Provided by MommyMakes

Categories     Lunch/Snacks

Time 33m

Yield 18 pigs in a blanket

Number Of Ingredients 9

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter, cold, cut into small pieces
1/2 cup grated cheddar cheese
3/4 cup buttermilk
18 miniature hot dogs

Steps:

  • Heat the oven to 400ºF. Grease a large baking sheet. Sift the dry ingredients (flour through salt) into a mixing bowl (or dump them in one at a time, whatever).
  • Rub the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
  • Make a well in the dry ingredients and add the buttermilk. Stir well with a wooden spoon. Let the dough sit for 3 minutes.
  • Sprinkle the dough with flour and stir once or twice then turn out onto a well floured counter.
  • With floured hands, pat the dough into a 15 by 7 inch rectangle, trimming the sides if necessary to get a true rectangle. (Handle the dough as little as possible for tenderness, yeah right).
  • Using a pizza cutter, slice the rectangle into thirds horizontally then slice each third into thirds vertically, this will give you 9 small rectangles. Slice each rectangle diagonally into two thin triangles.
  • One at a time, roll up the sausages in the triangles. Place pointy side down on greased cookie sheet.
  • Bake for 12 to 13 minutes, until golden brown. Cool on the sheet for 3 minutes then tranfer to a wire rack.

1 package refrigerated reduced-fat crescent dough
Flour, for dusting
Mustard, as dip, optional

PIGS IN A BLANKET (BLANKIES FROM SCRATCH)

Pigs in a Blanket (Blankies from Scratch) image

I have been using this recipe for blanketed piggies since I first came across it almost 15 years ago from either my sister or my grade 9 home economics class. I'm so glad I have it since it's so hard to find a blanket recipe from scratch! I can cover a typical Canadian package of 12 hot dogs with this recipe.

Provided by ReadyForThe80s

Categories     Weeknight

Time 25m

Yield 9-12 Pigs In A Blanket, 9-12 serving(s)

Number Of Ingredients 7

2 cups flour (white or whole wheat)
4 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
1/3 cup butter or 1/3 cup margarine
3/4 cup milk (any type should work)
12 hot dogs or 12 sausage, to be wrapped

Steps:

  • Sift the dry ingredients in a bowl.
  • Mix in the butter/margarine and milk.
  • On a lightly floured surface, roll out the dough to desired thickness and as wide as the hot dogs to be wrapped are.
  • Wrap the individual hot dogs or sausages in their own blanket.
  • Bake at 425°F for about 10 minutes or until slightly brown.
  • *If you get to the end of the dough, yet still have more hot dogs left without blankets, it's easy just to roll the wrapped hot dogs between your hand and your work surface to make their blanket thinner, that way you can cut off the excess dough off from either side of the hot dog and combine the ends and roll out another strip of blanket. Maybe you'd like to consider adding a bit of cheese inside the blanket for added flavor.

PRETZEL-ISH PIGS IN A BLANKET WITH MUSTARD SAUCE

Pretzel-ish Pigs in a Blanket with Mustard Sauce image

This is so much fun. I find the price of these, premade in the freezer section, to be excessive. That was my first motivator to attempt to make them (somewhat) at home... Then, more important things came into play: They taste better when rolled and baked fresh. They are fun to make. It's just enough cooking when you feel like a project that doesn't take up too much time. The pretzel flavor makes these special. It's pizza dough with the baking soda "bath" that gives you the pretzel vibes.

Provided by Alex Guarnaschelli

Categories     appetizer

Time 2h40m

Yield 32 to 36 servings

Number Of Ingredients 15

1 1/2 cups warm water (about 110 degrees F)
One 1/4-ounce package active dry yeast (2 1/4 teaspoons)
3 1/2 cups all-purpose flour, plus additional for dusting
1 tablespoon extra-virgin olive oil, plus additional for greasing
1 scant tablespoon honey
1 teaspoon kosher salt
6 tablespoons grainy Dijon mustard
2 tablespoons honey
1 tablespoon hot sauce, such as Tabasco
1 tablespoon red wine vinegar
Nonstick cooking spray, for the parchment, optional
One 12-ounce package mini hot dogs (32 to 36 pieces)
1/2 cup baking soda
2 to 3 tablespoons pretzel or kosher salt
Melted unsalted butter, for brushing

Steps:

  • For the dough: In a bowl, combine the warm water and yeast. Stir to dissolve the yeast and allow the mixture to rest for 5 minutes.
  • Using a sieve or strainer, sift about half of the flour over the yeast mixture and mix with your hands until smooth. Add the oil, honey and kosher salt. Sift over the remaining flour and mix to combine.
  • Lightly flour a cutting board or flat surface. Turn the dough onto the floured area and knead until the dough is smooth and the ingredients are fully integrated, 3 to 5 minutes. Lightly oil a bowl and place the dough inside. Cover with plastic wrap and let it rest in a warm place until it has doubled in volume, about 1 1/2 hours.
  • For the mustard sauce: In a medium bowl, whisk the mustard, honey, hot sauce and vinegar with a splash of warm water. Taste for seasoning. Set aside.
  • Preheat the oven to 375 degrees F.
  • For the pretzel-ish pigs in a blanket: Line 2 baking sheets with parchment paper sprayed with nonstick cooking spray or silicone baking mats and set aside. Sprinkle some flour on a flat surface. Roll the dough out into an 18-by-13-inch rectangle about 1/4 to 1/2 inch thick. Cut into 2 1/4-inch squares. Roll each mini hot dog in a single piece of the dough. Pinch the seam and ends to firmly close, tucking the excess on the ends underneath. Place each wrapped hot dog seam-side down on one of the prepared baking sheets.
  • For the baking soda bath: Prepare a third baking sheet or large platter with parchment. In a medium pot, bring about 6 cups of water to a boil over medium heat. Slowly whisk in the baking soda a bit at a time. Working in batches, use a slotted spoon to drop each pig in a blanket into the water for 30 seconds, then remove and transfer to the prepared third baking sheet or platter.
  • Transfer the pigs in a blanket in a single layer back onto the original baking sheets, allowing some space between each. Sprinkle the dogs with the pretzel salt or kosher salt. Bake in the center of the oven until the pastry is nicely browned, 25 to 30 minutes. Lightly brush with melted butter before serving. Serve with the mustard sauce on the side.

Nonstick cooking spray
4 reduced-fat hot dogs, such as Ball Park Lite Beef Franks, each cut into 3 pieces
2 tablespoons skim milk
5 slices 2% reduced-fat cheddar singles, roughly chopped
1 tablespoon reduced-sugar ketchup, such as Heinz
2 teaspoons yellow mustard

Steps:

  • Preheat the oven to 450˚F. Line a baking sheet with parchment paper, and set it aside.
  • Lay 1 sheet of phyllo on a work surface (cover the remaining phyllo with a slightly damp kitchen towel to keep it from drying out). Spray the phyllo sheet generously with cooking spray. Place 1 piece of hot dog at the end of each strip. Fold the sides of the phyllo in to overlap the edges of the hot dog pieces. Roll the hot dogs up tightly to encase them in phyllo. Place the rolled hot dogs, seam side down, on the prepared baking sheet.
  • Repeat the process with the remaining hot dogs and phyllo. When all of the hot-dog packages have been assembled, spray them lightly with cooking spray, and bake until they are golden brown and crispy, about 16 minutes.

  • Serve the hot dogs with the warm sauce for dipping.

You don't want to overwork this (which I'm often tempted to do!), as these small lumps of butter are what will create any semblance of flakiness in the dough.

  • Preheat the oven to 375°. Lightly oil a large baking sheet. In a small saucepan, melt the butter with the sugar and honey over moderate heat. Remove from the heat and whisk in the Dijon until smooth. Let the glaze cool completely.
  • On a lightly floured work surface, unfold the puff pastry and roll out to a 12-inch square. Cut the dough in half, then cut each half into 6 triangles. Brush 1 triangle with the glaze and season with coarsely ground black pepper. Put 1 piece of hot dog on the wide end of the triangle, then loosely roll up. Put the pig in a blanket seam side down on the prepared baking sheet. Repeat with the remaining triangles, glaze and hot dogs. Brush the pigs in a blanket with the egg wash and sprinkle with flaky sea salt and coarsely ground black pepper. Refrigerate for 15 minutes.
  • Bake the pigs in a blanket for 30 to 35 minutes, until puffed and golden; rotate the baking sheet halfway through baking. Serve hot.

  • Add the dough to a medium bowl. Press it into one lump. If it looks a little powdery still, wet your hands and smooth the areas. Don’t knead the dough.
  • Set up a station with prepared sheets of aluminum foil (I recommend heavy duty aluminum foil). Each sheet should be about 6” x 9”. A little less or more is fine, but I like to be able to roll the mini sausage a few times to keep it from coming apart later. This recipe makes about 32-34 sausages, so prep at least 30 sheets.
  • Start by laying out your first sheet of foil and taking your first portion of seitan. Take about 1-2 tablespoons worth Using your hands, form it roughly into a mini sausage shape. I like to joke about them being the size (and shape) of my fingers, which have always been a little chunky, lol.
