A great from-scratch salisbury steak and gravy recipe I found a long time ago. The mushroom and onion gravy is wonderful over mashed potatoes or rice. The gravy is still good without mushrooms. I've made it for my husband that way.

1 pound lean ground beef
⅓ cup dry bread crumbs
¼ cup chopped onions
1 egg, beaten
1 teaspoon salt
¼ teaspoon ground black pepper
2 cups beef broth
1 large onion, thinly sliced
1 cup sliced mushrooms
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • Combine ground beef, bread crumbs, chopped onion, egg, salt, and black pepper in a bowl until evenly mixed. Shape beef mixture into 4 patties, about 3/4 inch thick.
  • Fry patties in a large skillet over medium heat until browned on both sides, about 10 minutes. Add beef broth, onion, and mushrooms; bring to a boil. Reduce heat to low, cover, and simmer until patties are no longer pink in the center, about 10 minutes more. Transfer patties to a platter and keep warm.
  • Bring onion mixture to a boil. Mix cornstarch and water in a small bowl; stir into onion mixture. Cook and stir until onion gravy is thickened, about 1 minute. Pour over patties to serve.

1/4 cup cornstarch
2 cans (10-1/2 ounces each) condensed beef consomme, undiluted
1 jar (6 ounces) sliced mushrooms, drained
4 teaspoons Worcestershire sauce
1 teaspoon dried basil
1 egg, lightly beaten
1/2 cup soft bread crumbs
1 medium onion, finely chopped
1/2 to 1 teaspoon seasoned salt
1/4 teaspoon pepper, optional
1-1/2 pounds ground beef
Hot mashed potatoes or cooked noodles

Steps:

  • In a large bowl, combine the cornstarch and consomme until smooth. Stir in mushrooms, Worcestershire sauce and basil; set aside. , In another large bowl, combine egg, bread crumbs, onion, seasoned salt and pepper if desired. Crumble beef over mixture and mix well. Shape into six oval patties; place in a shallow 1-1/2-qt. microwave-safe dish. , Cover and microwave on high for 3-5 minutes; drain. Turn patties, moving the ones in the center to the outside of dish. Pour consomme mixture over patties. Cover and microwave on high for 6-8 minutes or until a thermometer reads 160°. Let stand for 5 minutes. Serve with potatoes or noodles.

1 pound lean ground beef
1 (10-ounce) can condensed cream of mushroom soup, divided
1/2 cup Italian bread crumbs
1 egg, lightly beaten
1/2 cup frozen chopped onions
1 teaspoon steak seasoning (recommended: Montreal)
1 tablespoon canola oil
2 tablespoons butter, divided
1/4 cup cognac
1 (8-ounce) package sliced fresh mushrooms
2 cups low-sodium beef broth
1 (1.2-ounce) packet brown gravy mix
Cooked rice, for serving

Steps:

  • In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning. Mix thoroughly and shape into 4 oval patties.
  • Heat oil and 1 tablespoon butter in large skillet over medium-high heat. Brown patties on both sides and transfer to a plate.
  • Add remaining butter and cognac (remove pan from heat when adding cognac.) Saute mushrooms for 7 to 8 minutes. Add beef stock and whisk in gravy mix until smooth. Stir in remaining mushroom soup.
  • Return patties to skillet and spoon gravy over top. Cover pan and simmer for 20 to 25 minutes.
  • Serve Salisbury Steaks and Mushroom Gravy over hot cooked rice.

1 (10 1/2 ounce) can condensed cream of mushroom soup (undiluted)
2 teaspoons prepared horseradish sauce
2 teaspoons Worcestershire sauce
1 tablespoon prepared mustard (spicy brown)
1 egg (lightly beaten)
1/4 cup dry breadcrumbs
1/4 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs ground beef
2 tablespoons vegetable oil
1/2 cup water

Steps:

  • Combine soup, mustard, Worcestershire and horseradish in a bowl and set aside.
  • In another bowl, mix together egg, bread crumbs, onion, salt, pepper, 1/4 cup soup mixture and the ground beef.
  • Form mixture into 4-6 patties.
  • Brown patties in oil and drain off excess fat.
  • Combine rest of the soup mixture with the 1/2 cup water and pour over the patties.
  • Cover and cook for 10-15 minutes (or until done) Remove patties and spoon remaining sauce over top.
  • This is great over hot cooked noodles!

  • Mix ground beef, bread crumbs, egg, and onion soup mix together in a bowl; shape into 6 oblong patties.
  • Heat oil in a large skillet over medium-high heat. Cook patties until browned, about 5 minutes per side.
  • Stir golden mushroom soup and water together in a bowl; pour over the patties in the skillet. Turn patties to coat in the liquid. 1/4 cup saltine crumbs
1 egg white, slightly beaten
2 tablespoons milk
1 tablespoon prepared horseradish

1 (12 ounce) jar beef gravy
4 ounces mushrooms, sliced
2 tablespoons water

Steps:

  • In medium bowl, combine ground beef, onion, cracker crumbs, egg white, milk, horseradish, salt and pepper. Mix lightly but thoroughly, shape into 4 oval 1/2-inch thick patties.
  • Heat large nonstick skillet over medium heat until hot. Place beef patties in skillet. Cook 7-8 minutes, turning once or until centers are no longer pink and juices run clear. Center of patty should register 160 on an instant read thermometer. Remove from skillet and keep warm.
  • In same skillet, combine gravy, mushrooms, and water. Cook over medium heat 3-5 minutes or until mushrooms are tender.

1 1/2 lbs lean ground beef
1/3 cup panko breadcrumbs
1 large egg, beaten
1/3 cup red onion, finely chopped
1 teaspoon steak seasoning
1/2 teaspoon herbes de provence
1/2 teaspoon smoked paprika
1/2 teaspoon black pepper, to taste
1 1/2 tablespoons olive oil
1 cup red onion, sliced (Lyonnaise cut)
1 1/2 cups cremini mushrooms, sliced
1 pinch sea salt
1/4 cup red wine
2 cups low sodium beef broth
1/2 teaspoon black pepper, to taste
2 teaspoons cornstarch (mixed with 1/2 cup cold water)
1 tablespoon parsley, chopped (for garnish)

Steps:

  • In a mixing bowl, combine ground beef, bread crumbs, egg, onion, Montréal Steak seasoning, Herbes de Provence, smoked paprika, and freshly ground black pepper. Shape mixture into 4 equal patties and then oval shape; place them in a plate. Cover with plastic wrap and transfer to the refrigerator for 1 hour.
  • In a hot large skillet over medium heat, add oil and when hot, place beef patties; cook 3 minutes per side. Remove from the skillet and place them in a plate, covered loosely with foil.
  • Return skillet on burner and add red onions; sauté for 2 minutes. If there's not enough fat, add a little oil. Add mushroom, sprinkle a pinch sea salt and sauté for 4 minutes. Pour in red wine and cook until liquid is almost evaporated. Pour in beef broth and freshly ground black pepper. Bring to a boil and then reduce to medium; simmer for 5 minutes. Place beef patties back in the skillet, reduce heat to medium low, and simmer until heat through, about 5 minutes.
  • Move beef patties to serving plates, increase heat to medium-high and pour in cornstarch mixture; stir and less than a minute, the sauce will thicken. Spoon gravy over patties and sprinkle with fresh chopped parsley.

1 1/2 pounds ground beef
1/2 cup dry bread crumbs
1 egg
1/4 teaspoon salt

1/4 cup water
1 tablespoon Worcestershire sauce
1/2 teaspoon mustard powder

1 tablespoon dried minced onion
3 tablespoons butter
3 tablespoons all-purpose flour
1/8 teaspoon pepper
1 can (4 ounces) mushrooms, liquid drained and reserved
1 beef bouillon cube
Water
1/4 teaspoon bottled browning sauce
SALISBURY STEAKS MIXTURE:
1/3 cup minced onion
1/3 cup minced green pepper
1/4 cup chopped celery
1 garlic clove, minced
2 tablespoons butter
1-1/2 pounds ground beef
2 tablespoons minced chives or green onion tops
1/2 teaspoon ground mustard
Dash paprika

Steps:

  • For sauce, in a small saucepan, melt butter and saute onion until soft. Stir in flour and pepper; blend well. Add mushrooms and bouillon. Add reserved mushroom liquid and enough water to make 1-1/4 cups; stir and cook until thickened. Stir in browning sauce. Keep warm while preparing the Salisbury steaks. , In a skillet, saute onion, green pepper, celery and garlic in butter over low heat. Remove from heat and add to remaining ingredients; mix well. 2 cups onions, chopped and divided
3 tablespoons vegetable oil, divided
1 garlic clove, minced
2 lbs ground beef
2 large eggs, lightly beaten
1/4 cup fine dry breadcrumb
2 teaspoons prepared mustard
2 teaspoons Worcestershire sauce
1 teaspoon salt, divided
1 teaspoon pepper, divided
1 (8 ounce) package sliced fresh mushrooms
3 tablespoons all-purpose flour
1/2 cup dry red wine
1 1/2 cups low sodium beef broth

Steps:

  • Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
  • Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.
  • Cook patties in remaining 2 Tabsp. hot oil over medium-high heat 3 minutes on each side or until browned. (Do not cook until done). Remove patties and set aside.
  • Add remaining onion to drippings in skillet, and saute over medium-high heat until tender; add mushrooms and saute 3 minutes. Whisk in flour, and cook, stirring constantly, 1 minute, whisk in wine, broth, and remaining 3/4 teasp salt and 1/2 teasp of pepper. Bring to a boil, reduce heat to low and simmer stirring occasionally, 5 minutes.
  • Place patties in lightly greased baking dish, top evenly with gravy.
  • Bake, covered, at 350 for 25 minutes or until done.
  • In the summer I make this recipe in my electric fry pan.

I came up with this recipe while referencing another recipe here on Zaar. I would have simply reviewed the recipe and added to my cookbook but I made such changes that it is not like the original recipe I referenced, so I feel it would not be a fair rating if I did rate it(even a high rating, which it would have been) I am not saying this is better, but different, the recipe I went by is recipe #16143 . The main reason for the biggest change - the addition of brown gravy is because I like salisbury steaks with mashed potatoes and in order to have enough gravy for 4 or 5 serving of potatoes needs more gravy, plus when I think of salisbury steak I think of brown gravy.

  • Shape firmly into 5 patties, about 3/4 inch thick.
  • In large skillet over medium-high heat, melt margarine and cook 3 or 4 patties until browned on both sides, remove.
  • Repeat with remaining patties and remove, spoon off fat.
  • While patties are browning mix brown gravy mix with 1 cup of cold water.
  • In same skillet, patties removed, add remaining mushroom soup, brown gravy and mushrooms; bring to boil.
  • Return patties to skillet, reduce heat to low cover; simmer 20 minutes or until patties are thoroughly cooked and no longer pink, turning patties occasionally.
  • While patties are cooking, saute sliced onion in 1 teaspoon of butter over medium heat stirring often until soft and caramelized.
  • Serve patties topped with sauteed onions and mushroom sauce spooned over.
  • I serve this with mashed potatoes, you could use egg noodles instead.

  • Preheat oven to 350 degrees F (175 degrees C).
