DATE BALLS
Alternative version of my recipe for Algerian Date Balls that calls for anise in the recipe. My husband and I don't care for the anise, so I tweeked the recipe and used the rice crispy cereal version. my husband loves them. You may also decide to roll into flaked coconut tinted with food coloring for a festive look instead of the powdered sugar. :) Prep time includes cooling time.

- Place the peanut butter and honey in a large bowl and use a spoon to mix them together a little.
- Add the oats, 1/4 cup of desiccated coconut and 1/4 cup of the protein powder to the bowl (i.e. only add half of the protein powder to begin with).
- Using a wooden spoon or a sturdy spatula, start combining all of the ingredients together. They should form a slightly sticky dough, with a consistency where it can be rolled into balls. Once the mixture has largely come together, you can test it by rolling a bit into a ball with your hands. If it's too wet, add extra protein powder until it reaches the right consistency.

- In a large food processor fitted with an "S" blade, process the walnuts and coconut until crumbly.
- Add in the dates, vanilla and sea salt and process again until a sticky, uniform batter is formed. (You can add a tablespoon of coconut oil, only if needed to help the mixture come together.) You don't want to over process, or the batter will become oily, so process until crumbly, but sticky when pressed between your fingers.
- Scoop the dough by heaping tablespoons, then roll between your hands to form balls. Arrange them on a baking sheet lined with parchment paper, then place in the fridge or freezer to set for at least 30 minutes before serving. Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life. (I prefer them frozen, myself!)

- Place all ingredients in a food processor (we use a mini food processor), sprinkling the spices evenly around the processor bowl.
- Process the date mixture until it reaches your desired consistency (from a bit chunky and chewy to silky-smooth), scraping the bowl once or twice if needed. Note that dried dates vary a bit in how moist they are – if you are having difficulty processing your dates because they're extra-dry, you can add just one or two drops of water to help loosen the mixture. Be very careful not to add too much water, though!
- With very slightly dampened hands (to prevent sticking), roll the date mixture into 1-inch balls and lay the balls on parchment or wax paper to dry.

- Add all of the ingredients to the bowl of your food processor and blend until the nuts are well chopped and a thick “dough” starts to form, about 3-5 minutes of processing. If the ingredients are chopped into super small pieces but the dough isn’t coming together, try adding a teaspoon of water at a time (up to a tablespoon or two) to encourage everything to come together.

- Transfer the mixture to a small bowl for easier rolling. Scoop out 1 tablespoon of the mixture at a time and roll into little balls. You should end up with 12-13.

- In a food processor, combine all ingredients. Puree until combined (mixture should stick together in a ball when done).
- Scoop out a tablespoon of dough and roll into a ball. Roll in extra cocoa or chopped nuts or seeds to coat. You could probably eat them without this coating, but it helps them be less sticky and looks nice. If rolling in cocoa, dust off excess or you will be inhaling a bit of cocoa powder when you eat them. Makes 10-12 balls, depending on how big you make them.
- Place rolled balls in a storage container. Keeps on the counter for 1-2 weeks, but we prefer them cold out of the fridge or freezer. Keeps in fridge for 3-4 weeks, freezer for 3+ months. If traveling with them, putting them in lunches, etc. I recommend freezing and then they will be perfectly thawed by lunchtime!
