2 cups self-rising flour
1/2 teaspoon baking soda
1 cup 2% milk
1/2 cup mayonnaise
1/2 cup finely chopped fully cooked ham
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine flour and baking soda. Combine remaining ingredients; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. , Bake at 425° until toothpick inserted in center comes out clean, 16-18 minutes.

These keto-friendly and low-carb ham and cheese muffins from our friend Kellie from The Kellie Kitchen are sure to make the entire family happy.

1/2 cup ham (thin sliced and diced)
2 cups almond flour
1/4 cup coconut flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp garlic powder
1 1/2 cup shredded cheddar cheese (divided)
4 eggs
6 tbsp butter (melted)
3/4 cup heavy cream
1/4 - 1/2 cup water

Steps:

  • Preheat the oven to 350* and line 12 muffin cups with parchment paper liners.
  • In a large glass bowl sift together the almond flour, coconut flour, baking powder, salt and garlic powder. Toss in one cup cheddar cheese and the chopped ham. Stir the flour mixture to combine with the ham and the cheddar cheese.
  • To the flour mixture you will now add in the melted butter, cream, eggs and water. Thoroughly mix all the ingredients together to form a batter. The batter will be slightly thick as these are dense muffins.
  • Divide batter evenly into the muffin tin. Sprinkle each muffin top with the remaining 1/2 cup shredded cheddar.
  • Bake for 30 minutes in 350* oven. Test with a toothpick to check for doneness as these muffins are quite dense and oven temperatures can vary slightly. If they need more time keep them in the oven for a few minutes longer.
  • Remove and enjoy. These muffins are great hot out of the oven, but also keep well in an airtight bag or container in the fridge for a few days.

1 tablespoon butter
2 cups shredded reduced-fat cheddar cheese
1-1/2 cups reduced-fat biscuit/baking mix

1 doz. eggs
1/4 small apple, finely chopped
3 Tbsp. OSCAR MAYER Smoked Ham
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
2 Tbsp. finely chopped pecans

Steps:

  • Heat oven to 400ºF.
  • Prepare stuffing as directed on package, omitting the stand time. Press 1/4 cup stuffing onto bottom and up side of each of 12 muffin cups sprayed with cooking spray, forming 1/4-inch rim around top of cup. Place muffin pan on baking sheet.
  • Add 1 egg to each cup; top with apples, ham and cheese. Sprinkle with nuts.

½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt

1 ½ cups shredded Cheddar cheese
1 cup plain yogurt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.

1 ¾ cups all-purpose flour
2 ½ teaspoons baking powder
1 teaspoon ground mustard
½ teaspoon ground cumin
2 large eggs eggs
1 cup buttermilk
2 cups diced fully cooked ham
2 cups shredded Cheddar cheese, divided

Steps:

  • In a large bowl, combine the flour, baking powder, mustard and cumin. In another bowl, beat eggs and buttermilk. Stir into dry ingredients just until moistened. Fold in ham and 1-1/4 cups cheese. Fill greased muffin cups two-thirds full. Sprinkle with remaining cheese. Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.

1 cup milk
3 tablespoons vegetable oil
1 package (4 ounces) shredded Cheddar cheese (1 cup)
3/4 cup chopped fully cooked ham (1/4 pound)

Steps:

  • Heat oven to 400°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. (Spray will work better than greasing or using paper muffin liners.)
  • Beat eggs slightly in medium bowl with fork. Stir in Bisquick mix, milk and oil just until moistened. Stir in 3/4 cup of the cheese and the ham. Divide batter evenly among muffin cups. Sprinkle remaining 1/4 cup cheese evenly over tops of muffins.
  • Bake 18 to 20 minutes or until light golden brown. Immediately remove from pan. Serve warm. Wrap and refrigerate any remaining muffins.
