Provided by Kyle Boyce from London Grind

Categories     Dinner, Lunch

Time 30m

200g Greek yogurt
handful micro herbs
500g sweet potato, peeled and grated
200g gluten-free flour
1 small pack parsley, chopped

SWEET POTATO LAYER CAKE

Sweet Potato Layer Cake image

Originally from VegNews magazine, this is a delicious cake for fall. The sweet potato taste isn't very strong, but gives the cake a subtle flavor and a beautiful color as well as adding a great texture without having to use a ton of oil.

Time 1h

Yield 1 2-layer cake, 8 serving(s)

Number Of Ingredients 18

3 cups whole wheat pastry flour

1 tablespoon baking soda
2 teaspoons cinnamon

1/2 teaspoon salt

1 cup water
1/4 cup canola oil
2 tablespoons apple cider vinegar
2 teaspoons vanilla
2/3 cup Earth Balance margarine
4 cups powdered sugar
1/4 cup soymilk
2 teaspoons vanilla
1/2 cup unsweetened coconut, shredded, toasted and divided
1/2 cup chopped pecans, toasted and divided

  • For the frosting, beat margarine with an electric mixer for 30 seconds in a large bowl. With the beaters going, slowly add powdered sugar, milk, and vanilla and beat for 2 to 3 minutes until light and fluffy. Scrape down teh sides of the bowl and beat an additional 30 seconds. For the filling, transfer one-third of the frosting to a small bowl, add 1/4 cup each of the coconut and pecans and stir well to combine.
  • To assemble the cake, place one layer on a serving platter. Spread the filling evenly on top of the first layer. Place the remaining layer on the first. Frost the sides and top of the cake with frosting and then sprinkle the remaining coconut and pecans over the top.

SWEET POTATO ROLL CAKE

Sweet Potato Roll Cake image

Pumpkin isn't the only orange vegetable to make a lot of appearances during the fall season. Sweet potato is just as vibrant and flavorful and can be used in many similar ways -- like in this sponge cake that has a bit of bourbon in the batter and cream cheese frosting. A true sponge cake is one with no added fat and gets its volume from whipping eggs until very thick. The sponginess of the cake allows for it to be rolled up while still warm to create a dessert that looks a little different from all the rest of them. In this recipe, some of the cake batter is thickened with flour to pipe the words "Grateful" on the outside, however, any design of choice can be made.

Provided by Lasheeda Perry

Categories     dessert

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 22

Nonstick cooking spray
1 large sweet potato (about 10 ounces), roasted and peeled (about 3/4 cup; see Cook's Note)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch ground cloves
Pinch ground nutmeg
1 cup plus 3 tablespoons all-purpose flour
Kosher salt
1 1/4 cups granulated sugar
4 large eggs
2 tablespoons bourbon
1/2 teaspoon lemon extract
2 tablespoons molasses
1 to 2 drops black gel food coloring
Confectioners' sugar, for dusting
4 ounces cream cheese, at room temperature
4 ounces (1 stick) unsalted butter, at room temperature
Zest of 1 orange (about 1 teaspoon)
1 cup confectioners' sugar
1 tablespoon bourbon
1/2 cup heavy cream
Autumn sprinkles, for decorating (optional)

Steps:

  • Preheat the oven to 375 degrees F. Spray a 10-by-15-inch jelly roll pan with cooking spray then line with parchment paper. Using a food safe marker, write the word "Grateful" directly in the center, widthwise, of the parchment. Flip the parchment over so that you can see the word, but it will be backwards.
  • Make the cake: Process the sweet potato in a food processor until very smooth. Transfer to a small bowl and set aside.
  • Whisk together the baking powder, cinnamon, cloves, nutmeg, 1 cup flour and 1/2 teaspoon salt in a medium bowl.
  • Add the granulated sugar and eggs to a large bowl and beat with an electric mixer on medium-high until the eggs are very light and fluffy, about 5 minutes. Add the sweet potato, bourbon and lemon extract and mix to combine. Fold in the flour mixture with a rubber spatula until just combined.
  • Remove 1/4 cup of the batter to a medium bowl and stir in the molasses, gel food coloring and the remaining 3 tablespoons flour until smooth. Transfer to a pastry bag fitted with a small round tip and trace "Grateful" on the parchment with the batter. Freeze the pan until the batter is hardened, about 10 minutes (alternatively, refrigerate for 20 minutes).
  • Quickly spread the batter in the bowl over the traced word and bake until the cake springs back when touched and a toothpick inserted into the center comes out clean, 14 to 16 minutes.
  • Lay a clean tea towel on a flat work surface and lightly dust with confectioners' sugar. Carefully flip the cake out onto a wire rack and remove the parchment. Flip the cake back over onto the towel so that the word is facing down. Starting at the short end, roll the cake up with the towel and let cool completely on a wire rack (still wrapped in the towel), about 1 hour.
  • Meanwhile, make the frosting: Beat the cream cheese, butter and orange zest in a medium bowl with an electric mixer on medium-high speed until smooth and fluffy, about 2 minutes. Reduce the speed to low, then slowly mix in the confectioners' sugar until smooth and combined. Add the bourbon just to combine.
  • Whip the heavy cream in a separate medium bowl with an electric mixer on medium-high speed until stiff peaks form, 2 to 3 minutes. Gently fold into the cream cheese mixture until just combined.
  • Unroll the cake from the towel and, with the word-side down, spread the frosting over the top of the cake. Roll the cake back up, without the towel, and trim the ends so they are clean. Transfer the cake to a serving platter with the seam-side down. Decorate the platter with autumn sprinkles, if desired.

THE BEST SWEET POTATO POUND CAKE

The Best Sweet Potato Pound Cake image

This sweet potato pound cake is a force to be reckoned with, y'all. A cake that's so tender, warmly spiced, and loaded with flavor. Every single bite is beaming with buttery richness + sweet potato taste. Topped with an insane brown butter glaze!

Provided by Quin Liburd

Categories     Dessert & Sweets

Number Of Ingredients 18

3 cups all purpose flour, sifted if lumpy
1/2 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups packed light brown sugar
1 cup mashed sweet potato
6 large eggs, room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup whole buttermilk
chopped pecans, for garnish- optional
vanilla ice cream, for serving- optional
1 1/2 cups powdered sugar
1/2 cup (1 stick) salted butter
3 tablespoons whole milk (or milk of choice)
1/2 teaspoon vanilla bean paste or 1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325°F and generously spray a 10-cup bundt pan with baking spray or grease with butter and then set aside.
  • In a large bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg together. Whisk the dry ingredients super well to combine and then set the bowl aside.
  • Using a stand mixer fitted with the paddle attachment or using a handheld electric mixer, beat the butter and sugar together until light and fluffy, about 3-4 minutes. Add in the mashed sweet potato and continue beating to fully combine. Add in the eggs, one by one, beating until just combined after each addition. Then add in the vanilla and almond extract.
  • Next, add in the flour mixture a little at a time in stages alternating with the buttermilk (ex: a little flour mixture, then a little buttermilk). Begin and end with the flour until all of the flour/buttermilk is combined within the cake batter until just combined- careful not to over mix.
  • Empty the cake batter into the prepared bundt pan and use a spoon to evenly smooth the top of the cake batter nicely.
  • Bake the cake for 1 hour and 10 minutes or until a toothpick inserted into the cake comes out clean. Allow the cake to cool in the pan for 10 minutes. Then carefully invert the cake onto a wire rack to continue cooling. While the cake cools, prepare the glaze.
  • In a small saucepan over medium heat, melt the butter. Allow the butter to melt, undisturbed, to brown- the entire process takes about 5-6 minutes. You should hear the butter bubbling as it cooks. Then the butter will turn golden brown and have a nutty aroma with brown bits on the bottom- careful not to walk away as it can go from perfectly browned to burned in seconds! Once achieved, remove the saucepan from heat and set aside to cool down.
  • In a large bowl, combine the powdered sugar and lightly cooled brown butter together and stir to combine. Pour in the milk along with the vanilla paste/extract and continue mixing until everything is well incorporated.
  • Place the cake onto a large plate or cake vessel (with enough space/height to hold in the glaze to keep from spilling over) and drizzle the glaze over the pound cake. Let the glaze sit on the cake for a few minutes to set.
  • Garnish the cake with chopped pecans, if desired. Then slice the sweet potato pound cake into wedges and serve warm with ice cream, if you'd like. Enjoy!

  • Preheat oven to 350°F. Lightly coat an 8” x 8” brownie/cake pan or a 9” round cake pan with coconut or other oil, and fit the bottom of the pan with a small piece of parchment paper. In a blender (or using a handheld blender and a deep cup or vessel), puree the sweet potato, 1/2 cup of the water, maple syrup, balsamic vinegar, and vanilla extract until completely smooth. In a large bowl, combine the flour, coconut sugar, chocolate chips, and sea salt, then sift in the cocoa, baking powder, and baking soda. Add the wet ingredients to the dry (be sure to scrape out all the blended ingredients with a spatula, and use the remaining 1 tablespoon of water to rinse the blender jar and get out any remaining puree). Mix until just well incorporated. Transfer to the prepared pan, bake for 21–23 minutes, remove, and let cool on a cooling rack.
  • Place the sweet potato, coconut sugar, cocoa powder, cashew butter, sea salt, 1–2 tablespoons of the milk, and vanilla extract in a blender or food processor and puree until very smooth. It’s best to use a blender or processor (versus a stand mixer) if using orange sweet potato, to fully smooth out the potato. Taste, and add more sweetener if desired, and also another 2–3 tablespoons of milk if needed to thin to preferred consistency (you may need more milk using yellow sweet potato as they aren’t quite as moist as the orange). Puree until smooth, scraping down the blender/processor bowl as needed. Puree until as smooth as possible. Transfer to a container and refrigerate until ready to use on the Sweet Potato Chocolate Cake. Or, get a spoon and dig in!
