1 tablespoon olive oil
1 can (14-1/2 ounces) sliced potatoes, drained
1 small onion, cut into thin wedges
2 teaspoons minced fresh parsley
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch salt

Steps:

  • In a small skillet, heat oil over medium heat. Add potatoes and onion; cook and stir for 10 minutes or until lightly browned. Combine the parsley, paprika, garlic powder, onion powder and salt; sprinkle over potato mixture and toss to coat. Cook 5-10 minutes longer or until onion is tender.

1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes
8 slices apple-smoked bacon
1/2 cup sour cream
2 cups smoked gouda cheese, divided
4 green onions

Steps:

  • Fry the bacons in a skillet, drain and crumble.
  • Chop up the green onions.
  • Spray a 9 x 15 cassarole dish with cooking spray.
  • add potatoes and 1 C gouda.
  • add sour cream.
  • Stir together until just mixed.
  • Sprinkle bacon and green onions on top.
  • Top with 1 C gouda.
  • Bake in a 350F oven for 30 minutes until the cheese is bubbly and the mixture is heated through.

5-Ingredient Fix Contest Entry. Just another mash-up recipe. I lover rich foods and this dish includes other ingredients that I also love like, butter and garlic, leeks and peas. So I thought I'd try all these ingredients together and came up with a dish worthy of Thanksgiving dinner.

4 cups Simply Potatoes Traditional Mashed Potatoes
6 garlic cloves, roasted
1 small leek, cut into 1/4 inch slices
1 cup sugar snap pea, steamed
6 tablespoons butter, melted (I used salted butter for flavor)

Steps:

  • Place garlic cloves in oven-proof small glass dish or bake ware and drizzle with a little olive oil. Cover container and roast garlic in 350 degree preheated oven for 25-30 minute, until soft. Do not burn garlic. Remove from oven and let cool.
  • Clean leek in cold water. Sand and dirt gets down between the layers of a leek, so make sure you thoroughly clean it. Loosen the leafy layers and run under cold water until all grit is removed. Cut leek coarsely into about ¼ inch slices.
  • Prepare snap peas by boiling briefly, 1-2 minutes, or steaming in a covered container in the microwave for 1 minute. Shuck some peas from the pods and discard pods. Set aside.
  • In a non-stick skillet, cook sliced leek in 2 tablespoons of butter and cloves of roasted garlic for 1 minute over low heat. Add remaining butter to the skillet and continue cook another 2 minutes over medium-low heat allowing butter to brown a bit. Add the sugar snap peas and heat another half a minute. Remove skillet from heat and let veggies steep in brown butter sauce until ready to use.
  • Meanwhile, prepare mashed potatoes according to package directions. Remove potatoes from bag and place in serving bowl. Pour burnt butter, leek, pea, and garlic sauce over potatoes and gently stir to incorporate.
  • Season potatoes to your liking and serve alongside your favorite meat.
  • Recipe makes 6 servings.

10 eggs
3/4 cup mayonnaise
2 tablespoons chipotle chiles in adobo, finely chopped
6 flour tortillas

Steps:

  • Cook Simply Potatoes according to package directions.
  • Meanwhile, in a small bowl, combine chipotle with mayo.
  • Scramble the eggs: heat a non-stick pan over medium-low heat. Whisk eggs in a bowl. Add eggs to pan; allow to set for a minute, then slightly lift eggs with a spatula, allowing the liquid to run under the cooked portion. Repeat until eggs are completely cooked. Season with salt and pepepr and remove to a bowl.
  • Spread chipotle mayo on each tortilla.
  • Pile the eggs and potatoes on top of the mayo.
  • Wrap up and enjoy!

12 to 14 small red potatoes
1/4 cup olive oil
1/4 cup butter, melted
1 teaspoon salt
1 teaspoon garlic powder

Steps:

  • Peel a strip from around each potato. Place potatoes in an ungreased 3-qt. baking dish. In a small bowl, combine the oil, butter and seasonings; drizzle over potatoes. , Bake, uncovered, at 350°, for 50-55 minutes or until tender, stirring every 15 minutes.

Here is a "Simply" wonderful way to still experience the Holiday without the hassle. It makes a terrific brunch item. It is so quick and easy, and the best part is that you can make it for breakfast, lunch or dinner. I've made this dish for all 3 meals (but not in the same day, of course). *NOTE: You could also throw in some beaten eggs and shredded cheese for a super simple breakfast omelet, frittata or quiche (see photos) that the whole family would love. And if you did happen to make a full-blown corned beef and cabbage dinner, use the leftovers (following steps #4, #5 and #7) for a simple and quick meal. Endless possibilities with this recipe.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
4 cups prepackaged coleslaw mix (shredded, bagged)
1 (12 ounce) canned corned beef, diced (or 2 - 7 oz cans)
3 tablespoons vegetable oil (for frying)
1 teaspoon salt

Steps:

  • Pour the potatoes into a dutch oven or (large sauce pan) and fill with just enough cold water to cover the potatoes by 2". Add the salt to the water and stir.
  • Bring to a boil over medium high heat. When water begins to boil, turn the heat down and simmer the potatoes (covered, stirring occasionally) for approx 5-6 minutes.
  • Now add the shredded coleslaw mix to the pot, return to a simmer, and continue (covered, stirring occasionally) for another 6-8 minutes.
  • Meanwhile, dice up the can(s) of corned beef, (roughly the same size as the potatoes).
  • Place the vegetable oil in a large skillet.
  • Drain potato and coleslaw when they are cooked thru.
  • Heat oil in skillet over medium heat and add in the diced corned beef. Fry for approx 3 minutes, then toss in your potato and slaw mixture. Fry for approx 5 minutes (stirring occasionally) until meat and veggies are crisped to your liking. Season to taste. It's as simple as that. You have your meal without the time and work. You may also choose to add some beaten eggs and shredded cheese to this recipe and make it into a breakfast omelet, frittata or quiche (see photos). The possibilities are endless. Enjoy!

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
canola oil cooking spray
12 ounces pork sausage
1 teaspoon seasoned pepper
6 slices havarti cheese, cut in fourths

Steps:

  • Spray a 12x17 baking sheet with oil spray. Spread the shredded potatoes evenly on baking sheet. Bake for 10 minutes. Using a flat spatula flatten potatoes firmly against sheet and bake for 10 more minutes. Then broil on low for 5 minutes or until hash browns are lightly browned and crispy.
  • Make 12 thin square pork patties. Season both sides of the patty with seasoned pepper. Using a griddle or non-stick pan, brown patties over medium heat for about 4 minutes on each side. Place cooked patties on paper towels and top each with two small squares of Havarti cheese.
  • Using a sturdy spatula separate hash browns into 24 small squares for slider tops and bottoms. Gently assemble 12 sliders.
