Steps:

  • Dissolve jello in boiling water.
  • Stir cranberry sauce in thoroughly.

  • WHEN READY TO SERVE:.

Steps:

  • Combine cranberries, water, and sugar in a saucepan and bring to a boil. Cook until berries are splitting open and tender, about 10 minutes.
  • While cranberries cook, pour cherry-flavored gelatin mix into a casserole dish.

3 oranges, juice and zest of
1 lemon, juice and zest of
2 1/4 lbs sugar
9 ounces liquid pectin

Steps:

  • Put the port, orange and lemon juice and sugar in a large non-reactive pot and bring to a boil.
  • Once the sugar has dissolved, bring the mixture to a full rolling boil and cook for 10-15 minutes.
  • Add the pectin and boil for 2 more minutes, skimming off any foam.
  • Turn off the heat and test for set. If the jelly has reached the setting point, stir in the orange and lemon zest. Boil for 30 seconds.
  • Turn off the heat and let stand for 3-4 minutes then ladle into sterilized jars.

4 cups port wine
1 (2 ounce) package powdered fruit pectin
4 ½ cups white sugar
½ teaspoon butter
5 half pint canning jars with lids and rings

Steps:

  • Pour the port into a large saucepan, and sprinkle in the pectin. Bring to a boil over high heat, stirring frequently. Once boiling, pour in the sugar, and stir until dissolved. Return the mixture to a boil, and stir in the butter until melted. Continue boiling for 1 minute, skimming and discarding any foam the forms on the surface.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pour the jelly into the hot, sterilized jars, filling the jars to within 1/2 inch of the top. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 (16 ounce) can dark sweet cherries, pitted, undrained
2 (3 ounce) packages black cherry gelatin
1 cup boiling water
3/4 cup port wine
1 cup unsweetened applesauce
1/2 cup pecans, chopped
1 cup mayonnaise or 1 cup salad dressing
3 tablespoons orange juice
1 tablespoon port wine
1 tablespoon grated orange rind

Steps:

  • For the Salad: Drain cherries, reserving syrup. Add enough water to syrup to make 3/4 cup liquid, if necessary. Cut cherries in half, and set aside.
  • Dissolve gelatin in 1 cup boiling water. Add cherry liquid and wine; stir in applesauce. Chill until the consistency of unbeaten egg whites; fold in cherry halves and chopped pecans. Spoon mixture into a lightly oiled 4-cup mold. Chill until firm. Unmold salad and serve with mayonnaise dressing.
  • For the Mayonnaise Dressing: Combine all ingredients; chill at least 1 hour.

It comes from the "It's About Thyme" cookbook by Marge Clark, who by her recipes must be a special lady.

1 (10 ounce) package fresh cranberries or 1 (10 ounce) package frozen cranberries, picked over and washed
4 cups water
1/4 teaspoon baking soda
2 cups sugar
9 ounces strawberry Jell-O gelatin dessert (3 small boxes)
4 cups miniature marshmallows
2 cups red apples, diced
1 cup chopped nuts (optional)
1 (9 ounce) can crushed pineapple, drained
3 (11 ounce) cans mandarin oranges, drained
1 -2 cup green seedless grapes or 1 -2 cup red seedless grapes, halved

Steps:

  • Cook cranberries in the 4 cups water to a boil.
  • Add soda and stir and enjoy watching it bubble up.
  • Simmer 10 minutes.
  • Stir in sugar, jello, and marshmallows.
  • Stir until melted.
  • Let mixture cool.
  • Add apples, nuts, pineapple, oranges, and grapes.

Steps:
