- In a large pitcher, combine the brandy, and orange liqueur. Pour in the sugar, stir or shake the pitcher thoroughly to mix until the sugar dissolves. Add all the fruit at once. Add the cava and serve as is or on ice.

- In a large pitcher, combine the sugar and rum and stir to dissolve. Add the apples, cranberries, Chardonnay, and white cranberry juice. Refrigerate for several hours or overnight. When ready to serve, add the club soda and stir to combine. Pour into ice filled glasses and scoop in some of the fruit. Top each glass with a lemon twist. Recipe Notes: I used frozen cranberries but you can also use fresh. If you use fresh, your sangria will be more pink tinted, as the berries bleed their color into the juice. Using an oak-aged Chardonnay will give the sangria more buttery flavors. I prefer un-oaked for a cleaner, lighter, more refreshing sangria. You can also serve this sangria immediately, but the flavors won't have had as much time to mingle and mellow.

- Sprinkle gelatin over 1/2 cup wine, and let stand 5 minutes.
- Combine 1 cup wine, juice, and sugar in a medium saucepan; bring to a boil over medium-high heat.
- Remove from heat; add gelatin mixture, stirring until the gelatin dissolves.
- Place pan in a large ice-filled bowl; let stand 20 minutes or until thick but not set, stirring occasionally.
- Whisk the gelatin mixture to form small bubbles; fold in orange sections, grapes, and raspberries.
- Spoon gelatin mixture into a 5-cup mold coated with cooking spray.
- Cover and chill at least 4 hours.
- Place a plate upside down on top of mold; invert mold onto plate.

- In a medium pot, add 2 cups of cranberries, the orange juice, and sugar. Place over medium heat and cook, stirring occasionally, for 15 minutes, until all of the cranberries have burst open. You may need to reduce the heat to low once the cranberries start bursting as the liquid will become frothy and could bubble over.
- Remove the pot from the heat and let cool for 5 minutes. Stir the brandy to the cranberry mixture. Transfer to the refrigerator to chill for 2 hours. Pour the brandy mixture into a large bowl through a fine mesh strainer. Discard the cranberry pulp. Transfer the sweetened cranberry brandy to a serving pitcher. Add the sliced orange and 1 cup of fresh cranberries. Add the white wine (not sparkling) to the pitcher. Stir. Refrigerate for at least 2 hours. Just before serving, add the chilled sparkling wine.
