ASPARAGUS, HEARTS OF PALM AND CARROT SALAD

Asparagus, Hearts of Palm and Carrot Salad image

This is a very tasty and colorful salad. You can omit the spinach if you like. You can use regular carrots, peeled and sliced medium thick instead of bagged baby carrots. If so, try to make your carrot slices and hearts of palm slices about the same thickness. There's never any left when I make this salad for parties, no matter how much I make.

Provided by Pesto lover

Categories     Vegetable

Time 15m

Yield 8 serving(s)

Number Of Ingredients 9

1 (10 ounce) bag baby spinach leaves
1 (14 ounce) can hearts of palm
1 lb asparagus, don't use the very thin ones
1 lb baby carrots
1/3 cup canola oil
1/4 cup seasoned rice wine vinegar
3 teaspoons sugar
1 tablespoon Dijon mustard
salt & pepper

Steps:

  • Wash and spin dry the spinach leaves. Arrange on small platter.
  • Snap stems off asparagus & steam or boil until tender-crisp. Don't over-cook!
  • Steam or boil carrots until tender-crisp. Don't over-cook!
  • Drain hearts of palm and rinse twice. Cut into medium sized slices.
  • Mix asparagus, carrots and hearts of palm and arrange over spinach leaves.
  • Combine oil, vinegar, sugar, mustard, salt & pepper together. Whisk well or put in blender.

  • To make the vinaigrette, pour the vinegar and lime juice in a small bowl. Add the oregano, salt, sugar, and black pepper. Pour the oil in a slow stream, whisking with a whisk or fork to emulsify. The vinaigrette can be made a day ahead of time and refrigerated, just emulsify before using.
  • To toast the pumpkin seeds, place them in an already hot, small saute pan set over medium heat. Stir often, being careful that they don’t burn; until you start to hear popping sounds (similar to popcorn) and they being to acquire a nice tan, about four to five minutes. Remove from the heat and place in a bowl.
  • In a bowl, gently mix the avocado chunks, hearts of palm, corn kernels, cherry tomatoes and red onion with the vinaigrette. Sprinkle with the toasted pumpkin seeds and serve.
  • The dish can be served as a main salad with a side of toast or pita bread. Or serve it as a side salad to grilled chicken, fish or meat.

  • Vegan lobster rolls. Because of the neutral taste and firm-yet-tender texture, hearts of palm can be transformed into the perfect vegan lobster meat for your lobster rolls.
  • Vegan crab cakes. These vegan crab cakes are super easy to make. After combining chickpeas and hearts of palm in a food processor, then adding in some vegan mayo, vinegar, and seasonings, you're on your way to a really convincing crab-less crab.
  • Shredded hearts of palm tacos. These tacos couldn't be easier to make. Shred the hearts of palm, cook it with onions and garlic, stir in your taco sauce of choice, and eat up.
  • Hearts of palm calamari. By the looks of it, you'd never guess this calamari is made from hearts of palm. And after taking your first bite of those perfectly crispy rings, it will be extra hard to believe you're not eating the real deal, too.
  • Vegan ceviche with hearts of palm. Ceviche is typically made with raw fish, but the texture and briny flavor of hearts of palm makes it a great replacement in this recipe.
  • Vegan hearts of palm po' boys. Shrimp who? Instead of using seafood, these shrimp po' boys are made from hearts of palm. After coating them with spices and baking them in the oven, they're ready to eat in a sandwich with some vegan creole mayo.
  • Hearts of palm Mediterranean flatbread pizza. Adding hearts of palm to your pizza is a super easy—and healthy!— way to add some texture. Just slice them up and layer them on with all your other toppings.
  • Hearts of palm vegan BBQ sandwiches. This may look like your typical pulled pork BBQ sandwich, but that shredded meat is actually made from—you guessed it—hearts of palm.
  • Hearts of palm avocado salad. You can use hearts of palm in salads, too. This one is loaded with avocados, alfalfa, pesto, and green onions, and the hearts of palm add a nice firm texture.
