HOMEMADE HAMBURGER "HELPER"
My kids LOVE hamburger helpers, but being that they are often FULL of sodium etc. I went to work in the kitchen. This recipe is easily adapted by changing a few ingredients. Ground beef -chicken or turkey Cream of mushroom soup to cream of chicken or nacho cheese soup and different pasta change this dish into many alternatives. ex: I replace the ground beef, noodles and cream of mushroom for chicken breast cubed, nacho cheese soup and use cut up tortillas for a Mexican version.

- Heat a Dutch oven or a large, deep 12-inch skillet with a sturdy bottom over medium-low heat. Add the oil onion, carrot, salt, and pepper. Let cook until the onion turns brown and soft, about 10 minutes (don't shortcut this step; it builds a lot of flavor).
- Increase heat to medium-high and add the ground beef. With the back of a large spoon or a sturdy spatula, break the meat into small pieces. Continue to brown, stirring periodically, until the meat is browned and cooked through, about 6 minutes.
- Remove pan from the heat and carefully drain off any excess fat, leaving just a little bit in the pan to keep the meat moist (if you are using meat that is 93% lean, you likely will not need to drain it).

Once the meat is browned, drain off any fat and return the pan to heat. Note: If not using a nonstick pan, you will want to add in 1-2 teaspoons of oil before browning the meat to prevent the meat from sticking to the pan.
- Add tomato paste and seasonings. Cook for 2 minutes to develop flavor. Add in tomato sauce and beef broth and bring to a boil.
- Once the mixture is boiling, add in the noodles and turn the heat down to medium. Simmer, uncovered, for 10-12 minutes, stirring occasionally, or until noodles cooked through and sauce is absorbed.

- Place ground beef in large, 5-6 quart pot. Turn the heat on medium and break it up into smaller chunks using a wooden spoon. You don’t have to actually brown the beef; it’s just easier to break it up into smaller pieces at this point.
- Add the tomato sauce, spices and pasta and bring the mixture to a medium simmer. The sauce should be making bubbles, but it shouldn’t be splattering everywhere.
- Let the mixture cook for about 10-15 minutes, stirring every 5 minutes or so, breaking up the meat and making sure the noodles are submerged in the sauce as much as possible.
- Check the pasta for doneness at the 10-minute mark and continue to cook until the noodles are al dente. Add additional chicken stock, ½ cup at a time, if the sauce becomes too thick before the noodles have had a chance to cook. The sauce will thicken and evaporate as it cooks.

- Heat a large Dutch oven over medium heat. Add beef, onions, carrot, red pepper flakes, salt, and pepper and cook, while crumbling the beef, until the beef is browned. Add garlic and cook 30 seconds. Drain excess grease if needed.
- Add beef broth and half of the evaporated milk. Whisk the cornstarch with remaining evaporated milk and add to the pot. Increase heat to high to bring to a boil while you stir in all of the remaining ingredients except the pasta and cheeses.
- Once boiling, add the pasta and reduce to a simmer over medium-high heat for 10-12 minutes (uncovered) OR until al dente, stirring often so the bottom doesn’t stick and burn then pushing the pasta into an even layer so it’s covered in liquid. The pasta should still have some excess liquid (that will become the sauce) once the pasta is done cooking.
- Remove the pan from the heat and stir in the ½ cup cheddar cheese and 1 ½ cups gouda until melted. Taste and season with salt, pepper and/or red pepper flakes to taste. If you would like a saucier pasta, stir in additional beef broth.
