Quick and Easy Panang Curry made with chicken and sautéed vegetables in a bold and creamy coconut sauce, served over rice.

1 tablespoon oil
2 tablespoons Panang curry paste (*)
1 tablespoon peanut butter
2 pounds chicken breasts (, cut into pieces against the grain)
1 small onion (, sliced)
1 green bell pepper (, thinly sliced)
1 red bell pepper (, thinly sliced)
2 teaspoons freshly grated ginger
4 garlic cloves (, minced)
2 14 oz cans coconut milk ((Chaokoh brand is my favorite))
2 teaspoons cornstarch
1/4 cup light brown sugar (, packed)
1 tablespoons fish sauce
1 tablespoon lime juice
1 cup loosely packed basil leaves (, roughly chopped)
Hot cooked rice (white, brown or jasmine)

Steps:

  • Heat oil over medium-high heat in large non-stick skillet. Saute onions for 2 minutes, then add bell peppers, garlic and ginger and saute for 2 minutes more.
  • Add curry paste and peanut butter and saute for 1 minute. Add 1 ½ cans of coconut milk. Whisk cornstarch into remaining 1/2 can coconut milk then add to the pan. Stir well.
  • Add chicken, stirring to coat. Simmer for 10-15 minutes or just until chicken is no longer pink and sauce begins to thicken.
  • Stir in sugar, fish sauce, lime juice, and basil. Simmer for 5 minutes. Season with salt and pepper, to taste.
  • Serve over hot cooked rice.

2 lbs boneless skinless chicken thighs. (1½ in. chunks)
2 tbsp peanut oil
1 tbsp ginger (minced)
3 thai red chilis (chopped)
1 shallot (chopped)
4 cloves garlic (minced)
1 white onion (sliced thin)
1 red pepper (sliced thin)
1 yellow pepper (sliced thin)
1 stalk lemongrass (bruised, sliced thin, whitepart only)
4 oz panang curry paste
2 tbsp peanut butter
2 tbsp palm sugar ((or brown sugar))
2 tbsp fish sauce
1 can coconut milk (14 oz)
1 can coconut cream (unsweetened) (14 oz)
1 tbsp lime zest (zest of 1 lime)
1 lime (juiced)
½ cup basil (chopped fine)
½ cup cilantro (chopped fine (optional) garnish)

Steps:

  • In a wok over medium high, heat oil and brown the chicken in batches. (As not to overcrowd the pan). Reserve browned chicken on a plate.
  • Add more oil to the wok, and sauté shallots, garlic, red chilis and ginger for one minute until fragrant. Add the peppers, onion, and lemongrass constantly stirring until vegetables are soft.
  • Return chicken and its juices to the wok and add the curry paste, peanut butter, fish sauce, and sugar, cook for 1 more minute. Add the coconut milk, coconut cream, lime juices, zest, and basil. Stir well, and allow to simmer (do not boil) until sauce is slightly reduced (10 minutes).
  • Taste for seasoning and adjust (salt & pepper) as required. Serve hot with a side of jasmine rice.

6 cups (1440 ml) full-fat coconut milk, with 3 tablespoons of the cream separated out
4 tablespoons (60 g) panang curry paste
1/2 cup (95 g) brown onion, sliced thin
4 makrut lime leaves, fine chiffonade
1 1/2 to 2 pounds (680 to 910 g) chicken breast, sliced thin
1/2 tablespoon (10 g) tamarind paste
2 teaspoons (10 ml) fish sauce
1 teaspoon sugar
1 red bell pepper, sliced
1 zucchini, sliced into 1/4-inch rounds
1 cup (240 g) canned bamboo shoots, sliced
1/2 cup (95 g) Thai sweet basil leaves, roughly chopped

Steps:

  • In a heavy bottomed pot, heat the 3 tablespoons of the thick coconut cream to high for about 1 minute. When the cream starts to sizzle, stir in the curry paste into the cream like building a roux. Add the onion and half of the makrut lime leaf chiffonade. Stir-fry the paste until the paste starts to thicken, dry out, and become fragrant, about 1 minute. If the curry starts to sputter, add a small amount of coconut milk to keep the paste moving. Cook the paste until it has the consistency of peanut butter.
  • Stir in the remaining coconut milk into the curry paste. Increase the heat to high until you reach a full rolling boil. Allow the curry to boil until it reduces by about 25% or coats the back of a wooden spoon, 10 to 15 minutes.
  • Reduce the heat to a simmer. Add the chicken, tamarind paste, fish sauce and sugar. When the chicken is about halfway cooked, about 5 minutes, add the bell pepper and zucchini. Let simmer until the chicken is cooked through, about 5 minutes. Add the bamboo shoots and Thai basil leaves. Taste and adjust seasoning. Serve immediately over jasmine rice and garnish with a few ribbons of the remaining makrut lime leaf.

3/4 cup sliced lemongrass (white part only)
12 garlic cloves
1 -3 tablespoon red curry paste
1/2 cup olive oil
1/2 cup fresh lime juice
5 tablespoons Splenda granular
1 tablespoon kosher salt
1 cup low-fat unsweetened coconut milk

Steps:

  • Place chicken quarters in a large zip-top freezer bag.
  • Process lemon grass, garlic, red curry paste, olive oil, lime juice, Splenda granular and salt in a food processor until smooth, stopping to scrape down sides.
  • Add coconut milk and pulse until blended.
  • Pour over chicken. Seal bag and chill 4 to 6 hours, turning occasionally.
  • Remove chicken from marinade, discarding marinade.
  • Grill over indirect heat for 40-60 minutes or until done.

1/3 cup lemongrass (sliced )
4 garlic cloves
1 teaspoon galangal (dried )
1 teaspoon ground turmeric
1 jalapeno chile (stemmed & seeded )
3 shallots
3 1/2 cups coconut milk
3 kaffir lime leaves
1 pinch salt or 1 pinch shrimp paste

Steps:

  • Puree together the lemon grass, garlic, galangal, turmeric, Jalape and shallots.
  • Bring the coconut milk to a boil and add the pureed ingredients, lime leaves, and salt and boil gently, stirring constantly, for about 5 minutes. Reduce the heat to low and simmer, stirring often, for about 30 minutes, or until lime leaves are tender and the sauce is creamy. Remove the leaves before serving.
  • To prepare one portion, pour 1/2 cup of this curry sauce into a shallow vessel or a wok. Add 1/2 cup of meat or vegetables, bring to a medium boil and cook to desired degree.

1/4 cup mayonnaise
2 tablespoons lemon juice
2 teaspoons curry powder
1/2 teaspoon sugar

4 boneless skinless chicken breasts, rinsed, and patted dry (about 4 oz. each)
1 cup soft whole wheat breadcrumbs (about 2 slices)

Steps:

  • Preheat oven to 400.

  • Coat a 9" pie pan with cooking spray.

2 teaspoons curry powder
1 tablespoon oil
1 lb cooked chicken, cut into bite size pieces
1/4 cup coconut milk
4 kaffir lime leaves
1/4 cup coconut cream

Steps:

  • Mix the peanut sauce and the curry powder.
  • Heat the oil in a wok or large frying pan; add the onion and the peanut/curry mixture.

2 red chilies
16 ounces coconut milk (thick)
1 tablespoon fresh garlic

Steps:

  • Brown beef, remove from heat as soon as it's no longer pink outside.

1 (13 1/2 ounce) can coconut milk
2 1/2 tablespoons red curry paste
2 tablespoons brown sugar
2 tablespoons crunchy peanut butter (Peanut Sauce 2Tb and add peanuts)
1 pinch red pepper flakes (fresh red chili peppers 2 for more kick)

1 lb rump steak, sliced 1/4 in. to 1/8 in
1/2 tablespoon sesame oil
1/2 tablespoon canola oil
1 tablespoon Chinese five spice powder
4 quarts water
2 pinches sea salt
2 1/2 ounces water chestnuts (sliced)
2 1/2 ounces bamboo shoots (sliced)
1/2 red bell pepper (cut into two 1 in. rings then cut into 6 pieces each)
1/2 green bell pepper (do same as above)
3 -4 ounces broccoli, crown (slice each flower once down middle)
3 -4 ounces sugar snap peas (in pod)
1/2-3/4 large carrot (sliced at diaganol about 1/4 in. each)
1/2 white onion, cut into wedges and seperated
3 1/2 ounces baby corn, cut into twos
4 ounces of your favorite oriental mushrooms (I like Oyster,sliced, or Button,whole)
1 -2 fresh jalapeno, your authentic thai heat (sliced)
1 ounce of fresh mint, finely chopped
1 -2 ounce fresh Thai basil, if normal (finely chop 1 oz Basil with 1 oz Parsley)
1 garlic clove (minced)
1/2 tablespoon canola oil
1/2 tablespoon peanut oil
1 -2 lime wedge (served on the side)

Steps:

  • In 350 degree oven roast green and red peppers for 8-10 minute Set aside.
  • Blanch in boiling water and salt first broccoli and carrot, then after a few minutes snap peas. Strain in cool water or ice water. Set aside.
  • Mix oils and saute onion and jalapenos Until tan. Add garlic and mushrooms until onions brown. Set aside.
  • Prepare sauce by adding all ingredients over medium heat and whisk together. After boil let simmer and stir occassionally.
  • Saute all your meat ingredients and set aside.
  • Mix all your preps into sauce, as well as shoots, chestnuts, and baby corn.
  • When ready to serve, mix in Basil and Mint.
  • Serve over Rice or I prefer Rice Noodle. You can also add a duck egg or a couple quail eggs (scrambled and dropped in boiling water for rice) and for noodle just scramble with noodles in pan or wok with a little oil. Serve with lime wedges and enjoy!
  • (if you prefer more heat add more red chili I like mine to burn).

  • PASTE: Without shaking the can, skim off two tablespoons of the coconut cream and add it to a sauté pan set over medium-high heat. Add the Panang curry paste along with the peanut butter and cook for 1 minute. Add the chicken and stir to coat, cook for 1-2 minutes. If at any point the sauce begins to stick to the pan, add a couple tablespoons of water to deglaze. Stir in the remaining coconut milk, starting with 1 1/2 cans (adjust with more later if desired.) Add the kefir lime leaves, fish sauce, brown sugar, sliced onion, and red bell pepper.
  • SIMMER: Allow the curry to come to a simmer, lower the heat and let simmer for 2-3 minutes or until the chicken cooks through. Taste and adjust with additional coconut milk, sugar, tamarind, or fish sauce as desired. Turn off the heat and stir in the basil. Serve warm with rice or cooked rice noodles.
