1 lb cooked crabmeat (preferably Dungeness lumb crabmeat, picked over for shells and cartilage)
2 tablespoons minced onions
1 3/4 cups grated swiss cheese (or raw-milk cheddar cheese)
1/4 cup freshly grated parmesan cheese
1 tablespoon unbleached all-purpose flour
1 1/2-2 teaspoons Old Bay Seasoning
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup mayonnaise
6 large eggs
1 1/2 cups milk
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce (the white wine variety, if available)
sour cream
minced fresh chives (or whole chives with blossoms, in season)
capers

Steps:

  • Preheat oven to 375°; butter a 9-inch deep dish pie plate.
  • Layer the crab, onion, and cheeses in the dish.
  • In a bowl, mix together the flour, Old Bay seasoning, baking powder, salt, and pepper.
  • Whisk in the mayonnaise and eggs, combining just until uniformly yellow.
  • Add in the milk, mustard, and Worcestershire sauce; stir to combine.
  • Pour over crab mixture; bake 45-50 minutes or until puffed and golden brown.
  • Cool 10 minutes, then slice into wedges or squares; serve warm.
  • Garnish, if desired, with sour cream, chives, and capers.

Time and budget friendly! This is a simple-to-prepare dish with plenty of spices and tasty ingredients to make a creamy, cheesy crab and asparagus noodle casserole. It's great for busy nights when your time is limited but you have a hungry family waiting for dinner. Adjust the horseradish and red pepper flakes to whatever level of spicy pleasure you can tolerate. I hope you enjoy it.

12 ounces wide egg noodles, cooked according to package directions and drain well
1/2 onion, chopped
2 -3 garlic cloves, minced
2 celery ribs, chopped
1 tablespoon vegetable oil
18 ounces imitation crabmeat, broken into bite-size pieces
1 (14 1/2 ounce) can asparagus spears, cut, drained
1/4 cup parmesan cheese, grated, divided
1 tablespoon dried parsley
1 -2 teaspoon red pepper flakes
3/4 cup cream (10% cream or Half and Half)
1 -2 tablespoon horseradish cream (your choice, mild or hot)
2 teaspoons salt
1 teaspoon ground pepper

Steps:

  • Preheat oven to 350°.
  • In large dutch oven or saucepot, cook egg noodles according to package directions; drain well. Return drained noodles to saucepot; set aside.
  • In medium skillet, sauté onion, garlic and celery in vegetable oil for 3-4 minutes or until onions are soft; set aside to cool slightly.
  • Add the cooked onion mixture, crabmeat, drained asparagus, half of the parmesan cheese, parsley, and red pepper flakes to the noodle. Mix well; set aside.
  • Whisk together the cream, horseradish cream, salt and pepper. Pour over the crabmeat mixture, and blend well with wooden spoon or large ladle.
  • Pour crab and noodle mixture into a 9x13 baking dish, and sprinkle a light layer of the remaining parmesan cheese on top.
  • Bake at 350° for 30 minutes. Serve hot.

16 ounces uncooked pasta
1/2 lb mushroom, fresh sliced
2 cloves garlic, minced
16 ounces crabmeat, chopped
2 teaspoons salt
1 1/2 cups shredded cheddar cheese
2 large onions, chopped
1/2 cup green pepper, chopped
1/2 cup butter
1/2 cup sour cream
1 1/2 teaspoons basil

Steps:

  • Cook pasta according to directions.
  • Sauté onion, garlic, mushrooms and green pepper in butter until crisp tender.
  • Remove from heat.
  • Drain pasta; add to vegetable mixture.
  • Stir in crab, sour cream, basil and salt.
  • Place mixture in 2 greased 8-inch baking dishes.
  • Sprinkle with cheese.
  • Cover and freeze one dish.
  • Cover and bake the second one for 20 minutes at 350°F Uncover and bake 5 more minutes.

8 large eggs
2 cups half-and-half cream
2 cans (6 ounces each) crabmeat, drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup dry bread crumbs
1 cup shredded Swiss cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
2 celery ribs, chopped
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
3 medium fresh mushrooms, chopped
2 tablespoons butter

Steps:

  • In a large bowl, beat eggs and cream. Stir in the crab, spinach, bread crumbs, cheese, salt, pepper and nutmeg; set aside. In a skillet, saute the celery, onion, red pepper and mushrooms in butter until tender. Add to the spinach mixture., Transfer to a greased shallow 2-1/2-qt. baking dish. Bake, uncovered, at 375° for 30-35 minutes or until a thermometer reads 160°. Let stand for 10 minutes before serving.
