4 salmon fillets (, skin on best (150-180g/5-6oz each, Note 1))
Olive oil (, for cooking)
1/3 cup (85 ml) soy sauce (, low sodium)
2 tbsp lemon juice
3 tbsp honey
2 tbsp olive oil
2 garlic cloves (, minced)
Parsley, chives or green onion (, finely chopped)
Lemon slices

Steps:

  • Place marinade in a ziplock bag and mix to combine.
  • Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
  • Take out of fridge 30 minutes prior to cooking.
  • Remove salmon onto plate, allowing excess marinade to drain off.
  • Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
  • Pour into bowl/jug (some used for basting, some for serving).
  • Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
  • Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
  • Cook for 3 minutes or until golden, then use tongs to carefully turn.
  • Brush the flesh with Sauce, then close BBQ lid.
  • Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
  • Transfer salmon to plate and serve with remaining Sauce.

1 tsp paprika powder
1 tsp onion powder
1/2 teaspoon garlic powder
1 tsp black pepper
1 avocado (chopped)
1 roma tomato (chopped)
½ small red onion (chopped)
1/2 cup corn
Juice from 2 limes
2 tbs finely chopped cilantro
dash of salt

Steps:

  • In a small mixing bowl combine salt, chili powder, paprika, onion powder, garlic powder and black pepper.
  • Rub the salmon fillets with the olive oil and rub with the spice mix.
  • Grill the salmon on medium heat for about 3-5 minutes or until desired doneness.
  • Mix the avocado, Roma tomato, red onion, chopped cilantro, salt and juice from the limes in a small mixing bowl. Top the salmon with the avocado salsa.

4 salmon fillets (4-6 ounces each)
4 tablespoons olive oil
1 1/2 tablespoons honey
1 1/2 tablespoons soy sauce
1 teaspoon lemon zest
2 teaspoons chopped fresh parsley
2 teaspoons fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon minced garlic
lemon wedges for serving

Steps:

  • Place the olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt and pepper in a bowl. Whisk to combine.
  • Reserve 1 tablespoon of the marinade for later use. Add the garlic to the bowl.
  • Add the salmon and marinade to a resealable freezer bag and seal. Shake to coat the salmon with the marinade.
  • Marinate in the refrigerator for at least 30 minutes, or up to 6 hours.
  • Remove the salmon from the marinade and scrape off any excess bits of herbs or garlic (otherwise they could burn on the grill!).
  • Grilling instructions: Preheat an outdoor grill or indoor grill pan over medium high heat. Add the salmon fillets and cook for 5-6 minutes on each side or until salmon is opaque throughout.

1 teaspoon salt
½ teaspoon pepper
2 teaspoons cumin
2 teaspoons chili powder
Lime for garnish
1 avocado (ripe, but slightly firm) diced
1 cup diced cucumber
½ jalapeno, finely chopped
¼ cup chopped cilantro
1 lime- juice and zest
2-3 teaspoons Olive oil
½ teaspoon salt
½ C plain Greek yogurt
lime juice from one small lime
1 garlic clove minced
1 tablespoon olive oil
⅛ cup chopped cilantro
½ tsp salt
½ tsp pepper

Steps:

  • Preheat the grill to medium.
  • In a small bowl, make the spice rub -mix salt, pepper, chili powder and cumin. Rub all sides of salmon with the spice rub.
  • Mix all ingredients except avocado in a medium bowl. Gently fold in avocado last so it stays in tact, and don't over mix, you don't want it mushy.
  • Whisk all ingredients in a small bowl.
  • Quarter lettuce vertically. Set aside.
  • Grill salmon over medium heat on a well-greased grill, a few minutes on each side until desired doneness....preferable medium or medium rare. A thin metal spatula is best here to turn. Squeeze with a little lime juice.
  • Toss lettuce gently with a little dressing, just enough to coat. Lay on a plate, creating a bed for the salmon. Place salmon over top, then spoon the avacado salsa over top. Serve with lime wedges and cilantro sprigs.

1 1/2 pounds fresh salmon fillets (about 4 fillets)
1 Tbsp. brown sugar
1/2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/4 tsp. cayenne (more or less depending on spice preference)
1/4 tsp. garlic powder
olive oil (as needed)
2 California Avocados (diced)
2 roma tomatoes (diced)
1/4 cup shallot (finely diced)
1/4 cup cilantro (finely chopped)
Juice from 1/2 lime
1/4 tsp. garlic powder
fresh cracked pepper & salt to taste

Steps:

  • Preheat grill to medium-high heat.
  • Place salmon fillets on a plate. In a small bowl, mix together all of the rub ingredients, except the olive oil. Pat rub onto the fillets, coating each side as much as possible. Drizzle salmon with olive oil.
  • Take a paper towel and pour some olive oil on it. Using tongs, rub the oil covered paper towel onto the grill where the salmon will go.
  • Place salmon skin side UP on the grill. Close lid to the grill. Let cook for about 5 minutes and then flip over. Salmon is ready to be flipped when it easily comes off the grill. Close lid and let cook for another couple minutes until cooked through and easily flakes with a fork. Take off grill and let rest for a few minutes.
  • Combine all the ingredients for the avocado salsa in a medium sized bowl. When salmon is ready, top with avocado salsa, serve and enjoy!

3 Tbsp olive oil, (plus more for grill)
2 tsp lime zest
3 Tbsp fresh lime juice
3 cloves garlic, (crushed)
Salt and freshly ground black pepper, (to taste)
1 1/2 cups Zico Coconut Water
1 1/4 cups canned coconut milk
1 1/2 cups jasmine rice, (rinsed well and drained well)
1/2 tsp salt
1 large mango, (peeled and diced)
3/4 cup chopped red bell pepper ((1/2 large))
1/4 cup chopped fresh cilantro
1/3 cup chopped red onion, (rinsed under water and drained)
1 large avocado, (peeled and diced)
1 Tbsp fresh lime juice
1 Tbsp olive oil

Steps:

  • In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each).
  • Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
  • Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).
  • While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil.
  • Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.
  • While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
  • Serve salmon warm with coconut rice top with avocado mango salsa.

I use the marinade all day & then reserve it to use for a sauce I make while my DH grills the salmon. We love this & the combination of the salmon & the marinade sauce has been a big hit with our friends.

1/4 cup soy sauce

  • Combine all marinade ingredients in large plastic bag, add salmon fillets & marinate for 6-8 hrs before grilling.
