1 (16 ounce) package uncooked farfalle pasta
¼ cup olive oil
3 cloves chopped garlic
1 teaspoon crushed red pepper flakes
2 tablespoons lemon juice
½ cup pine nuts
1 (2.25 ounce) can sliced black olives
½ cup chopped sun-dried tomatoes
1 cup crumbled feta cheese
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Place farfalle pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the oil in a large skillet over medium heat, and cook the garlic until lightly browned. Mix in red pepper and lemon juice. Stir in the pine nuts, olives, and sun-dried tomatoes. Toss in the cooked pasta and feta cheese. Season with salt and pepper.

1 tbsp rapeseed oil
1 red pepper , deseeded and diced
150g wholemeal spaghetti
2 courgettes (250g), grated
2 garlic cloves , finely grated
1 lemon , zested and juiced
15g basil , finely chopped
25g pine nuts , toasted
2 tbsp finely grated parmesan or vegetarian alternative (optional)

Steps:

  • Heat the oil in a large non-stick frying pan. Add the pepper and cook for 5 mins. Meanwhile, cook the pasta for 10-12 mins until tender.
  • Add the courgette and garlic to the pepper and cook, stirring very frequently, for 10-15 mins until the courgette is really soft.
  • Stir in the lemon zest and juice, basil and spaghetti (reserve some pasta water) and toss together, adding a little of the pasta water until nicely coated. Add the pine nuts, then spoon into bowls and serve topped with the parmesan, if using.

2 red bell peppers
2 yellow bell peppers
2 ounces pine nuts
⅓ cup golden raisins
1 clove garlic, minced
½ cup chopped fresh parsley
½ cup olive oil
salt and ground black pepper to taste

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the peppers in half from top to bottom; remove the stem, seeds, and ribs, then place the peppers cut sides down onto the prepared baking sheet. Cook under the preheated broiler until the skin of the peppers has blackened and blistered, about 10 minutes. Place the blackened peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove the skins and discard.
  • Toast the pine nuts in a small dry skillet over medium-low heat, swirling the pine nuts in the skillet until they turn a light tan color and have a nutty fragrance, 1 to 2 minutes. Remove from heat and pour into a small bowl to prevent them from overcooking.
  • Slice the roasted peppers into strips, and arrange decoratively onto a serving platter, alternating red and yellow strips. Sprinkle the peppers with toasted pine nuts, raisins, garlic, and parsley, drizzle with olive oil, and season to taste with salt and black pepper.

Homemade Herbed Pasta with Feta, Lemon and Pine Nuts image

2 cups all-purpose flour
2 cups semolina flour, plus more for dusting
1 cup loosely packed fresh parsley, finely chopped
1/4 cup olive oil
4 large eggs plus 2 yolks
Kosher salt and freshly ground black pepper
1/3 cup olive oil
1/2 cup raw pine nuts
4 cloves garlic, minced
8 slices preserved lemon, rinsed and finely chopped
2 cups lightly packed fresh mint, chopped
Freshly ground black pepper
2 cups crumbled feta cheese
Crushed red pepper

Steps:

  • For the pasta: Sift the flours into a pile on a clean work surface. Create a 6-inch well in the middle. Add the parsley, olive oil, eggs and yolks, 1 teaspoon salt and 2 teaspoons pepper to the well. Whisk gently with a fork. When the center is combined, begin to incorporate the flours into the eggs a little at a time. Once you can no longer use your fork, use your hands to knead the dough. When the dough is shaggy, knead the dough until smooth and elastic, about 10 minutes. Divide the dough into 2. Cover with plastic wrap and let sit for 30 minutes.
  • Roll out the dough, using semolina flour as needed. The pasta should be about 2 centimeters thick. Fold the pasta in half lengthwise, then in half again. Slice into 3/4-inch wide ribbons, or desired width. Shake out the noodles and hold in nests.
  • Bring a large pot of water to a boil and salt it ferociously. Cook the pasta to al dente, about 3 minutes. Drain the pasta, reserving 2 cups pasta water.
  • For the feta, lemon and pine nut sauce: Heat the olive oil in a large skillet over medium heat until a drop of water sizzles when flicked across the surface. Add the pine nuts and garlic and cook, stirring, until lightly browned, about 2 minutes. Add the preserved lemon and 1 cup mint and cook, stirring, for another 1 to 2 minutes. Add 1 cup of the reserved pasta water. Allow it to cook down and reduce for another minute. Add the cooked pasta to the skillet, reduce the heat to low and toss the pasta to coat it evenly in the mixture. Add more pasta water if it needs a bit more sauce. Add about 20 turns of black pepper and top with the feta, a few pinches of crushed red pepper and the remaining 1 cup mint. Serve immediately and enjoy.

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add peppers; sauté until crisp-tender, about 4 minutes. Add green onions and sauté 2 minutes. Transfer vegetable mixture to bowl. Add cream and wine to same skillet and simmer until mixture thickens, about 3 minutes. Mix in cheese and all but 1 cup vegetable mixture. Simmer sauce 2 minutes to blend flavors; season with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1/2 cup cooking liquid.
  • Return pasta to pot. Add sauce and toss to coat over medium heat, adding reserved cooking liquid by tablespoonfuls to moisten, if desired. Mound pasta on plates. Garnish with reserved 1 cup vegetables. Sprinkle with pine nuts.

1/2 cup pitted black olives, coarsely chopped
2 tablespoons red wine vinegar

1 lb spinach fettuccine or 1 lb linguine
2 tablespoons minced parsley

Steps:

  • Heat the oil in a heavy 6-inch skillet over moderate heat for 1 minute.
  • Add the pine nuts and cook until lightly browned-about 2 minutes.
  • Stir in the tomato.
  • Transfer the mixture to a large bowl.
  • Stir in the tuna, red peppers, olives, vinegar, salt, and pepper.
  • (At this point, the sauce can be covered and allowed to stand at room temperature for up to 2 hours).
  • Cook the pasta according to package directions until al dente.
  • Drain in a colander, then add the pasta to the tuna sauce and mix well.
  • Sprinkle with the parsley.

Chances are you have all of the ingredients for this pasta dish on hand, in your refrigerator and cupboard. That's how it came together in my kitchen, and what a felicitous combination of flavors it turned out to be. Plus it goes together in a half hour or less. Be sure to use a milder blue cheese so it doesn't end up overwhelming the other flavors. You could substitute broccoli for the spinach, and you could leave out the chicken for a vegetarian dish (use vegetable broth instead of chicken). This goes well with a dry white or medium-bodied red wine.

1 large whole boneless skinless chicken breast
2 tablespoons olive oil, divided
3 large garlic cloves, peeled and thinly sliced

1 large red bell pepper, roasted, skinned, seeded and cut into thin strips (can substitute bottled just as good)
1 1/2 cups chicken broth (preferably low-sodium)
1 bunch fresh basil, sliced into ribbons
8 ounces gorgonzola, cut into 1 cubes (or other mild, creamy blue cheese)
salt and pepper
1/3 cup pine nuts, toasted
freshly grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta 10 minutes or until al dente; drain.
  • Cut chicken into ½--inch pieces and sprinkle with salt and pepper. Heat 1 tablespoons olive oil in a large sauté pan and sauté chicken pieces until just cooked through, around 5 minutes. Remove chicken and pan juices to a bowl and set aside.
  • Heat remaining 1 tablespoons olive oil in same pan and sauté garlic until translucent. Do not allow it to brown.
  • Add the washed spinach and sauté until wilted. Add chicken broth and red peppers and bring to a boil. Add basil and gorgonzola and stir over medium-high heat until cheese melts completely.
  • Add drained pasta, chicken and juices to sauté pan and heat for 1 minute, mixing thoroughly with vegetable-cheese mixture. Season to taste with salt and pepper.

250g pack fresh stuffed vegetarian pasta (we used Mozzarella, tomato & basil large tortelloni from Waitrose)
200g pack mixed grilled or roasted peppers in oil
25g pine nuts
Fresh basil leaves, to serve

Steps:

  • Cook the pasta in boiling salted water for 3-4 minutes, until al dente. Drain well and return to the pan.
  • Meanwhile, drain the mixed grilled or roasted peppers in oil (reserve 1 tablespoon of the oil if your pasta doesn't come with any), and chop. Toast the pine nuts in a dry, non-stick frying pan. Add to the pasta with the peppers, season, and gently toss together.

2 cups fresh baby spinach

1 tbsp toasted pine nuts
Parmesan (freshly grated)
Sea salt and freshly cracked pepper (to taste)

Steps:

  • Cook the pasta per instructions in well-salted boiling water.
  • Drain, making sure to reserve 1/2 cup of the cooking water.
  • Just before the spaghetti is finished cooking, heat the olive oil in a large skillet over medium heat.
  • Add the spinach and crushed red pepper flakes, stirring constantly, for 30 seconds.
  • Add the minced garlic and butter, cook stirring constantly for another 30-45 seconds, or until the spinach is just wilted.
  • Add the drained spaghetti along with ¼ cup reserved cooking water, tossing to coat the pasta.
  • Add the toasted pine nuts, some freshly grated Parmesan, and season with sea salt and freshly cracked pepper, to taste.
  • Pour the pasta into a serving bowl and top with more grated Parmesan and black pepper, if desired. Enjoy.

Cooking pasta in this way is someone elses idea and I can't remember who's...Please tell me...someone! :( Test the pasta occasionally and drain it when it's at your preferd "hardness" or "softness", I refuse to eat anything that is not al-dente, but in spain they serve it all mushy (ick!).

1 large onion, chopped thinly
2 green peppers, chopped thinly
1 small red pepper, chopped thinly
2 tablespoons olive oil (Not virgin!)
20 g butter
fresh basil, chopped (just a bit)
grated parmesan cheese (, to serve)
1 tablespoon pine nuts

  • Boil water in a large pan, add pasta, return to boil and turn off the heat, leave for 15 minutes (it really does work!).
  • While you are awaiting for the pasta heat a wok or a frying pan and add the oil and.
  • Fry onions'till the're"limp", add the butter.
  • Stir-fry until the onions have gone golden.
  • Add green peppers and stir-fry for 2 minutes.
  • Add red peppers and fry for another 2 minutes (I like crispy peppers, if you like yours limp the use more time and add the peppers earlier in the cooking).
  • Add basil and pine nuts.
  • Remove from heat.
  • Test the pasta to see if its done, if its not then boil the water up again and it will be.
  • Strain pasta and add to the vegetables, mix and serve.
  • Sprinkle with parmesan cheese.
  • Use parmesano Reggiano for top quality taste.

4 red or yellow peppers
3 tablespoons extra-virgin olive oil
4 garlic cloves, peeled
1 pound ziti, penne or fusilli
2 tablespoons unsalted butter
1 cup fresh basil leaves, snipped with scissors
1/2 cup toasted pine nuts
Freshly grated Parmesan cheese
Coarse salt and freshly ground pepper to taste

Steps:

  • Cut the peppers into quarters and place them face down on a broiling pan lined with aluminum foil. Broil until the skins are charred and puffy. Place the peppers in a brown paper bag, seal and cool. Skin the peppers and slice them in thin strips.
  • Heat the olive oil in a skillet and add the garlic cloves and the peppers. Cook for 15 minutes, stirring frequently.
  • Meanwhile, bring six quarts salted water to a boil and cook the pasta until al dente. Drain and place in a heated bowl.
  • Add the butter to the peppers and stir until melted. Add to the pasta and toss. Add the basil leaves, pine nuts and two tablespoons cheese. Season with salt and pepper to taste and serve. Pass the rest of the cheese separately.

1 lb raw large shrimp, tails
2 cups dry white wine
1/2 cup finely chopped shallot
2 tablespoons chilled butter
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
12 ounces linguine
1 tablespoon salt
5 tablespoons extra virgin olive oil, divided
1/2 cup pine nuts, lightly toasted
2 cloves garlic, finely chopped
2 large sweet red peppers, seeded and juliened
2 tablespoons finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1/2 cup freshly grated padano cheese (optional)

Steps:

  • Shell, devein and butterfly shrimp; set aside.
  • In a saucepan, combine wine and shallots and bring to boil over high heat.
  • Boil until reduced to 2/3 cup, stirring occasionally.
  • Reduce heat to low and whisk in butter.
  • Remove pan from heat when bubbles appear on surface.
  • Season with salt and pepper.
  • Keep sauce warm over very low heat until ready to serve.
  • In a large cooking pot or pasta pot, fill 3/4 full with water and bring to a rolling boil.
  • Add 1 tablespoon of salt and 2 tablespoons of extra virgin olive oil.
  • Add linguini and cook as instructed on package; about 12 to 15 minutes or until el dente'.
  • While pasta is cooking, heat remaining 3 tablespoons of olive oil in a large frying pan over medium heat.
  • Add prepared shrimp, nuts and garlic; saute' for 2 minutes.
  • Add red peppers and saute' until peppers are tender and shrimp are opaque, about 2 minutes.
  • Drain pasta well and transfer to a large platter or a bowl.
  • Spoon sauce and prawn mixture over pasta and gently toss to coat well.
  • Sprinkle with basil and oregano, toss lightly.
  • Sprinkle grated Padano cheese on each serving.
  • Spinach fettucine is another pasta that is great in this recipe.

3 sweet red peppers
¼ cup olive oil
4 anchovy fillets in oil, minced
3 cloves garlic, chopped
½ cup dry white wine
4 leaves kale, stemmed and coarsely chopped
1 teaspoon red chili flakes
1 pound garganelli
Kosher salt and freshly ground pepper
2 tablespoons pine nuts
1 tablespoon minced fresh flat-leaf parsley
3 ounces Parmigiano-Reggiano cheese

Steps:

  • Preheat a grill or broiler to high. Grill the red peppers, turning often with tongs, until blistered and blackened on all sides, about 15 minutes. Alternatively, roast the peppers directly over the stovetop flame of a gas oven. Transfer to a large bowl, cover with plastic wrap, and let steam for 20 minutes. Peel the peppers and chop them into ½-inch pieces.
  • Heat the olive oil in a large skillet over medium-high heat. Add the anchovies and garlic and cook for 1 minute. Stir in the chopped red peppers, then add the white wine. Boil until the pan is nearly dry. Stir in the kale and chili flakes. Remove from the heat.
  • Bring a large pot of water to a boil, add salt, and drop in the pasta. Cook for about 9 minutes or until the pasta is tender. You will be cooking it further in the sauce. Drain, reserving some of the pasta water. Return the sauce to medium-high heat and stir in the pasta. Cook for 5 minutes, to allow the flavours to mingle. Add a spoonful of pasta water if the sauce looks too dry. Remove from the heat.
  • Season with salt and pepper. Add the pine nuts and parsley and toss well. Tip into a large serving bowl, garnish with an over-generous grating of Parmigiano-Reggiano, and serve immediately.

Steps:

  • Blanch broccoli florets in large pot of boiling salted water until just crisp-tender, about 3 minutes. Drain broccoli florets and refresh under cold water. Drain again.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain well.
  • Meanwhile, heat olive oil in heavy large skillet over medium-low heat. Add minced garlic; stir 1 minute. Add red pepper flakes to skillet; stir 30 seconds. Add blanched broccoli florets; stir until heated through, about 2 minutes.
  • Add pasta to skillet and turn to coat with olive oil. Add fresh lemon juice and toss to coat. Mix in 1/3 cup Parmesan cheese. Season pasta generously with salt and pepper. Transfer to heated platter. Sprinkle with toasted pine nuts. Serve, passing additional Parmesan cheese separately.

Steps:

  • Char bell peppers over gas flame or in broiler until blackened on all sides. Wrap in paper bag; let stand 10 minutes. Peel and seed peppers; cut into 1/2-inch strips.

This simple recipe is a weeknight staple in our house. I vary the basic recipe by using escarole, Savoy cabbage, radicchio, or endive in place of the chard, and pancetta or smoked bacon in place of the sausage.

1 Tbs. olive oil; more as needed
5 oz. sweet Italian sausage (about 2 sausage links), casings removed, meat crumbled
1 small red onion, chopped
1 small bunch red, green, or yellow Swiss chard, tougher stems removed, leaves roughly chopped
2 small cloves garlic, minced
Pinch dried red pepper flakes
Kosher salt and freshly ground black pepper
1/2 cup homemade or low-salt chicken or vegetable broth, or dry white wine
8 oz. dried penne or fusilli
1 Tbs. balsamic vinegar; more to taste
1/4 cup pine nuts, lightly toasted
1/4 cup grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil for cooking the pasta. Meanwhile, heat the oil in a large skillet over medium heat. Add the sausage; cook, breaking it up and stirring with a wooden spoon, until browned and cooked through, 7 to 10 minutes. With a slotted spoon, remove the sausage and set aside. If the pan seems a bit dry, add enough oil so there's about 3 Tbs. fat in the pan. Return the pan to medium heat, add the onion, and cook until just tender, 3 to 5 minutes, stirring and scraping up any browned bits with a wooden spoon. Add the chard, garlic, and pepper flakes, season with salt and pepper, and toss until the chard begins to sizzle, about 1 minute. Add the broth, cover, and simmer, stirring occasionally, until the chard is tender, 6 to 8 minutes. Meanwhile, cook the pasta until just tender. Reserve 1 cup of the pasta water and then drain the pasta, leaving drops of water clinging to it. Add the pasta and 1/4 cup of the cooking water to the skillet, using more of the water if needed. Return the sausage to the pan and add the balsamic vinegar. Heat gently for a few minutes to let the flavors meld. Add the pine nuts and half of the Parmigiano, and taste for salt and pepper. Add a bit more of the cooking water if the pan seems dry. Serve warm, passing the remaining Parmigiano at the table.

Saturday is "Pantry Pasta" day... the day I use up odds and ends from the pantry in preparation for the new week. Here's the combo I made tonight... the whole family loved it!

3 tablespoons olive oil
6 garlic cloves, sliced
1/4 teaspoon red pepper flakes
1/2 cup pine nuts
1 cup roasted red pepper, diced
1/2 onion, chopped
1/2 cup dry white wine
1 1/2 cups chicken stock
3/4 teaspoon salt
1/4 teaspoon black pepper
1 lb pasta (I used bow ties)
1/2 cup parmesan cheese, freshly grated

Steps:

  • Bring the water to a boil in a large pot.
  • Add the olive oil, garlic, red pepper flakes, pine nuts, sun-dried tomatoes and onion to a large saute pan set on high heat. Cook until the onion is soft and the garlic is beginning to brown, about 3 minutes.
  • Stir in the wine and boil until the wine is reduced by half, about 1-2 minutes.
  • Pour in the chicken stock, salt and pepper and bring to a boil. Reduce the heat to medium and simmer for 7 minutes, until the sauce is slightly thickened.
  • While the sauce is simmering, cook the pasta in the boiling water until just tender. Drain the pasta well and return it to the pot.
  • Pour the sauce over the pasta and cook over medium heat for 3 minutes, stirring constantly. Remove from the heat, stir in the cheese and serve.
