Pasta tossed with chicken sausage, kale and tomatoes for a healthy and hearty pasta dish.

2 tbsp olive oil plus oil spray to coat pan
3 small Andouille chicken sausage
1 onion, chopped
4 cloves garlic, minced
1 bunch kale, stems removed, leaves chopped
1/3 cup dry red wine
2 cups diced tomatoes
1 tsp dried basil
1 tsp dried oregano
1 lb ziti or other short pasta shape
salt and pepper to taste
Parmigiano cheese to pass at table

Steps:

  • Spray a skillet with oil, and heat on medium high. Add the chicken sausage. Cook for 5 minutes, turning occasional to brown the sausage all over. Remove from heat, and set aside to cool. Slice the sausage when it has cooled.
  • Add a tablespoon of the olive oil to the skillet, heat on medium. Add the onions, cook for about 5 minutes until they begin to soften. Add the garlic, cook for another minutes.
  • Add the kale to the skillet in batches, stirring it to combine with the onions. The gradual addition of the kale gives it time to cook down a bit and make room for more.
  • After the kale has been added, stir in the tomatoes, cooking wine, basil and oregano. Salt and pepper to taste. Bring to a simmer, and cover.
  • Begin cooking pasta according to package instructions after adding the kale and tomatoes to the skillet.
  • After the kale has cooked covered for about 10 minutes, stir in the reserved sausage. Simmer uncovered for another 10 minutes or so, until the kale is tender and the pasta has finished cooking.
  • When the pasta is cooked, drain and toss with the kale and sausage mixture. Plate the pasta, and pass cheese for topping at the table. Enjoy with an Italian red wine-perhaps from Puglia!

1/2 lb. pasta (penne, rotini, or farfalle all work well)
2 1/2 cups fresh chopped kale
2 tbs. extra virgin olive oil
1 lb. spicy (or regular) chicken sausage, casings removed (can also use pork or turkey)
3 garlic cloves, minced
1/4 tsp. red pepper flakes
1/4 cup Parmesan cheese, grated
salt and pepper to taste

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain the pasta, but reserve 1 cup of the liquid.
  • While the pasta cooks, place kale in a skillet with about 1 tablespoon of water. Cook over medium heat until wilted. Remove from the heat and set aside.
  • In a large skillet, heat the oil over medium heat. Add the chicken sausage and cook, breaking up into small pieces until the sausage is browned, about 8 minutes.
  • Add the garlic and red pepper flakes and saute for about 30 seconds. Add the kale and toss to coat.
  • Add the pasta and reserved cooking liquid 1/4 cup at a time. Stir in the Parmesan cheese and salt and pepper to taste. Drizzle fresh lemon juice on top if desired. Serve.

1 pound orecchiette
2 tablespoons olive oil
1 pound bulk Italian sausage
1/2 red onion, diced
2 garlic cloves, minced
1 teaspoon crushed red pepper
Kosher salt and freshly ground black pepper
3 cups torn kale, stems removed
6 tablespoons jarred pesto
1 cup cherry tomatoes, halved
4 tablespoons salted butter
2 lemons, zested and juiced
1/2 cup shaved Parmesan
Fresh basil, for garnish

Steps:

  • Cook the pasta according to the package instructions. Drain and set aside, reserving the water.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat until hot, then pinch off 1- to 2-inch pieces of the sausage, adding it to the pan as you go. Cook for a couple minutes, flipping and stirring the sausage to brown both sides. Add the onion and garlic and cook until the onion has softened a little, a couple of minutes. Add the red pepper flakes, salt and pepper. Stir and cook until the sausage is cooked through, another 1 to 2 minutes.
  • Use a ladle to remove 2/3 cup pasta water from the pasta pot and add it to the skillet. Add the kale and cook until it has started to wilt, about 30 seconds, then add the pesto and cherry tomatoes and cook, stirring gently, until the sauce has thickened and the kale has wilted, about 3 minutes. If the skillet starts to look too dry at any stage, add a little more pasta water.
  • Remove the skillet from the heat and add the butter, lemon zest, pasta and Parmesan. Toss to combine. Taste and adjust the seasoning, then serve in bowls garnished with the fresh basil.

1 pound radiatore pasta
1 bunch chopped kale
1 (10 ounce) package Smoked Gouda Chicken Sausage (such as Gilbert's®)
2 tablespoons olive oil
1 ½ cups portobello mushrooms, quartered
1 medium yellow onion, diced
2 cloves garlic, minced
1 pinch salt
1 pinch ground black pepper
¼ teaspoon red pepper flakes
1 (20 ounce) jar marinara sauce
¼ cup low-sodium chicken broth
½ cup heavy cream
¼ cup freshly grated Parmesan cheese, plus more for garnish.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook radiatori in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 to 12 minutes. Strain pasta from water (do NOT drain water). Place kale in the boiling water. Blanch for about 1 minute. Drain off water.
  • Immediately drop kale in a bowl with ice water to stop the cooking. Drain off water, squeeze out excess liquid, and roughly chop. Set aside.
  • Cut sausage into thin discs and sear in a pan over medium-high heat. Remove sausage discs and set aside.
  • Pour olive oil into the same pan and add mushrooms, diced onion, minced garlic, salt, pepper, and red pepper flakes. Cook over medium heat until mushrooms have softened and onions are slightly browned, 5 to 8 minutes. Add chopped kale, sausage, marinara sauce, and chicken broth to the pan. Mix in heavy cream and Parmesan cheese and stir to combine. Simmer sauce down to your desired thickness if you like.
  • Divide radiatori amongst serving bowls, and top with tomato sauce.

1 11-ounce package fully cooked Italian-flavored chicken sausages, sliced on an angle about 1/2 inch thick
1 small onion, chopped
Freshly ground pepper
1 cup cherry tomatoes
3 cloves garlic, chopped
4 cups refrigerated mozzarella ravioli (from a 20-ounce package)
1 tablespoon unsalted butter
3 cups baby kale
2 tablespoons Parmesan cheese, plus more for serving
1/2 cup torn fresh basil
2 tablespoons roughly chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning once, until browned, 4 to 6 minutes. Move to one side of the skillet and add the onion to the other side; season with salt and pepper. Stir together with the sausages and cook until the onion is softened, 3 to 4 more minutes. Stir in the tomatoes and garlic; cook until the tomatoes brown and soften, 2 to 3 minutes.
  • Add the ravioli to the boiling water and cook as the label directs. Transfer to the skillet with the sausage mixture using a slotted spoon; reserve the cooking water. Add a pinch of salt and pepper to the ravioli and stir well, then add 1/2 cup cooking water and the butter. Cook, tossing, until the ravioli are well coated and saucy, adding up to 1/2 cup more pasta water as needed. Stir in the kale to wilt, then remove from the heat. Add the Parmesan, basil and parsley; toss to combine.
  • Divide the ravioli among bowls; top with more Parmesan and season with pepper.

1/2 lb hot Italian turkey sausage, casings discarded and sausage crumbled
1 garlic clove, minced
1 small onion, diced
1 lb kale, tough stems and center ribs discarded and leaves coarsely chopped
1/2 lb penne
2/3 cup reduced-sodium chicken broth
1/2 cup parmesan cheese, grated

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Add garlic, onion and sausage, breaking up any lumps with a spoon, until browned, 5 to 7 minutes.
  • Meanwhile, blanch kale in a 6-quart pot of boiling salted water, uncovered, 5 minutes. Remove kale with a large sieve and drain. Return cooking water in pot to a boil, then cook pasta in boiling water, uncovered, until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • While pasta cooks, add kale to sausage in skillet and sauté, stirring frequently, until just tender, about 5 minutes. Add broth, stirring and scraping up any brown bits from bottom of skillet, then add pasta and 1/2 cup reserved cooking water to skillet, tossing until combined. Stir in cheese and thin with additional cooking water if desired.
  • Serve immediately, with additional cheese on the side.

2 tablespoons olive oil
2 chicken breasts or 2 cups left over chicken meat
4 cups fresh kale or 4 cups mustard greens, roughly chopped with stems removed

1/2 cup chicken broth or 1/2 cup pasta water

  • cook penne.

1 pound bulk Italian sausage
1 medium onion, diced
6 large cloves garlic, minced
1 bunch kale, stems removed and leaves coarsely chopped
¼ teaspoon freshly grated nutmeg
¼ teaspoon red pepper flakes, or more to taste
salt and ground black pepper to taste
½ cup dry white wine
1 (16 ounce) container ricotta cheese
1 (6 ounce) jar pesto, or more to taste
1 (8 ounce) package shredded mozzarella, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally, for about 9 minutes (pasta will not be fully cooked.) Drain, reserving 1/2 cup cooking water. Set aside.
  • While pasta is cooking, place sausage in a large skillet over medium-high heat; cook and stir until browned and crumbly, 5 to 7 minutes. Remove sausage to a paper towel-lined plate and leave grease in the pan.
  • Add oil to the skillet and saute for 5 minutes. Add garlic and cook for 1 minutes. Add kale, nutmeg, pepper flakes, salt, and pepper. Deglaze the pan with white wine and cook until kale is soft, 5 to 10 more minutes.
  • Return sausage back to the pan. Add ricotta, pesto, and 6 ounces mozzarella cheese. Add reserved pasta and cooking water. Taste and season with salt and pepper if needed. Pour into the prepared casserole dish and sprinkle remaining mozzarella over top. Cover with foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes. Let cool 10 minutes before serving.

I turned a kale side dish into a main dish. You may get your family to eat kale after all. It looks pretty, too. You can add vegetables you have on hand, or what your family likes, and add as much heat as you like, too. I splashed it several times with a red wine, which made a fabulous aroma.

3 -4 boneless chicken breasts, cut into large cubes
2 tablespoons chicken rub mixed spice (I used McCormick, but you can experiment)
2 tablespoons vegetable oil
splash red wine, if preferred
12 ounces kale leaves, coarsely chopped, stems removed (a large bag, like a gallon-size, I also added some chard from my garden)
2 tablespoons vegetable oil
2 -4 garlic cloves, peeled and chopped
4 carrots, sliced or julienned
1 stalk celery, sliced
1/4 cup green onion, green pepper, onion, jalapeno (depending on family preference, diced)
1 (15 ounce) can diced tomatoes
2 teaspoons italian seasoning mix
2 tablespoons red wine, if desired
10 ounces whole wheat pasta shells (about 1/2 box) or 10 ounces rotini pasta (about 1/2 box)
1/2 cup parmesan cheese, grated

Steps:

  • Place chicken cubes in a bowl or a plastic bag. Add chicken rub seasoning mix and shake or stir so that seasoning lightly coats pieces of chicken. (I cut the chicken while still pretty frozen, and the large cubes stayed nice and square for this step.)
  • Heat oil in large skillet, then brown ckicken cubes, turning occasionally until lightly browned on the outside and the pink is gone on the inside. Splash cubes with a bit of wine.
  • Remove chicken pieces to a plate or serving dish.
  • Boil water in large saucepan and cook pasta according to directions, Whole wheat pasta usually take 14-20 mins, so start this before you cook the vegetables.
  • Heat next 2 Tbsp of oil in skillet at medium-high setting.
  • Add garlic, kale, carrots and celery. Stir often, cooking for about 5-6 minutes. Check the carrots and the kale to make sure they are tender.
  • Add whatever peppers and onions you desire.
  • Add entire can of tomatoes and juice from the can, and another splash of red wine to the vegetables. Season to taste.
  • Add cooked chicken to the skillet.
  • Turn down heat to low, and put on the skillet lid and let vegetables continue to cook and flavors blend while pasta is finishing .
  • After 10 minutes, all the vegetables should be tender. Check seasoning. If the mixture is too "wet", take the lid off and heat on medium for a minute or two to reduce the liquid.
  • You can serve the chicken mixture on top of the pasta with the parmesan cheese, or you can drain the pasta, stir it into the chicken mixture, add the parmesan cheese and serve it in one platter.
  • Add a warm loaf of crusty bread, and the rest of the red wine, and you have yourself a real heart-healthy supper! Mangi bene!

  • Cook pasta according to package directions using the 1/8 teaspoon salt in the water.
  • While pasta is cooking remove sausge from casings (or even easier -- use the packaged Italan sausage already removed from casings) and cook in skillet over medium high heat (3-5 minutes). Stir in the kale and cook for another 3-5 minutes.
  • Stir in broth and season with salt and pepper. Cover skillet and reduce heat to low, cook or another 5-10 minutes or until cooker through.
  • Stir in pasta and heat through.
  • Sprinkle each portion with 2 T cheese OR add grated cheese to mixture and serve family style.
