SLOW COOKER PULLED PORK
Succulent pulled pork spiced with paprika and cinnamon is oh-so simple when you make it in the slow cooker. Serve with fennel and apple slices in bread rolls

Steps:
- Put the onion slices at the bottom of the slow cooker. In a small bowl mix together 1 tbsp salt with 1 tsp ground black pepper, the smoked paprika and cinnamon. Put the flour onto a plate then rub the spice mixture over the pork.
- Heat the oil in a large frying pan and roll the spiced pork in the flour before putting it into the pan to sear it on all sides. Once the meat is starting to pick up a golden colour pop it on top of the onion slices in the slow cooker.
- In a large jug combine all the ingredients for slow cooking the pork then pour over the meat. Pop the lid on and cook on the low setting for 8 hours.
- When you're ready to serve, take the meat out of the slow cooker leaving the cooking liquor behind. Put the cooked meat on a roasting tray or large shallow bowl and pull it into bite-size chunks and shred with 2 forks. Ladle a little of the cooking juices over the pork and mix together.
- Toss the fennel and apple slices in the lemon juice and season well then serve along with the pulled pork in bread rolls. Spread the rolls with a little English mustard and mayonnaise if you like.

- Mix beer, mustard, honey, Worcestershire sauce, garlic, cayenne pepper, and salt in a bowl until honey is dissolved. Pour a small amount of the beer marinade into a slow cooker; add pork. Pour remaining marinade over pork. Cover and refrigerate overnight, turning pork occasionally.

- 1. In a medium saucepan, stir together the ketchup, bourbon, ¼ cup brown sugar, and ½ teaspoon smoked paprika. Bring to a boil, then reduce the heat to simmer for 10 minutes. 2. Meanwhile, in a 5- to 6-quart slow-cooker bowl, combine the remaining ¼ cup brown sugar, 2 teaspoons smoked paprika, 1½ teaspoons salt, and 1 tablespoon freshly ground black pepper. Add the pork and rub the mixture all over the meat. Turn the pork fat side up. 3. Pour ¼ cup sauce and 1 cup water into the slow-cooker bowl. Refrigerate the remaining sauce for serving. Cover and cook as the manufacturer directs on the low setting until the meat is falling-apart tender, about 8 hours. 4. Carefully transfer the meat to a large bowl; discard the fat and skin. SLOW COOKER PULLED PORK SANDWICHES

- Place the garlic and chicken stock in the slow cooker. Combine the sugar, chili powder, salt, cumin, and paprika in a small bowl.. Pat the pork dry with paper towels. Rub the spice mixture all over the pork and place the meat in slow cooker. Cover and cook until the pork is fork tender, about 6 to 8 hours on high or 8 to 10 hours on low. Turn off the slow cooker and remove the pork to a cutting board. Skim and drain the liquid; set aside. Using 2 forks, shred the meat into bite-sized pieces. Pour reserved liquid on top shredded meat.

SUPER SIMPLE SLOW COOKER PULLED PORK
This is wonderful for feeding a big crowd, and since the slow cooker does most of the work, you get to spend time with your friends! Use as much or as little of the BBQ sauce as you like, as some people like their BBQ dry and neat, while others like a big sloppy sandwich with a lot of sauce. - Cook the pork:
- Mix salt, black pepper, cumin, paprika, and cayenne in a small bowl. Rub all over pork.
- Stir soda and barbecue sauce in slow cooker. Place pork in slow cooker, cover, and cook on low, spooning juices over top of pork or turning occasionally, until meat is very tender and falls apart when shredded with 2 forks, about 8 hours.
- Transfer pork to a rimmed baking sheet and let cool slightly. Shred pork with 2 forks. Discard large pieces of unrendered fat or gristle.
- Make the Big Red barbecue sauce:
- Stir barbecue sauce and 2 Tbsp. soda in a medium bowl. Taste and add up to 1 Tbsp. Big Red, depending on sweetness of barbecue sauce. Toss shredded pork in desired amount of sauce and drizzle more sauce over. You can also spoon some cooking liquid over pork for extra flavor. Season with salt and pepper, if needed.

- Day 1 : Mix all the ingredients for the Dry Rub and rub into the pork, Place in bowl, cover and leave in fridge overnight.
- Day 2: Remove pork from fridge and allow to stand for an hour at room temperature. Heat some oil in a large frying pan, and sear all sides of the pork on high heat.
- Place the onions and garlic in an even layer in the slow cooker and pour in the stock or broth. Place the meat on top of the onions and garlic. Cover and cook until the pork is fork tender, about 6 to 8 hours on high or 8 to 10 hours on low
- Make the Barbeque sauce by mixing and heating all the ingredients until the sugar disolves. Let cool.
- Turn off the slow cooker and remove the pork to a cutting board. Set a fine-mesh strainer over a medium heatproof bowl. Pour the onion mixture from the slow cooker through the strainer and return the solids to the slow cooker. Set the strained liquid aside.
- If the pork has a bone, remove and discard it. Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker, add the barbecue sauce, if using, and mix to combine.

- Choose the right meat. No matter the method you choose, the slow cooker, the oven or the classic barbecue way, the most important thing is to buy pork shoulder because it’s the most appropriate meat for this dish.
- Season the meat. You can choose the simple way: rubbing the pork shoulder with salt and pepper. If you do, make sure you sprinkle a generous quantity of salt, you want the whole surface to be salted.
- Add some liquid, but not too much. You can make a perfect pulled pork in a slow cooker if you cook it in a little bit of flavorful liquid. To succeed with that, add about 1/4 cup of liquid per pound of pork.
- Add your favorite flavors. To add some more flavor to your pulled pork, quarter an onion and add it to the slow cooker. Also, consider adding a crushed garlic clove or two, a few bay leaves, a cinnamon stick, some dried chilies, ginger, apple cider vinegar, ketchup, barbecue sauce, depending on the flavor you want to obtain.
- Slow cook the pork. This step is actually the easiest when you make pulled pork in a slow cooker. All you have to do once everything's in the slow cooker is to turn it on low and wait until the pork shreds easily with a fork.
- Pull the pork. When the meat is done, remove it from the liquid and set it aside to cool enough that you can touch it. After that, use two forks to pull the meat into shreds.
- Make a sauce. Don’t throw away the cooking liquid; use it to make a sauce. First, separate the juices from the solid parts using a strainer. Transfer the liquid to a skillet and bring it to a boil, then simmer until it reduces by half and starts thickening.
