CURRIED CHICKEN THIGHS

2 tablespoons vegetable oil
1 tablespoon butter
6 chicken thighs
Salt and pepper
1 cup chopped onion
3 teaspoons curry powder
1/2 teaspoon cayenne
1 teaspoon cinnamon
1 teaspoon cumin
2 carrots, peeled and sliced on diagonal
1 1/2 cups low sodium chicken stock
1 cup broccoli florets
1/4 cup heavy cream
3/4 cup frozen peas
Cooked basmati rice, for serving

Steps:

  • Heat oil in large skillet and stir in butter to melt. Season chicken thighs with salt and pepper. Cook thighs skin side down until golden brown. Flip chicken and continue to cook until golden brown. Remove chicken to a plate.
  • Stir in onions and cook until tender. Stir in curry, cayenne, cinnamon and cumin and cook until aromas are released. Stir in carrots and toss to coat. Add chicken stock and bring to a simmer.
  • Place chicken thighs back into skillet and stir in broccoli. Cover and simmer for 15 minutes to cook chicken.
  • Stir in cream and peas. Season to taste. Serve with basmati rice.

Curried Chicken Bites are colorful, a bit spicy (depending on how much curry powder you use), a bit earthy, and super flavorful. They are easy to prepare, make ahead two-bite appetizers that are sure to please!

24 to 36 cherry tomatoes - number needed depends on size of tomatoes
1 cup chopped cooked chicken
1 cup sliced or slivered almonds, lightly toasted
4 ounces cream cheese, at room temperature
1 large green onion, finely chopped (white, light green and some of the dark green part), plus more for garnish
3 tablespoons mayonnaise
1 tablespoon mango chutney, chopping any large pieces of mango
1 tablespoon curry powder (or more, depending on how strong your curry powder is)
1/2 teaspoon kosher salt, plus more to taste
Fresh ground pepper, to taste

Steps:

  • Cut the non-stem ends off the tomatoes. Remove core and seeds (I use a grapefruit spoon or the small end of a melon baller). Place tomatoes upside down on paper towels to drain.
  • Place the chicken, almonds, cream cheese, onion, mayonnaise, chutney, curry powder and salt in the bowl of a food processor and pulse just until blended.
  • Lightly season prepared tomatoes with salt and pepper. Spoon in the chicken mixture. Garnish with finely chopped green onion. Refrigerate for at least 1 hour to allow the flavors to blend.

2 tablespoons orange marmalade
2 teaspoons curry powder
3/4 teaspoon salt
1/4 teaspoon pepper
3 cups finely chopped cooked chicken
3 tablespoons finely chopped green onion
3 tablespoons finely chopped celery
1 cup finely chopped almonds, toasted

Steps:

  • In a large bowl, beat the first five ingredients until well blended. Stir in the chicken, onion and celery. , Shape into 1-in. balls; roll in almonds. Cover and chill until firm (can refrigerate up to 2 days).

4 boneless chicken breast fillets
6 tbsp red pesto
3 large handfuls breadcrumbs , frsh or dried (about 300g/10oz)
olive oil

Steps:

  • Cut the chicken breasts into small chunks, each about the size of a marble (you should get roughly 15 pieces per breast). Put the pesto in a bowl and mix together with the chicken until coated all over. Tip the breadcrumbs into a large freezer bag.
  • Add the chicken pieces in batches to the bag and give it a good shake to coat. Place a piece of greaseproof paper on a baking sheet, then lay the chicken pieces on the sheet, making sure none of them are touching. Put in the freezer and, when frozen solid, take off the baking sheet and store in a container or freezer bag.
  • To cook, heat oven to 220C/fan 200C/ gas 7. Pour a little oil onto a shallow baking tray, just enough to cover it. Put the tray in the oven and let it heat up for 5 mins. Tip the chicken onto the sheet and return to the oven for 10-15 mins until crisp and cooked through.

2 boneless skinless chicken breasts
1/4 teaspoon curry powder
1/2 teaspoon turmeric
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1 pinch each salt and pepper
2 teaspoons vegetable oil
2 tablespoons plain yogurt
2 tablespoons light mayonnaise
24 blue corn chips
4 radishes, thinly sliced
green onion, tips

Steps:

  • Dice chicken into 1/2 -inch cubes. Combine salt, pepper and spices.
  • In a nonstick skillet, heat oil over medium heat; stir fry spice for 1 minute. Add chicken; cook, stirring, for about 5 minutes, or until no longer pink inside. Remove from skillet; let cool. (At this point, chicken can be covered and refrigerated for up to 24 hours.).
  • In a bowl, stir together chicken, yogurt, and mayonnaise. Place 1 or 2 chicken pieces on each corn chip; garnish with radishes and green onions.

6 slices white bread, crusts removed
2 Tbsp. butter, melted
2 cups chopped cooked chicken
2 Tbsp. BAKER'S ANGEL FLAKE Coconut, toasted
2 Tbsp. slivered almonds, toasted
3 Tbsp. KRAFT Real Mayo
1 tsp. GREY POUPON Savory Honey Mustard
1 Tbsp. curry powder
1 Tbsp. apricot jam

Steps:

  • Heat oven to 375ºF.
  • Use rolling pin to flatten bread to 1/8-inch thickness; brush with butter. Brush 24 mini muffin pan cups with any remaining butter. Cut each bread slice into 4 squares; press 1 square, buttered side up, onto bottom and up side of each muffin cup.
  • Bake 7 to 8 min. or until golden brown; cool completely.
  • Combine chicken, coconut and nuts in large bowl. Mix remaining ingredients until blended. Add to chicken mixture; mix lightly. Spoon into toast cups just before serving.

1/2 cup water
1/3 cup butter, cubed
Dash salt
1/2 cup all-purpose flour
2 eggs
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup milk
1/4 teaspoon salt
1/4 teaspoon curry powder
Dash pepper
1-1/2 cups cubed cooked chicken
1/3 cup slivered almonds, toasted
1 green onion, chopped

Steps:

  • In a large saucepan, bring water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 425° for 15-20 minutes or until golden brown. Remove to wire racks. Immediately split puffs open; remove tops and set aside. Reduce heat to 375°., In a small bowl, beat the cream cheese, milk, salt, curry powder and pepper until smooth. Stir in the chicken, almonds and onion. Spoon into puffs; replace tops. Place on a baking sheet; bake for 5 minutes or until heated through.
