1 package (10 ounces) frozen chopped spinach
5 tablespoons butter, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese
2 eggs, lightly beaten
1/2 cup milk
1/2 cup soft bread crumbs

Steps:

  • Cook spinach according to package directions; drain well. Add 4 tablespoons butter, salt, pepper, cheese, eggs and milk. , Spoon into two greased 8-oz. baking dishes. Melt the remaining butter; add crumbs. Sprinkle over spinach mixture. Bake, uncovered, at 350° for 20-25 minutes or just until set.

  • Heat oven to 350°F.
  • Mix all ingredients except crushed croutons until blended.
  • Spoon into 1-qt. casserole sprayed with cooking spray; sprinkle with crushed croutons.

1 shallot, minced
3 cloves garlic, minced
Pinch of nutmeg
1/4 cup all purpose flour
1/2 cup heavy cream
1/2 cup milk

Kosher salt and freshly ground black pepper, to taste
1 (16-ounce) package frozen chopped spinach, thawed and squeezed dry

Steps:

  • Melt butter in a large skillet over medium heat. Add shallot, garlic and nutmeg. Cook, stirring frequently, until shallots have become translucent, about 2-3 minutes. Whisk in flour until lightly browned, about 1-2 minutes. Gradually whisk in heavy cream and milk. Cook, whisking constantly, until the sauce has begun to thicken, about 5 minutes. Stir in cheeses until melted, about 1-2 minutes; season with salt and pepper, to taste. Stir in spinach until well combined, about 1 minute. Serve immediately.

Steps:

  • Preheat the oven to 375 F and butter a gratin dish.
  • Sauté the onion in the olive oil for 5 minutes in a medium saucepan set over medium heat. Sprinkle the flour over the onions and continue sautéing the mixture for 30 seconds. Add the salt, pepper, dried thyme, and spinach to the pan and stir until the ingredients are combined. Cover the pan with a lid and turn the heat to low. Allow the spinach to wilt for 3 minutes.

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg and cayenne and bring to a simmer. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Mix in the spinach, 1/2 teaspoon salt and 1/4 cup of the Parmesan. Add the cream cheese and stir until melted. Season with salt and pepper to taste.

2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 cloves garlic, lightly smashed
3/4 cup heavy cream
1 teaspoon freshly ground nutmeg
1/4 cup freshly grated Parmesan

Steps:

  • Wash the spinach in several changes of water to get rid of any grit. Drain the spinach but keep some of the water clinging to the leaves. Heat the butter and oil in a large skillet over medium-high heat and add the spinach and garlic. Cook, turning frequently, until the spinach has wilted down evenly. Remove the garlic and put the spinach into a colander and let it drain well. Press out as much liquid as you can from the leaves and chop them coarsely.
  • Heat the skillet again over medium-high heat and add the cream and nutmeg; cook until it reduces a bit, about 5 minutes. Add the spinach and parmesan and season with salt and pepper. Cook until the spinach is hot, about 5 more minutes. Serve immediately.

3 large garlic cloves, minced
2 tablespoons butter

½ teaspoon ground nutmeg

Steps:

  • Combine milk, spinach liquid and garlic in a 1-quart microwave-safe measuring cup or small bowl covered with a saucer, and microwave (or heat slowly in a medium saucepan) until very hot and steamy. Let stand for 5 to 10 minutes to soften garlic.

1 medium onion (minced)
4 cloves garlic (minced)
1 pound fresh baby spinach (stems removed (2 bunches))
1/2 cup milk
1 tablespoon all-purpose flour
salt and pepper (to taste)

Steps:

  • Blanch the spinach: Boil a pot of water, then turn off the heat. Add the spinach, stir, and let it soak for 20-30 seconds. Drain the spinach in a colander in the sink and immediately run the spinach under cold water to halt the cooking. Let it drain the colander while making the sauce.
  • Sauté onion and garlic: In a saucepan pan over medium-high heat, add the olive oil and. Stir in the onion and cook for 3-4 minutes until softened and translucent. Add the garlic and cook for another 30 seconds until aromatic. Stir in the flour and cook for another 2 minutes. Add the milk, mix well until smooth and thickened.
  • Add the spinach and cook: Add the spinach to the saucepan, salt, and pepper. Stir well to combine. Cook for another 3 to 5 minutes until sauce has thickened.

1/2 pound fresh spinach, coarse stems discarded and the leaves washed well, spun dry, and chopped fine (about 3 1/2 cups)
1 cup minced scallion
2 3/4 cups fine dry bread crumbs
1/2 cup minced fresh parsley leaves plus parsley sprigs for garnish
1/4 cup minced celery
3 garlic cloves, minced
2 sticks (1cup) unsalted butter
2 tablespoons Pernod or other anise-flavored liqueur
1 tablespoon anchovy paste
1/8 teaspoon cayenne, or to taste
12 slices of lean bacon (about 3/4 pound)
36 large oysters, shucked reserving the bottom (deeper) shells, scrubbed and dried, and 1/3 cup of the oyster liquor
coarse salt for filling the platters
lemon wedges for garnish

Steps:

  • In a bowl combine the lettuce, the spinach, the scallion, 1/2 cup of the breadcrumbs, the minced parsley, the celery, and the garlic. In a skillet melt the butter over moderate heat and in it cook the vegetable mixture, stirring, for 1 to 2 minutes, or until the greens are wilted. Stir in the liqueur, the anchovy paste, the cayenne, and salt and black pepper to taste and chill the mixture, covered, for 1 hour, or until it is cold.
  • In another skillet cook the bacon over moderate heat until it is crisp, transfer it to paper towels to drain, and crumble it. Arrange 1 oyster in each of reserved shells and moisten the oysters with some of the reserved liquor. Spread half of the vegetable mixture by heaping teaspoons onto the oysters and sprinkle the bacon over it. Top the bacon with the remaining vegetable mixture and sprinkle each oyster with 1 tablespoon of the remaining 2 1/4 cups bread crumbs.
  • Arrange the oysters on ovenproof platters or in jelly-roll pans filled with the coarse salt and bake them in the middle of a preheated 450°F. oven for 18 minutes, or until the edges of the oysters begin to curl and the bread crumbs are browned well. Garnish the platters with the parsley sprigs and the lemon wedges.
