- Preheat the oven to 200°C/400°F/gas 6.
- Put a 21cm-diameter frying pan with an ovenproof handle on a hob over a medium heat. Add the sugar and heat to a lovely caramel colour, stirring constantly.
- Chop the butter into cubes, then add to the pan with the ginger and cinnamon, and stir to combine.
- Peel and core the pears, cut into wedges, then place in the caramel and spoon over the mixture. Turn the heat down and cook for 5 to 10 minutes, or until the pears are just tender and cooked but retain their shape.
- Remove from the heat and cool slightly, then arrange the pears prettily in the pan.
- Roll out the pastry to about 5mm thick and cut a disc slightly bigger than your pan (about 24cm).
- Carefully place the pastry disc on top of the pears and caramel, then carefully tuck it snugly around the outside of the pears and down into the sides of the pan.
- Bake the pie for 30 to 40 minutes, or until the pastry is golden brown and puffed up.
- Remove from the oven and leave for 10 minutes. Run a knife around the edge, place a large plate over the top and carefully turn the tart onto the plate. Serve with double cream.

Steps:
- Heat oven to 170C/150C fan/gas 3.
- Pour water, flour, butter, salt, egg and baking powder into the bowl.
- Knead the dough for a few minutes until is soft and not sticky.
- Roll out the dough on a well-floured surface to a 1cm thickness.
- Place the dough on a baking tray.
- Prick the bottom of the tart with a fork.
- Bake a pastry in the oven for about 20min.
- Make syrup by melting the butter with lemon juice and sugar in a small saucepan.
- Remove from the heat.
- Cut peeled and cored apples/pears into thin slices.
- When the tart bottom has chilled, lay the apple/pears slices in concentric circles.
- Sprinkle the syrup over the apples/pears.
- Bake for 20min until the pastry is pale golden brown.
- Whisk together the double cream, egg yolks and sugar till thick and creamy.
- When the pastry is ready pour the cream over the tart.
- Bake the cake in the oven for next 10 mins until mixture just set.

- Core the pears, then peel as neatly as possible and halve. If you like, they can be prepared up to a day ahead and kept in the fridge, uncovered, so that they dry out.
- Tip the sugar, butter, star anise, cardamom and cinnamon into an ovenproof frying pan, about 20cm wide, and place over a high heat until bubbling. Shake the pan and stir the buttery sauce until it separates and the sugar caramelises to a toffee colour.
- Lay the pears in the pan, then cook in the sauce for 10-12 mins, tossing occasionally, until completely caramelised. Don't worry about them burning - they won't - but you want to caramelise them as much as possible. Splash in the brandy and let it flambé, then set the pears aside.
- Heat oven to 200C/fan 180C/gas 6. Roll the pastry out to the thickness of a £1 coin. Using a plate slightly larger than the top of the pan, cut out a circle, then press the edges of the circle of pastry to thin them out.
- When the pears have cooled slightly, arrange them in the pan, cut side up, in a floral shape, with the pears around the edge pointing inwards. Rest the cinnamon stick on the top in the centre, with the cardamom pods scattered around.
- Drape the pastry over the pears, then tuck the edges down the pan sides and under the fruit (see Gordon's guide). Pierce the pastry a few times, then bake for 15 mins. If a lot of juice bubbles up the side of the pan, pour it off at this stage (see guide). Reduce oven to 180C/fan 160C/gas 4 and bake for 15 mins more until the pastry is golden. Leave the tart to stand for 10 mins, then invert it carefully onto a serving dish.

FRENCH PEAR TART

- Position one oven rack to middle, and move the second rack to the top slot.
- Preheat oven to 350 degrees F.
- In a bowl, mix together flour, sugar and salt. Add melted butter and combine to form dough.
- Transfer dough to a 9-inch tart pan with a removable bottom. With your hands press dough down to spread on bottom and onto the rims of the pan.
- Place in the oven on the middle rack and bake for 30 minutes, or until crust turns golden brown. When ready remove crust from oven and let sit to cool. Leave oven on.
- Meanwhile, heat the fig preserves in microwave for about 40 seconds. Pour heated fig preserves through a mesh strainer to separate chunks from liquid.
- Now, slice five pears into 1/2-inch slices, discarding core.
- Heat 1 tbsp of butter in a large cast iron skillet. Add pear slices and 1 tbsp water. Cover and cook on medium heat until pears are slightly tender; about 3 minutes.
- Remove pears onto a large platter and let sit to cool.
- Take the remaining three pears and cut them in the same manner.
- Now melt 2 tbsp of butter in previously used cast iron skillet. Add newly-sliced pears, chunks of fig reserves, and salt. Cook on medium heat, covered, for ten minutes; stir occasionally until pears are very tender.
- Take a potato masher and mash the pears and fig reserves into a puree. Let cook for another 5-7 minutes or until pureed mixture reduces and thickens.
- Transfer pear-fig puree onto the now cooled crust; spread evenly.
- Now, take the cooled pear slices and begin to assemble them in layered circles, starting at the outer edges (see photo).
- Place tart on the middle rack of the oven. Bake in 350 degree F-heated oven for 30 minutes.
- Warm up the strained liquid fig preserves for 20 seconds in the microwave.
- When tart is ready, remove from oven and brush surface of the pears evenly with the warmed fig liquid.
- Return to oven and place on the top rack. Broil very briefly; watching carefully until pears gain a nice caramelized look.
- Remove from oven and let cool for at least 1 1/2 hours before serving.
- When ready, place the bottom of the tart pan on a wide can of food. Hold the ring part of the pan and carefully slide it downwards (see photo).
- Cut pear fig tart into eight slices and serve. Enjoy!

- Preheat the oven to 375 degrees. On a lightly floured surface, roll dough to a 12-inch round. Fit dough into a 9-inch removable bottom tart pan lifting into and pressing up sides. Refrigerate while you prepare almond cream (frangipane).

To make the pastry, sift the flour and salt onto a work surface and make a well in the centre. put the butter into the well and, using a pecking action with your fingertips and thumb, work it until it is very soft. Add the icing sugar to the butter and mix. Add the eggs to the butter and mix well. 2. gradually incorporate the flour, flicking it onto the mixture and then chopping through it until you have a rough dough. Bring together with your hands and then knead a few times to make a smooth dough. Roll into a ball, wrap in plastic wrap and put in the fridge for at least 1 hour. 3. To make the almond filling, beat the butter, sugar and vanilla extract together until pale and creamy. Beat in the eggs gradually and then fold in the almonds, lemon zest and flour. 4. preheat the oven to 190°C (375°F/gas 5). Roll out the pastry to line a 23 × 2.5 cm (9 × 1 in) round loose-based fluted tart tin. Chill in the fridge for 20 minutes. 5. put the sugar and vanilla pod in a saucepan. Add the pears and pour in just enough water to cover them, then remove the pears. Bring the water to a simmer and cook for 5 minutes. FRENCH PEAR ALMOND TART WITH CRUST RECIPE
It may look fancy, but this homemade French Pear Almond Tart with Crust recipe or Pear Frangipane Tart is way easier to make than you think. It's a perfect dessert for fall, especially for Thanksgiving! With Thanksgiving quickly approaching, I'd love to share one amongst our favorite fall sweet recipes using seasonal fruits. And that is Pear Almond Tart or in you like, Pear Frangipane Tart. With home-baked, bakery level pear pie recipe sweet-tart (included in this recipe) crust, and seasonal pears on top of the creamy and delicious almond cream filling, this tart is a superb dessert to enjoy at tea time or after any meal. How to make Sweet Tart Crust For the Dough Take all the ingredients. If you can, keep all ingredients chilled within the refrigerator till ready to make this crust. Cut the butter into tiny cubes, and crack the whole egg into a small bowl. In a larger bowl, stir along with the flour, sugar, and salt. Add the butter to the flour mixture, using a pastry cutter or a pair of knives, cut the butter into the flour mixture till the feel resembles coarse cornmeal, with butter fragments no larger than small peas. Add the egg and vanilla extract and blend with a fork simply till the dough pulls together nicely. Form the Tart Crust Dough Move the dough clumps to a slightly floured surface, and shape into a ball. If sticky, gently sprinkle the flour. Flatten the ball along with your hands to create a thick disk. Wrap using a plastic wrap and refrigerate for a minimum of one hour (or thirty minutes within the freezer). The dough should be fully chilled before getting used. If you don't use the dough right away, you can store within the refrigerator for up to three days, or freeze it for up to two months. Roll Out the Tart Crust Dough Remove the dough out from the fridge and let it sit on the counter for a couple of minutes to soften slightly for no hustle rolling. In the meantime gently butter a 9-inch fluted tart pan with a removable bottom. Nicely flour your working surface and put the dough on top of it. Using a rolling pin, roll out the dough into an 11-inch circle, with 1/8-inch (3 mm) of thickens. If the dough is just too soft, return into the fridge. Flour the rolling pin nicely, and roll the dough easy around it, then unroll it into your already prepared tart pan. Pat the dough evenly onto the bottom and sides of the nicely greased tart pan, and seal any cracks within the dough. Trim off the excess dough with a kitchen knife, or using the rolling pin by rolling over the tart pan. Using a fork, gently prick the dough a few times, and cover the tart pan with wrap and place it within the freezer till it's firm, it should take about half-hour. By freezing the dough before baking prevents the crust from shrinking. To prevent the crust from turning into soggy, I always prefer to blind bake the crust. Heat the oven to 375F and place the rack within the center. When the oven is heated, tightly line the chilled crust with two layers of parchment paper, covering the sides to stop them from burning. In the meantime, peel the pears, cut every in half lengthwise, and scoop out the cores. Cut every half crosswise into 1/8 in. even slices. Squeeze the lemon and rub the pears with juice to stop from browning. Take out your tart crust from the fridge. Easily press every pear half to fan out, toward the stem top side. Slide the knife underneath the pears and move to the almond filling. Arrange the top with points facing in and pears fanning out toward the middle. Make certain to space pears out so that they are not touching, because the filling can puff up and they need space to expand. - For pears:
- Bring 4 cups water, sugar, and lemon juice to boil in large saucepan over medium-high heat, stirring until sugar dissolves. Add pears. Reduce heat to medium and simmer until pears are very tender, turning occasionally, about 20 minutes. Cool pears in syrup. (Can be made 2 days ahead. Cover and refrigerate.)
- For crust:
- Blend powdered sugar, almonds, and salt in processor until nuts are finely ground. Add butter and blend until smooth, scraping down sides of bowl occasionally. Mix in egg yolk. Add flour. Using on/off turns, blend until dough comes together in clumps. Gather dough into ball; flatten into disk. Wrap in plastic and chill at least 3 hours. (Can be made 2 days ahead. Keep refrigerated.)
- For almond filling:
- Finely grind almonds and flour in processor. Mix in 7 tablespoons sugar, then butter, blending until smooth. Mix in egg. Transfer filling to medium bowl. Cover and chill at least 3 hours. (Can be made 2 days ahead. Keep chilled.)
- Position rack in center of oven and preheat to 375°F. Roll out chilled dough on floured sheet of parchment paper to 12-inch round, lifting and turning dough occasionally to free from paper. Using paper as aid, turn dough into 9-inch-diameter tart pan with removable bottom; peel off paper. Seal any cracks in dough. Trim overhang to 1/2 inch. Fold overhang in, making double-thick sides. Pierce crust all over with fork. Freeze crust 10 minutes.
- Line crust with buttered foil, buttered side down, then fill with dried beans or pie weights. Bake crust until sides are set, about 20 minutes. Remove foil and beans. Bake crust until sides are golden and bottom is set, pressing with back of fork if crust bubbles, about 10 minutes longer. Cool crust in pan on rack. Reduce oven temperature to 350°F.
- Spread almond filling evenly in crust. Stem pears and cut each in half lengthwise; scoop out cores. Cut each half crosswise into thin slices. Gently press each pear half to fan slices but keep slices tightly overlapped. Slide spatula under pears and arrange atop filling like spokes of wheel with narrow ends in center.
- Bake tart until golden and tester inserted into center of filling comes out clean, about 55 minutes. Cool tart in pan on rack. Push pan bottom up, releasing tart from pan. (Can be made 8 hours ahead. Let stand at room temperature.) Cut tart into wedges; sprinkle with powdered sugar, if desired, and serve.
EASY PEAR TART OR GALETTE RECIPE

- Gather the ingredients. Preheat oven to 350 F.
- Line a 10-inch tart pan or pie with your favorite homemade or store-bought pie or tart crust. As you lay the crust into the pan, hold it up and let it drop and settle into any edges or corners, rather than pushing it in, to minimize shrinking and breaking when you bake the tart. Set aside. Alternatively, you can lay the rolled-out crust on a baking sheet for a free-form tart, often called a galette. Lightly prick the crust all over with a fork. Set aside.
- Cut the pears in half or quarters. Cut out and discard the core in each piece. Peel the pear pieces and cut them into even slices. Even slicing will lead to the prettiest and most evenly cooked tart.
- In a large bowl toss the pear slices with 1/3 cup of the sugar and the lemon juice . Arrange the pear slices on the crust-you can just dump them in and spread them out for a very rustic dessert, or arrange them in neat rows or concentric circles for a more elegant presentation. Reserve 4 or 5 slices of pear. Crimp the edges of the crust (see how to crimp a pie crust here if you've never done it before), or roll them up a bit to create an edge if you've decided to go free-form.
- Bake the tart until the crust is brown on the edges and pears are tender, about 50 minutes.
- While the tart bakes, bring the remaining 1/3 cup sugar, reserved pear slices, and 1/3 cup of water to a boil in a small saucepan. Reduce the heat to maintain a steady simmer and cook, undisturbed, until the syrup thickens, about 10 minutes. Set it aside.
- While tart cools, brush it generously with the syrup. Serve the tart warm or at room temperature.

- To prepare the crust, in a medium bowl whisk together the whole-wheat pastry flour, all- purpose flour, granulated sugar and salt. Add the butter and using two knives or a pastry cutter, cut the butter into the flour mixture until you get a pebbly, course texture. In a small bowl combine the buttermilk and ice water. Using a fork, gradually mix the buttermilk mixture into the flour mixture. Pat the dough into a 4-inch round and wrap in plastic wrap. Refrigerate for 30 minutes.
- In the meantime, preheat the oven to 425 degrees F, and prepare the filling. Peel the pears, core them and cut into 1/4-inch slices. In a large bowl toss the pear slices with the lemon juice. Sprinkle in the cornstarch, brown sugar and cinnamon and toss until the pears are evenly coated. Set aside.
- On a lightly floured surface, roll the chilled dough into a large circle about nine inches in diameter. Line a baking sheet with parchment paper, and draping the dough over the rolling pin, transfer to the prepared baking sheet. If the dough breaks at all patch it up with your fingers.
- Arrange the pears in a mound in the center of the dough, leaving a 2-inch boarder. Fold the border over the filling. It will only cover the pears partially and does not need to be even.
- Bake the tart for 15 minutes, and then reduce the oven temperature to 350 degrees F, keeping the tart in the oven all the while, and bake for another 40 minutes, until the pears are tender and the crust is golden brown.
- In a small bowl stir together the honey and boiling water to make a glaze. When the tart is done remove it from the oven and brush the honey glaze all over the top of the fruit and crust. Transfer to a plate to cool slightly. Cut into 6 wedges and serve warm or a room temperature.
EASY PEAR TART WITH PUFFED PASTRY

- Preheat oven to 400F (200C).
- Roll out puff pastry on a rimless cookie sheet lined with pre-cut brown parchment paper. Place a plate that has been floured on top of the pastry that is at least 1-2 inches smaller than the pastry round.
- Score around the perimeter of the plate to create at least a 1-2" "crust". Mix the apple sauce and cinnamon. Spoon this mixture across the center circle creating a base for your tart. Do not go into the crust area.
- Slice off all sides of the pears, avoiding the core, in 1 slice motions. You will have 2 large sides (the hips of the pear) and 2 smaller sides, and you will be left with the rectangular core.
- Put the hip cut pears flat side down and slice very thin, 1/8" thick slices. Keep the sliced order and arrange the pear slices exactly as they are creating an escargot pattern around the tart.
- The reserve the smaller pear cuts to create a splayed pear fan for the center. Do this by slicing the pear ¼" from the top of the pear, leaving the top intact so that you can create a fan-side cut. Place that in the center and fill in your overall design with any other of the pear slices.
- Sprinkle the sugar atop all the pear. Then beat 1 egg well in a small bowl and with a pastry brush only the crust very lightly with the egg wash, being careful not to get the egg in to the score cut or your pastry won't puff up.
- Bake for 30-35 mins until pastry are golden brown and puffed up.
- Allow to cool slightly, and then brush the pears with the apple jelly for a nice shiny finish.
- For whipped cream combine all ingredients in a bowl and whisk vigorously for 10-15 mins with a wire whisk until soft peaks form, or whip with an electric mixer.
- Transfer paper and tart in one motion to a round cutting board/cheese board.
- Slice into wedges and serve with homemade whipped cream. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Fit puff pastry into a 10-inch square tart pan with removable sides.
- Place a pear half, cut-side down, onto a work surface. Place a chopstick above and below the pear half, so the pear is framed on the top and bottom. A sweet pear tart that's great for the fall as pears are in season. Based off of a recipe for apple tart found at World's Healthiest Foods website. This recipe does have alcohol in it, but if you would prefer not to use any substitute an extract (such as vanilla or almond) and water with a little bit of brown sugar. Cook time includes the time to allow it to chill in the refrigerator, about 1 hour. Note: I made this trying the extract mix and it came out lovely! 1/2 cup of water, 1 teaspoon each of vanilla and almond extract, dash of nutmeg, and three teaspoons of brown sugar.

- Combine walnuts and dates in food processor. Make sure you remove pits if dates have them and cut off end where stem was. Process until well mixed and ground, but not smooth. About 40 seconds. It should be a coarse texture when done. Press evenly into a 9 inch tart pan. Set in refrigerator while making the filling.
- Squeeze the juice out of the lemon and combine with water in a bowl.
- Slice pears by cutting into quarters. Cut out core and slice crosswise in 1/4 inch thick slices. Put into lemon water while you finish cutting pears. Drain well in colander when done.

- To make Pastry: In a food processor combine flour, sugar, salt and pulse until combined. Add butter cubes a few at a time, pulsing quickly until dough resembles a coarse meal.
- Whisk egg yolk with ice water until combined. With the machine running, add egg mixture until combined and a dough forms. If not sticking together add 1 tablespoon more water. If too sticky add 1-2 tablespoon more flour.
- Form dough into a ball, flatten into a disc, wrap in parchment and refrigerate at least 1 hour or overnight even easier.
- Roll out dough into a large circle. Place in a removable bottom tart tin. Transfer dough into tin, fold over edges inward to create a double crust, this will add stability to your shell.
- Remove excess dough with a knife and continue to fit dough into tin, pressing edges in and making sure top of dough is flush with the tin.
- Pop tart in freezer while you make the filling.
- Preheat oven to 350F (176C).
- To make the Filling: In an electric mixer combine almond paste, butter and sugar, beat until combined and fluffy.
- Add eggs, one at a time, beating in-between each addition. Add almond extract, salt and flour. Beat to combine scraping down bowl as needed.
- Remove tart tin from the freezer and pour the mixture into the center, smoothing out to the edges with a spatula.
- Then place the pear halves around the edges, with the points facing in. Jarred pears really the best, because they are soft, and already peeled! Otherwise, pears take a long time to cook if using fresh and pastry will be done before the pears are soft.
- Bake for 40-45 minutes until pastry is golden brown and filling is puffed up and golden.
- Then melt apple jelly in microwave :30 until liquefied. Brush pears only with the jelly for a nice shine. Sprinkle with sliced almonds.
- Remove tart from the tin, place on a cake stand and "ta da!"
- For whipped cream combine all ingredients in a large bowl and whip on high until soft peaks form.
- Cut into wedges and serve with whipped cream. Enjoy!!

- Melt the butter with the sugar in a large frying pan and cook until the sugar has dissolved and the mixture has become a golden-brown caramel.
- Add the pear halves and cook, turning once, until caramelised all over. Remove from the heat and set aside.
- For the pastry, place the plain flour, butter and sugar into a food processor and pulse together until the mixture resembles breadcrumbs.
- Add the egg and pulse until the mixture just comes together as a dough. Add a little milk if required.
- Remove the dough from the food processor and roll to form a ball. Wrap in cling film and chill in the fridge for 40 minutes.
- Preheat the oven to 180C/350F/Gas 4.
- Remove the dough from the fridge and unwrap. Roll the pastry out on a clean, floured work surface to line a 20cm/8in tart tin. Transfer to the oven to bake for ten minutes, or until golden-brown.
- For the filling, mix the butter and sugar together in a bowl until light and fluffy.
- Add one egg at a time to the butter mixture and mix well, before adding the next (this can be done in a food mixer) until all the eggs are mixed into the butter and sugar.
- Add the lemon zest, plain flour and ground almonds and mix well to combine.
- Spoon the filling into the baked pastry tin and press the caramelised pear halves into the filling, so that they are half-submerged.
- Transfer to the oven and bake for 30 minutes, or until the filling is cooked through.
- For the chocolate sauce, place the butter, sugar, chocolate, cocoa powder, vanilla extract and water into a clean pan over a medium heat. Bring to the boil and simmer for 15 minutes, stirring regularly, until the sauce is thick and glossy.
- To serve, cut a piece of tart and place on a serving plate, top with the chocolate sauce and drizzle over the double cream.

- Dulce de leche and dough
- If making the dulce de leche, place unopened can of condensed milk on its side in a large pot; pour in room-temperature water to cover by at least 2". Bring to a simmer over medium-high heat. Reduce heat to low, partially cover, and simmer, adding water as needed to maintain water level, 3 hours. Let cool in pot in water, 40-60 minutes. Remove can from pot and chill 12 hours before opening.
- Combine granulated sugar, salt, and 3 cups (375 g) all-purpose flour in a large wide bowl. Add butter and toss until generously coated. Using your fingers smash butter into thin disks, tossing with flour as you go. Work until all the butter has been smashed and coated (irregular pieces of butter produce a flakier crust). Sprinkle vinegar and 1 Tbsp. ice water over and toss with a wooden spoon until just combined (the spoon prevents the butter from warming too quickly). Add another 3 Tbsp. ice water a tablespoonful at a time, stirring after each addition until water is absorbed. Using your hands , continue to work in water by the tablespoonful just until mixture holds together when squeezed in your hand, 2-4 Tbsp. more.
- Turn mixture out onto a lightly floured work surface and gently knead until a dough forms (be careful not to overwork). If dough is too dry, sprinkle with a few drops of water; if too sticky, work in a little more flour. Roll dough to about an 8x5" rectangle, then fold in half crosswise. Roll back out to an 8x5" rectangle, dusting surface as needed, and fold again. Repeat rolling out and folding 2 more times. Divide dough in half. Tightly wrap each half in plastic or parchment paper and gently form into 1"-thick disks (you'll only need 1 for the tart). Chill at least 1 hour.
- Do ahead: Unopened dulce de leche can be made 3 months ahead; keep chilled. Opened dulce de leche can be made 3 weeks ahead; transfer to an airtight container and chill. Dough can be made 3 days ahead; keep chilled, or freeze up to 3 months. Thaw at room temperature 1-2 hours or in the fridge overnight before using.
- Filling and assembly
- Place a rack in bottom third of oven; preheat to 375°. Let a disk of dough sit 5 minutes at room temperature. Line a 9" or 10"-diameter tart pan with parchment paper, leaving some overhang. Roll out dough on a lightly floured surface, rotating often and dusting as needed to prevent sticking, to ¼" thick. Fold dough in half and transfer to prepared pan . Unfold and lift edges so dough slumps down into corners. Gently press dough into pan with the back of your index finger. Trim pastry with kitchen shears or a paring knife to a 1" border. Fold excess over into pan and press double layer into sides of pan. Prick bottom of tart a few times with a fork. Chill while you prepare the filling. For a decorative crust like in the photo, see chef's note at the end of the recipe.
- Pour lemon juice onto a large rimmed plate or into a shallow bowl. Working one at a time, hold stem of each pear and cut vertically into 4 pieces, working your way around the core; discard core. Set pieces cut side down and slice lengthwise ¼" thick, keeping slices in groups. Place in lemon juice to prevent cuts sides from browning.
- Combine granulated sugar, flour, lemon zest, cinnamon, and ½ tsp. salt in a small bowl. Sprinkle mixture evenly over dough and dot all over with frozen butter. Fan each group of pears in crust in alternating directions.
- Whisk egg, a pinch of salt, and 1 Tbsp. water in a small bowl to combine. Brush edges of pastry with egg wash and sprinkle 2-3 Tbsp. raw sugar in an even layer over pears and crust. Place tart on a rimmed baking sheet and bake until crust is golden brown and filling is bubbling slightly, about 1 hour. Transfer to a wire rack and let cool. Remove tart from pan by lifting parchment and transfer to a cutting board or large plate.
- To serve, cut tart into slices and transfer to plates. Open dulce de leche and drizzle some over each slice if desired.
- Do ahead: Tart can be made 2 days ahead. Store airtight at room temperature, or cover and chill up to 4 days.
- Chef's note: For a decorative crust, roll out dough scraps to ⅛"-¼" thick on a lightly floured surface and chill 5 minutes. Generously flour surface and pastry and cut into decorative shapes with pie cutters or small cookie cutters. Gently press around edges of tart as desired. Brush tops of cutouts with egg wash to help them stick and freeze tart 1 hour (cutouts will keep their shape best during baking if they are frozen solid) then continue to fill and bake as instructed. If cutouts brown too much before tart is done, cover individually with small pieces of foil.

- Place the currants in a small saucepan. Cover with water and bring to a boil. Allow them to boil for a minute and turn off the heat. Let them soak for about 5 minutes. Drain thoroughly and set aside. Preheat the oven to 375 degrees F. Combine flour, salt, and sugar, and cut in butter with a dough blender or 2 knives until it resembles a coarse meal. You can also use a food processor. Stir in egg yolks. Knead this mixture until smooth. This takes quite a bit of kneading (you might want to use 2 hands). - In a medium bowl, whisk the egg yolks and sugar until pale and thick. Whisk in the flour, salt and 1 tablespoon of the milk. In a medium saucepan, bring the remaining milk just to a simmer. Gradually whisk the hot milk into the egg mixture.
- Scrape the mixture into the saucepan and bring to a boil, whisking constantly. Cook for 2 minutes. Scrape the pastry cream into a small bowl and stir in the vanilla. Press a piece of plastic wrap directly onto the surface of the pastry cream and let cool completely.
