- Add olive oil to large skillet over high heat. Once hot, add steak and season well with salt and pepper.
- Cook 3-4 minutes, stirring occasionally, until golden brown. If your skillet is not large enough, do this in batches, you don't want to crowd the skillet.

- Sprinkle with parsley and serve with creamy mustard dipping sauce.

STEAK WITH BALSAMIC SHALLOT PAN SAUCE
Steps:
- In a large skillet or grill pan, heat the olive oil over medium-high heat. Season the steaks on both sides with a little sea salt and black pepper. Sear the steaks for 3-4 minutes on each side or until they have reached desired level of doneness. Remove the steaks from the pan, and place on a plate covered with foil while you make the sauce. Alternately you can hold the steaks in the oven on low.
- To the skillet, add the shallots and butter and sauté until the shallots are soft and translucent. Add the balsamic vinegar, beef broth, and mustard to pan. Use a rubber spatula to scrape any bits of steak from the bottom of the pan and mix into sauce. Bring to a boil over medium heat and then reduce heat to low and simmer 5 minutes.
- Pour the sauce over top of the steaks before serving.

Steps:
- Preheat your broiler on high and line a rimmed baking sheet with foil and lightly grease.
- Lightly score 4 shallow cuts on both sides of the steak, two in each direction (per piece of meat if your sirloin is in smaller pieces).
- Sprinkle both sides generously with freshly cracked pepper and salt.
- Place steak on the prepared baking sheet and broil for 4 to 6 minutes per side, until steak reaches your desired level of doneness. Remove from oven, tent with foil, and allow to rest for at least 5 minutes before slicing across the grain.
- While your steak is cooking, heat a medium skillet over medium heat and lightly grease with cooking spray or a small drizzle of olive oil. Add mushrooms and sliced green onions. Saute until mushrooms are lightly browned, 3 to 4 minutes. Add garlic and cook for 30 seconds.
- Transfer vegetables to a plate and return pan to heat.
- Add beef broth to your pan and bring to a simmer. Simmer for 3 to 4 minutes until reduced by half. Remove from heat and whisk in sour cream and mustard. Add salt and pepper to taste (if you use full-sodium beef broth, you probably wont need salt). If not ready to serve, you can keep the mixture warm over very low heat--do not boil.
- Serve steak alongside steamed green beans, with mustard sauce spooned over both. Enjoy!

PAN SEARED STRIP STEAK WITH MUSTARD CREAM SAUCE
Armed with a cast iron pan and a thermometer, you can cook steak at home better than most chain steakhouse restaurants.

Steps:
- Heat a 10-inch cast iron skillet over medium high heat until it is hot but not smoking, about 2 minutes. Generously season the steaks on both sides with salt and pepper. Add half the butter to the pan and set one steak directly on top. Repeat with the remaining butter and steak. Sear the steaks without touching for 2 minutes (or a minute or two longer if using bone-in), or until the steak releases easily from the pan and a golden brown crust has formed. Using tongs, hold the steak and sear both edges of the steaks for about 5 seconds. Turn the steak over and continue to sear until the steak reaches 115°F to 120°F for rare, 125°F for medium-rare, and 135° to 140°F for medium. Transfer the steaks to a warm plate to rest.
- Remove the pan from the heat and carefully pour in the vermouth. Return to heat and scrape up any browned bits on the bottom of the pan with a wooden spoon. Cook until the wine is almost completely reduced, about 20 seconds. Stir in the mustard and heat for 15 seconds. Add the cream and any juices collected from the resting steak and stir to combine. Cook until the sauce coats the back of the spoon, about 10 seconds. Season with salt and pepper. Pour sauce over steaks before serving.

- Add the shallots and garlic to the same skillet you used to cook the meat (without cleaning it), stirring for 30 seconds.
- Carefully pour in the wine and stir, scraping up the browned bits from the bottom, for about 2 minutes.
- Add broth and bring to a slow boil. Cook for 3 minutes.

- Whisk in Dijon mustard until smooth.

- Pat the steaks dry with a paper towel. Season the steaks with the salt and pepper, and rub it into the beef. Melt the half of butter in a pan over high heat. Place the steaks in a hot pan and cook for 3 1/2 minutes.
- Add the remaining butter to the pan, and flip the steaks and cook for another 3 1/2 minutes. Remove the steak from the pan, and let it rest for 5 minutes. You want the steak to reach 130 degrees. You can check the temperature by inserting a meat thermometer into the middle of the steak. The temperature of the steak will rise about 5 degrees as it rests, and 135 degrees will give you a perfect medium rare steak.
- Keep the drippings from the steak in the pan, and add the stone ground mustard, garlic, heavy cream, and thyme to the pan.
- Whisk the sauce together and simmer slowly for 5 minutes while the steak rests, then serve the steak with the sauce.

- Before cooking, allow steaks stand 30 minutes at room temperature. Then season all sides with salt and pepper.
- Heat a large cast-iron skillet or pan over medium-high heat. Add 1 tablespoon of oil in and swirl to coat. When pan begins smoking, lay the steaks into the pan away from you, in batches of two and cook 3 minutes on each side or until browned.
- Reduce heat to medium-low; add 2 tablespoons of butter, 3-4 sprigs of thyme, and 3 garlic cloves to the pan. Allow the butter to foam a little and baste the steaks (use an oven mitt, hold pan handle and very carefully tilt pan toward you so butter pools in the pan, and baste steaks with a large spoon).
- Baste constantly while cooking for a further 1-2 minutes, or until the steaks are done to your liking. (For well done steaks, flip them a couple more times while cooking until done to your preference.)

- Let 1–1½ pounds steak sit at room temperature for as long as possible before cooking (even if it’s only for 10 minutes, that’s fine). Pat steak dry with paper towels. → Steak doesn't have to be expensive. These are our 4 fave budget cuts.
- Heat a medium dry skillet, preferably cast iron, over medium. Season steak while you wait for the skillet to get nice and hot. Sprinkle lots of salt and pepper on both sides of steak—A LOT. Use several generous pinches of salt and several cranks of pepper per side. Press salt and pepper into meat so it adheres. → Yeah, you need that much salt. Seriously.
- Pour 1 Tbsp. oil into skillet and swirl to coat. Using tongs, gently lay steak in skillet and cook until underside is deeply browned and a crust has formed, about 5 minutes. Once or twice, lift up steak and reposition over hotter areas of the skillet to encourage even cooking.
- Turn steak and cook until reverse side is equally browned and steak is medium-rare (an instant-read thermometer inserted into the thickest part will register 120°), another 5 minutes. If steak has a fat cap or is more than 1" thick, upend with tongs and sear sides until browned. Remove skillet from heat. Transfer steak to a cutting board to rest.

- Heat a large frying pan over high heat. Season the steak well with salt and pepper. Add about half the butter to the pan and fry the steak until medium rare. In the last 2-3 minutes of cooking, add the remaining butter and continuously spoon the butter over the steak. Remove the steak to a warm plate and rest in a warm, draught-free place for around 5 minutes.
- To make the sauce, pour the brandy into the same pan used to cook the steak, reducing the heat to medium. Scrape any residue from the bottom of the pan. Add the cream and mustard and whisk to a smooth sauce. Add the final tablespoon of brandy. Taste and adjust seasoning. Thinly slice the steak and transfer to a serving platter. Pour over the sauce and scatter with parsley and more black pepper.
- Adam's tip One way to ruin a good steak is serving it on a cold plate. There are lots of ways to warm them, including hot water, low ovens and plate warmers, but simply putting an empty plate in a microwave for a few seconds on full power will do the trick.
