
¼ cup white sugar
1 pint strawberries
1 pint blueberries
6 fresh mint leaves

Steps:

  • Pour champagne into a shallow metal pan or bowl, and stir in the sugar. Cover with plastic wrap, and place in freezer. Freeze for 4 hours, whisking every 30 minutes. The frozen mixture will be firm and granular.
  • Spoon the sorbet mixture into a blender or food processor, and process until smooth. Return to the metal container, cover, and re-freeze for up to 48 hours.
  • Combine strawberries and blueberries in a small bowl. Spoon berries into the bottom of champagne flutes or wine glasses, and top with sorbet. Garnish with mint sprig if desired.
