Here's what you need: salmon, egg, olive oil, almond, grated parmesan cheese, dried basil, garlic powder, salt, pepper

12 oz salmon
1 egg
2 tablespoons olive oil
⅓ cup almond, crushed
⅓ cup grated parmesan cheese
1 tablespoon dried basil
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Mix breading ingredients together in large bowl. Set aside.
  • *NOTE: You can crush almonds by pulsing them in a food processor or high-speed blender, or by carefully cutting almonds with a sharp knife.
  • Whisk egg in a separate bowl.
  • Dredge the salmon in the egg, then the breading mixture.
  • Heat olive oil in a skillet on medium heat.
  • Once the pan is ready, add the salmon and let cook on one side for 3-4 minutes until golden brown. Flip and cook for an additional 2-3 minutes on the other side.
  • Serve salmon with a side of your favorite veggies. We used asparagus.
  • Enjoy!

4 (6 to 8-ounce) salmon fillets
Salt and freshly ground black pepper
2 tablespoons vegetable oil
3 cups sliced red bliss potatoes
2 cups diced plum tomatoes
3/4 cup sliced carrots*
3/4 cup sliced celery*
3/4 cup sliced fennel*
3/4 cup sliced onions*
1 tablespoon saffron
1 tablespoon tomato paste
1 quart shrimp or lobster stock
Variety of fresh herbs, for seasoning

Steps:

  • Preheat oven to 375 degrees F.
  • Pat the salmon fillets dry with towels and season with salt and pepper. Heat oil in a large oven-safe saute pan. Add fish to pan, flesh side down, and sear on both sides until golden. Remove from the pan and set aside.
  • Add potatoes and all the vegetables, saffron, and tomato paste to the pan and saute until vegetables are translucent. Add the stock and stir well to combine. Add a small handful of fresh herbs, and then place the salmon fillets back in the pan on top of the vegetables.
  • Cover and place the pan in the oven for 15 minutes, or until the potatoes are tender and the fish is cooked to your desired degree of doneness.

1/2 cup sliced almonds, chopped
2 tablespoons chopped fresh parsley
1 teaspoon grated lemon peel
salt
ground black pepper
1/3 cup all-purpose flour
8 ounces skinless salmon fillet
2 eggs, separate egg whites, and discard yoke. Beat egg whites in small bowl
2 tablespoons olive oil

Steps:

  • Mix almonds, parsley, lemon peel, about 1/8 teaspoon salt, and 1/8 teaspoon pepper on plate. Place flour on another plate. Sprinkle salmon with salt and pepper. Dredge salmon in flour, shaking off excess. Lightly brush 1 side of salmon with beaten egg. Press brushed side of salmon into almond mixture, pressing lightly so that almond and seasoning mixture stick.
  • Heat 1-2 tablespoons oil in a heavy large skillet over medium heat. Add salmon to skillet, almond-coated side down, and cook until crust is brown, about 5 minutes. Turn salmon over. Sauté until salmon is cooked through and opaque in center, about 5 minutes. Transfer salmon to plates. Serve with lemon slices.

In this recipe I used frozen salmon, although nothing is stopping you from using fresh fish either. The fish stock and vegetable stock can either be homemade or store bought, although, if you are trying to keep the sodium low, use broths that are lower in volume. Homemade stocks and broth have the lowest sodium, I find.

1/2 cup fish stock
3 cups vegetable broth
3/4 lb frozen salmon
2 tablespoons dried rosemary
2 tablespoons dried dill
1 1/2 tablespoons parsley
6 green onions, coarsely chopped
3 cups napa cabbage, shredded
2 large carrots, peeled and coarsely chopped
salt and pepper

Steps:

  • Combine and heat vegetable broth and fish stock in a large saucepan on medium high heat. Meanwhile season the fish with rosemary, dill, parsley, salt and pepper.
  • Add the green onions, napa cabbage and carrots to the pot, and place the fish on top. Lower the heat to medium low, and cook for 20-25 minutes. Never serve fish that is undercooked, so make sure it is cooked completely before serving.
  • Serve warm with rice or couscous.

2 tsp olive oil
4 Little Gem lettuces, halved lengthways
200ml vegetable stock
4 x 130g salmon fillets
200g fresh or frozen peas (defrosted if frozen)
½ small bunch of dill, chopped
1 tbsp half-fat crème fraîche
1 tsp Dijon mustard

Steps:

  • Heat 1 tsp oil in a large lidded frying pan over a medium heat. Arrange the lettuce halves in the pan, cut-side down, and fry for 2 mins until beginning to brown. Pour in the stock, cover with the lid and cook for 6 mins.
  • Meanwhile, season the salmon with a good pinch each of salt and pepper on both sides of the fillets. Heat the remaining oil in a second pan over a medium heat and fry the salmon, skin-side down, for 3 mins. Carefully flip using a fish slice and cook for 3 mins more until cooked through and the flesh easily flakes.
  • Tip the peas and dill into the pan with the lettuce and cook for 2 mins, covered, until the lettuce is tender but still retains its structure. Arrange the salmon fillets and lettuce halves on serving plates.
  • Stir the crème fraîche and mustard into the lettuce pan and cook over a low heat to warm through. Pour the sauce and peas over the lettuce and salmon.

1/4 cup whole roasted almonds
3 tablespoons extra virgin olive oil, plus more
extra virgin olive oil, for drizzling
1/4 cup minced onion
1/4 cup minced fresh cilantro
2 large garlic cloves, minced
2 anchovy fillets, drained and mashed
1/8 teaspoon cayenne pepper
salt & freshly ground black pepper
4 (6 ounce) skinless salmon fillet
3/4 lb linguine (optional)

Steps:

  • Finely grind the almonds.
  • In a large skillet, heat 3 tablespoons of the olive oil.
  • Stir in the almonds, the onion, cilantro, garlic, anchovies and cayenne and season with salt and pepper.
  • Add the salmon to the skillet and spoon some of the almond mixture on top.
  • Season the salmon with salt and pepper and drizzle with a little olive oil.
  • Cover the salmon and cook over moderate heat for 5 minutes.
  • Reduce the heat to moderately low and cook until the salmon is just opaque throughout, 8 to 10 minutes longer.
  • Meanwhile, (if using the pasta) in a large pot of boiling salted water, cook the linguine until al dente; drain and transfer to a serving platter. Spoon the almond sauce and salmon on top and serve at once.
