1 teaspoon butter
½ sweet onion, diced
3 jumbo eggs
2 tablespoons water
¼ cup shredded sharp Cheddar cheese
1 slice process American cheese, diced

Steps:

  • Cook bacon in a skillet over medium-high heat until crisp. Remove with a slotted spoon to paper towels to drain and cool; crumble the bacon and set aside.
  • Melt the butter in a skillet over medium heat. Cook and stir the onions in the butter until tender, about 10 minutes.
  • Prepare a 10-inch non-stick skillet with cooking spray and place over a cold burner. Whisk together the eggs and water; pour the egg mixture into the cold skillet. Cover and turn the burner on for medium-low heat. Cook until steam begins to vent from the skillet. Remove the lid. Sprinkle the crumbled bacon, Cheddar cheese, American cheese, salt, and red pepper over the eggs. Spread the onions over the eggs. Gently swirl the skillet in a circular motion to release the omelet and slide it onto a plate. Fold the omelet in half. Allow the cheese to melt, about 2 minutes.

25g vegetarian cheddar, grated
small handful parsley leaves, roughly chopped
2 eggs, beaten

Steps:

  • Heat the olive oil in a small non-stick frying pan. Tip in the mushrooms and fry over a high heat, stirring occasionally for 2-3 mins until golden. Lift out of the pan into a bowl and mix with the cheese and parsley.
  • Place the pan back on the heat and swirl the eggs into it. Cook for 1 min or until set to your liking, swirling with a fork now and again.
  • Spoon the mushroom mix over one half of the omelette. Using a spatula or palette knife, flip the omelette over to cover the mushrooms. Cook for a few moments more, lift onto a plate and serve with oven chips and salad.

2 large eggs, beaten
1 Tbsp low-fat milk
1 pinch salt
1 pinch black pepper
1 slice bacon, cooked and crumbled into pieces
2 button mushrooms, sliced
1 1/2 oz grated pepper jack cheese
1 Tbsp black olives, sliced (i try to use spanish black olives when i can get them)
1/2 green onion, sliced

Steps:

  • 1. Lightly spray 8-inch skillet with no-stick spray. Heat skillet over medium heat.
  • 2. In a bowl beat together eggs, milk, salt and pepper until frothy. Pour into heated skillet. Cook, uncovered, without stirring for about 4 minutes and eggs start to set. As eggs start to set, run a spatula around the edge of the skillet and lift eggs slightly so the uncooked portion can flow underneath.
  • 3. When eggs are almost set, sprinkle the crumbled bacon pieces, sliced mushrooms and Pepper Jack cheese down the center of the omelet; let cook another 1 to 2 minutes, or until eggs are set throughout and the cheese is just starting to melt.
  • 4. Fold the omelet in thirds by folding one side of the omelet over the filling, and then folding the other side over the first side.
  • 5. Transfer the omelet to a plate. Garnish the top of the omelet with sliced black olives and green onion slices.

6 -10 slices bacon (can use more or less bacon)
1 onion, chopped
1 tablespoon minced garlic (to taste)
2 stalks celery, chopped
1 small green pepper, chopped
1 (10 ounce) can mushroom soup, undiluted
1/3 cup grated parmesan cheese (can use more)
milk (use half of the can of the mushroom soup)
2 cups cooked converted white rice (I use Uncle Ben's converted rice for this)
1 -2 cup canned mushroom slices, drained
salt and pepper

Steps:

  • Set oven to 325 degrees.
  • Butter a casserole dish.
  • Cook the rice, and set aside.
  • In a frypan cook bacon until crisp; drain the bacon fat if desired, or just leave in frypan to fry the veggies (you might still have to add in some butter for frying) remove and chop bacon into large pieces and set aside.
  • Add in 1/4 cup butter, and saute onion, garlic, celery and green pepper for about 4-5 minutes or until soft.
  • Transfer the cooked bacon and sauteed veggies to a large bowl; add in the cooked rice and all remaining ingredients; mix well to combine, adjusting salt and pepper to taste.
  • Transfer to a greased casserole dish.
  • Bake (covered or uncovered) for about 30-40 minutes.
  • **NOTE** if desired sprinkle grated cheddar cheese over the casserole the last 20 minutes of baking.
  • Also, for perfrect converted rice, boil 1-3/4 cups water with 1 cup rice and 2 tablespoons butter (double the water, rice and butter if desired) this will give you a not too soft rice, perfect for this or any recipe.

This is my version of the BMP Omelet that is served at our local Shari's Restaurant. I tapered it down to just 2 eggs for an individual serving, since their 3-egg omelet is a little too filling for me. And sometimes I omit the bacon pieces, and it's just as good. I don't really measure the filling ingredients, but rather just toss in whatever amount I want at the time. But I had to list specific quantities to post this recipe, which are rough estimates. So feel free to adjust the quantities of each ingredient to suit your taste preferences. The system would not accept "Pepper Jack Cheese" as an ingredient (no matter what I did, it changed that ingredient to Monterey Jack cheese). But Pepper Jack really is the variety of Monterey cheese you will want to use in order to get that peppery zing that is the focal point of this omelet. So I had to write that ingredient as cheese, then specify it to be grated Pepper Jack.

1/2 teaspoon Red Chilli / Red Pepper Flakes, more to taste

1/4 cup Pasta Water (reserve before draining)

Steps:

  • Bring a large pot of water to a boil. Add penne pasta and a pinch of salt and cook until just shy of al dente. Drain pasta, reserving 1/2 a cup of the pasta cooking water.
  • Heat olive oil in a frying pan. Add onion, garlic and bacon to the pan and sauté until onion is softened, approx. 2-3 minutes.
  • Add mushrooms to the pan, and sauté for another 2-3 mins, or until the mushrooms have softened.
  • Add tinned tomatoes, red chilli flakes, dried Italian herbs and salt and pepper. Bring to a boil, then reduce the heat to low and allow to simmer for 10 minutes, or until the sauce thickens.
  • Add cooked penne and 1/4 cup reserved pasta water to the frying pan. Cook, tossing, until the sauce thickens and coats the pasta, approx. 1-2 minutes.

  • Preheat an 8-inch skillet over medium heat. Add the butter and turn the heat down slightly. With a 4-ounce ladle, add one ladle of eggs to the pan. Immediately begin stirring with a spatula.   • Heat a 10-inch nonstick pan over medium heat and coat bottom of pan with 1 tsp butter. Just before adding eggs to the pan, whisk them until frothy (I used this hand cranked egg beater to speed up the process). Add half of the egg white mixture (enough to coat the pan). Let cook for 2 min or until the bottom is starting to turn golden. Use a large spatula to gently flip the egg whites over (this omelette spatula from OXO is perfect for omelet lovers).
  • Immediately sprinkle 1/4 of cheese over the surface. Place spinach on one half and sauteed mushrooms and bacon on the other half. Use a spatula to fold omelet in half, being careful not to deflate your fluffy eggs. Slide onto a serving plate and sprinkle with 1/4 of cheese, then top with diced tomatoes and chives if desired. Repeat Steps 3 & 4 for second omelette.
