6 (7- to 8-ounce) beef tenderloin steaks (each about 1 1/2 inches thick)
Coarse kosher salt
Cracked black pepper
3 tablespoons canola oil
6 tablespoons (3/4 stick) chilled unsalted butter, divided
4 garlic cloves, peeled, smashed
2 fresh thyme sprigs
2 fresh rosemary sprigs
1 cup finely chopped shallots
1/2 cup Cognac or brandy
2 tablespoons tawny Port
3 cups low-salt chicken broth
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 250°F. Sprinkle steaks on all sides with salt and pepper. Heat oil in heavy large skillet over high heat. Add steaks and sear until brown, about 2 minutes per side. Reduce heat to medium-low. Add 3 tablespoons butter, garlic, thyme, and rosemary to skillet. Cook steaks to desired doneness, turning occasionally and basting with pan juices, about 12 minutes for medium-rare.
  • Transfer steaks to small rimmed baking sheet and keep warm in oven.
  • Pour contents of skillet into small bowl. Return 3 tablespoons drippings from bowl to same skillet and place over high heat. Add shallots and sauté 2 minutes. Add Cognac and Port and stir 1 minute, scraping up any browned bits. Add broth and boil until sauce is reduced to 1 cup, about 12 minutes. Whisk in Dijon mustard, then remaining 3 tablespoons cold butter, 1 tablespoon at a time. Season sauce to taste with salt and pepper. Set aside.
  • Arrange steaks on plates; whisk any accumulated juices from baking sheet into sauce. Spoon sauce over steaks and serve.

Steps:

  • Prepare the creamy mustard dipping sauce. Combine all ingredients in a small bowl and season with salt and pepper, to taste. Cover and refrigerate until ready to serve.
  • Add olive oil to large skillet over high heat. Once hot, add steak and season well with salt and pepper.
  • Cook 3-4 minutes, stirring occasionally, until golden brown. If your skillet is not large enough, do this in batches, you don't want to crowd the skillet.
  • Reduce heat to medium-low and add the butter and garlic. Cook for 1-2 minutes longer, stirring to coat the steak bites in the garlic-butter sauce.
  • Sprinkle with parsley and serve with creamy mustard dipping sauce.

(4) 8 ounce steaks, cut of your choice (I get my meat here)
sea salt and black pepper, to taste
1 small shallot, finely chopped
2 tablespoons butter or Butter Flavored Coconut Oil for paleo or Whole30
1/3 cup balsamic vinegar (I use this brand)
¼ cup beef broth
¼ cup spicy brown mustard or dijon mustard

Steps:

  • In a large skillet or grill pan, heat the olive oil over medium-high heat. Season the steaks on both sides with a little sea salt and black pepper. Sear the steaks for 3-4 minutes on each side or until they have reached desired level of doneness. Remove the steaks from the pan, and place on a plate covered with foil while you make the sauce. Alternately you can hold the steaks in the oven on low.
  • To the skillet, add the shallots and butter and sauté until the shallots are soft and translucent. Add the balsamic vinegar, beef broth, and mustard to pan. Use a rubber spatula to scrape any bits of steak from the bottom of the pan and mix into sauce. Bring to a boil over medium heat and then reduce heat to low and simmer 5 minutes.
  • Pour the sauce over top of the steaks before serving.

Steps:

  • Preheat your broiler on high and line a rimmed baking sheet with foil and lightly grease.
  • Lightly score 4 shallow cuts on both sides of the steak, two in each direction (per piece of meat if your sirloin is in smaller pieces).
  • Sprinkle both sides generously with freshly cracked pepper and salt.
  • Place steak on the prepared baking sheet and broil for 4 to 6 minutes per side, until steak reaches your desired level of doneness. Remove from oven, tent with foil, and allow to rest for at least 5 minutes before slicing across the grain.
  • While your steak is cooking, heat a medium skillet over medium heat and lightly grease with cooking spray or a small drizzle of olive oil. Add mushrooms and sliced green onions. Saute until mushrooms are lightly browned, 3 to 4 minutes. Add garlic and cook for 30 seconds.
  • Transfer vegetables to a plate and return pan to heat.
  • Add beef broth to your pan and bring to a simmer. Simmer for 3 to 4 minutes until reduced by half. Remove from heat and whisk in sour cream and mustard. 2 strip steaks, at room temperature
Coarse salt and freshly ground black pepper
1 teaspoon unsalted butter
1/2 cup vermouth or white wine
2 teaspoons Dijon-style mustard
1/4 cup heavy cream

Steps:

  • Heat a 10-inch cast iron skillet over medium high heat until it is hot but not smoking, about 2 minutes. Generously season the steaks on both sides with salt and pepper. Add half the butter to the pan and set one steak directly on top. Repeat with the remaining butter and steak. Sear the steaks without touching for 2 minutes (or a minute or two longer if using bone-in), or until the steak releases easily from the pan and a golden brown crust has formed. Using tongs, hold the steak and sear both edges of the steaks for about 5 seconds. Turn the steak over and continue to sear until the steak reaches 115°F to 120°F for rare, 125°F for medium-rare, and 135° to 140°F for medium. Transfer the steaks to a warm plate to rest.
  • Remove the pan from the heat and carefully pour in the vermouth. Return to heat and scrape up any browned bits on the bottom of the pan with a wooden spoon. Cook until the wine is almost completely reduced, about 20 seconds. Stir in the mustard and heat for 15 seconds. Add the cream and any juices collected from the resting steak and stir to combine. Cook until the sauce coats the back of the spoon, about 10 seconds. Season with salt and pepper. Pour sauce over steaks before serving.
