1 cup butter, softened
2 cups packed brown sugar
3 large eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
FILLING:
2-1/2 cups chopped dates
1 cup sugar
1 cup water
1 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. Divide into four portions. Refrigerate until chilled., In a large saucepan, bring the dates, sugar and water to a boil. Reduce heat to medium; cook until mixture is thickened, about 15 minutes. Cool completely. Stir in pecans., On a baking sheet, roll out each portion of dough between two sheets of waxed paper into a 12x9-in. rectangle. Refrigerate for 30 minutes. , Remove waxed paper; spread with date mixture. Tightly roll up each portion jelly-roll style, starting with a long side; wrap in plastic. Refrigerate for 2 hours or until firm., Unwrap and cut into 1/4-in. slices. Place 1 in. apart on greased baking sheets. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool. Store in an airtight container at room temperature, or freeze for up to 3 months.

1 cup butter (at room temperature)
2 cups packed brown sugar
3 eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
½ teaspoon baking soda
4 ½ cups all-purpose flour
8 ounces dates, pitted and chopped
1 cup finely chopped pecans
½ cup water
½ cup white sugar

Steps:

  • Cream the butter and brown sugar together in a mixing bowl until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Sift the cinnamon, salt, baking soda, and flour together in a second mixing bowl. Slowly stir the flour mixture into the egg mixture until evenly blended.
  • Divide the dough evenly into three portions and place each on a square of waxed paper. Wrap and refrigerate until firm, about 1 hour.
  • Meanwhile, make the filling by combine the dates, pecans, water and white sugar in a saucepan set over low heat. Cook and stir until the filling has a paste-like consistency. Cool slightly.
  • Working with one portion at a time, roll out the dough on a lightly floured surface to make a rectangle about 1/4 inch thick. Spread 1/3 of the filling evenly over the dough; roll up to make a log. Repeat the process with the remaining dough. Refrigerate until firm, about 1 hour.
  • Preheat oven to 350 degrees F (180 degrees C). Lightly grease two baking sheets.
  • Using a sharp, serrated knife, cut the rolls into 1/4 inch slices. Place the slices on prepared baking sheets.
  • Bake in preheated oven until set and lightly browned, about 15 minutes. Cool on racks.

1 ½ cups pitted dates
¼ cup white sugar
1 pinch salt
1 ¼ cups water
1 teaspoon lemon zest
4 teaspoons lemon juice
⅔ cup finely chopped walnuts
3 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
¾ cup butter
½ cup white sugar
1 cup packed brown sugar
2 eggs
1 ½ teaspoons vanilla extract

Steps:

  • Chop pitted dates in food chopper. Place dates into small saucepan and add 1/4 cup sugar, dash of salt, and 1 1/4 cups of water. Cook, stirring constantly until mixture is of a soft consistency. Remove from heat.
  • Add grated lemon rind, lemon juice, and chopped nuts. Mix well and chill.
  • Cream together 3/4 cup butter and gradually add 1/2 cup white sugar and 1cup lightly packed brown sugar. Beat well. Beat 2 eggs until thick and add to creamed mixture part at a time, beating well after each addition. Stir in 1 1/2 teaspoons vanilla.
  • Measure into a sifter 3 1/2 cups flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, and 3/4 teaspoon of salt. Sift together twice. Sift dry ingredients into creamed mixture about 1/4 at a time. Combine thoroughly after each addition. Chill until firm.
  • Divide dough into 3 parts. Roll out 1 part at a time into a rectangle. Spread with date filling. Roll up jelly roll fashion in waxed paper. Chill several hours.
  • Preheat oven to 350 degrees F (180 degrees C).
  • With sharp knife, slice 1/4 inch thick slices off of rolls and place on greased cookie sheets. Bake 10 - 13 minutes. Let cool.

They freeze well and actually keep quite a long time in an airtight container at room temp - if they don't all disappear first. ;o) A bit of work, but differently delicious and makes a LOT! Prep time does not include chilling dough.

1 cup shortening
2 cups brown sugar

These vintage Date Pinwheel Cookies are a nostalgic choice for your holiday cookie trays.

2 cups all-purpose flour
¼ teaspoon salt
¼ teaspoon baking soda
½ cup butter (softened)
½ cup light brown sugar
1 teaspoon pure vanilla extract
1 egg
8 ounces fresh dates, chopped ((approximately 1 cup))
¾ cup granulated sugar (divided)
½ cup water
1 cup chopped pecans or walnuts

Steps:

  • Combine the flour, baking soda, and salt in a small mixing bowl and set aside.
  • In a large mixing bowl, using a hand mixer, cream the butter with remaining 1/2 cup granulated sugar and 1/2 cup brown sugar. Mix on medium speed for a minute or two. Add the egg and vanilla and continue mixing until well incorporated.
  • Add the dry ingredients to the butter mixture and stir with a spoon until combined. Using clean hands, work the dough until it holds together in a ball. Wrap the ball of dough in plastic wrap and refrigerate for an hour.
  • Meanwhile, place the chopped dates, 1/4 cup granulated sugar and 1/2 cup water in a small saucepan over medium heat. Bring mixture to a boil then reduce heat to low and simmer for about 5 minutes, stirring occasionally. When the dates have cooked down and the mixture is paste like, mix in the chopped nuts and remove the pan from the heat. Set aside to cool.
  • Roll chilled dough out on a lightly floured piece of wax paper to a 12- x 8-inch rectangle. Spread the cooled date mixture on the dough to within about 1/2-inch of the edges. Starting at one of the long ends, begin to carefully roll the dough into a log. Wrap the rolled dough in the wax paper and refrigerate for at least an hour or overnight.
  • When ready to bake, preheat oven to 375 degrees F. Slice roll into 1/4-inch slices. Place on lightly greased or parchment paper lined baking sheets and bake for 10 to 12 minutes. Remove from oven and allow to cool on baking sheets for a minute or two before transferring to a wire rack to cool completely.
  • Store in an airtight container.

1/3 cup sugar
1/3 cup water
1/2 cup finely chopped nuts

My mom used to make these every Christmas for us when I was growing up, and they bring back special memories for me, especially around the holidays. We have been eating these for 50 years! These are my all time FAVORITE cookies :) They make a lot of cookies, and the amount really depends on how thick you actually roll the dough, and how thin or thick you cut the cookies. The cooking time is for EACH batch of cookies, and the prep time does not include time to chill dough.

2 1/4 cups dates
1 cup sugar
1 cup water
1 cup nuts
1 cup shortening
2 cups brown sugar

  • Date Filling:.
  • Combine dates, sugar and water in a pan and cook until thick (about 10 mins.).

It's the only one my (now grown) kids ask for each year in their Christmas package. They went to Iraq one year. They keep well, travel well but that's not the very best thing about these cookies. You can have them ready to go and served warm for party occasions, in no time at all. Wow your friends. Most of the work takes place ahead of time.

2 1/4 cups dried dates, chopped and pitted
1 cup sugar
1 cup water
1 cup nuts, finely chopped
1 cup shortening

Steps:

  • Filling: Mix dates water and sugar in saucepan bring to a boil. Lower heat and simmer until thickened and soft. Mix in 1 cup chopped nuts. (optional) Cool.
  • Dough: In a food proscessor; Cream together shortening and sugar. Add eggs, process untill smooth and creamy.
  • Sift flour, soda and salt. Add to sugar mixture in 3 batches, beat well between. Mix well, this dough will seem dry at first, knead it and it will soften.
  • Divide into 3 equal parts. Cover to keep from drying out. Roll dough out on a lightly floured piece of parchment paper. Try to make a neat rectangle. 8"X10" about ¼ " thick. Spread 1/3 of the filling onto the dough, edge to edge. Grab one side of the long end of the paper and lift to start the roll. Roll up the dough and wrap the roll in the paper you just used. Place on a cookie sheet to hold flat. Repeat with the rest of the dough/filling. Freeze. (Once they are frozen you can reclaim your cookie sheet)
  • When you are ready to bake the cookies, remove 1 roll from the freezer at a time. This is a very soft cookie. You'll want to work fast. Slice frozen cookies 1/4 inch thick (they may or may not be round). Place on parchment covered cookie sheet about 1 1/2 inches apart.
  • Bake at 400* for 12 minutes. Watch closely, do not over bake. They should be light golden brown. Allow to cool before removing from paper and storing. Store in a tightly closed container in layers divided with waxed paper.

1 tsp baking soda
1 tsp baking powder

DATE WALNUT FILLING
1 pkg 10 ounce pitted dates, finely chopped
1/2 c sugar
1/2 c orange juice
1 tsp orange peel
1/2 c walnuts, finely chopped

Steps:

  • 1. In large bowl, mix at low speed, the brown sugar, butter and eggs. Gradually add the flour, milk, baking soda, baking power, and vanilla. Mix on medium speed about 3 minutes.
  • 2. Wrap dough in waxed paper. Refrigerate 1 to 2 hours until firm.
  • 3. Meanwhile make the Date - Walnut filling. In medium saucepan over medium heat, heat to boiling the package of finely chopped dates, sugar, orange juice and orange peel. Stir occasionally. Reduce heat to low and simmer 5 minutes or until mixture is thick and liquid is absorbed.
  • 4. Stir in 1/2 cup finely chopped walnuts. Let filling cool.
  • 5. On a work surface slightly moistened, place a sheet of wax paper. Lightly flour wax paper. Place 1/4 of dough on wax paper, keeping rest refrigerated. With lightly floured rolling pin, roll dough into a rectangle.
  • 6. Evenly spread on a scant 1/2 cup filling. and roll lengthwise, jelly roll fashion.
  • 7. Wrap each log in waxed paper. Refrigerate several hours until firm.
  • 8. Preheat oven to 350º. Cut rolled dough into 1/4 inch slices. Cuts easiest with a piece of clean fishing line. Bake 10 minutes or until golden brown. on well greased cookie sheet
  • 9. Makes many cookies for a big crowd to enjoy!

  • When the dough and filling have cooled, divide the dough in half. Roll each half into an 8" x 10" rectangle. Spread each rectangle with half of the date nut mixture. Roll each rectangle jelly roll fashion and gently press the end edge to seal. Wrap in foil or waxed paper and refrigerate until firm, preferably overnight, before baking.

  • In a separate bowl, sift the flour, salt, and baking soda together. Add the dry ingredients to the butter mixture, a little at a time until the mixture is creamy.
  • On a lightly floured surface and using a lightly-floured rolling pin, roll the dough into an oblong shape approximately 9x13-inches or larger (dough should be about 1/8-inch thick).
  • When ready to bake, remove chilled dough from the refrigerator and, using a sharp knife (I found that my serrated bread knife works the best), cut into 1/4-inch cookie slices.
  • Place cookie slices on prepared cookie sheets about 1-inch apart and bake approximately 7 to 10 minutes, until light golden brown.
  • Remove from oven and remove from cookie sheet onto wire cooling racks. Note: In between baking, extra dough should be returned to the refrigerator to stay firm.

  • To shape the cookies: Divide the dough in half. Working with one half at a time, roll the dough into a 9" x 12", 1/4"-thick rectangle on a lightly floured piece of parchment or waxed paper.
  • Using the paper to help you, roll the dough from the long edge into a log. Wrap the dough and chill for several hours, or overnight. (To keep the soft log of dough in shape as it chills, use the cardboard core from a roll of paper towels or wrapping paper, slit lengthwise.
  • When you're ready to bake, preheat the oven to 400°F. Lightly grease (or line with parchment) two baking sheets. Remove the dough from the refrigerator and let it rest for 10 minutes, so it won't crack when you cut it.
  • Slice each log into 1/3" slices, and place the slices 2" apart on the prepared baking sheets. When slicing the rolled cookies, give the dough a quarter turn after each cut; this will keep a flat spot from developing on the roll as you cut.
  • Bake for 8 to 10 minutes, or until the cookies are light brown. Remove from the oven, let them rest on the baking sheet for 3 minutes, then transfer them to a rack to cool.
