This super easy and versatile no-cook blackberry sauce is sure to become a family favorite. It can be used on cheesecake, ice cream, yogurt, crepes--the possibilities are endless! It's even delicious in the bottom of a glass topped with champagne! Because the sweetness of blackberries can vary so much, adjust the sugar to suit your tastes.

2 cups fresh blackberries, rinsed and drained
2 tablespoons sugar, or more to taste
1 teaspoon lemon juice

Steps:

  • Combine blackberries, sugar, and lemon juice in the bowl of a small food processor. Blend until smooth and sugar has dissolved, 15 to 20 seconds. Adjust sugar if desired, and blend again.
  • Strain mixture using a fine mesh strainer to remove seeds. Refrigerate until ready to use.

6 ounces ripe blackberries
2 tablespoons white sugar
1 tablespoon freshly squeezed lemon juice

Steps:

  • Rinse and drain blackberries. Place into a bowl. Add sugar and mix well. Let sit for 30 minutes to allow sugar to draw out blackberry juice.
  • Mix in lemon juice and begin to mash berries. Mash by hand with a fork or potato ricer, or puree in a food processor. If desired, strain through a fine mesh sieve to remove seeds. Serve warm or cold.

250g blackberries
50g golden caster sugar
½ tsp vanilla extract

Steps:

  • Put the blackberries and sugar into a small pan with 100ml/31⁄2fl oz water. Bring to the boil, then simmer for 5 mins until the fruit is soft. Stir in the vanilla, remove and cool a little.
  • Tip the contents of the pan into a blender or food processor, and whizz to a purée, then strain through a sieve, rubbing it through with the back of a ladle or spoon. Serve warm or chilled. Keeps in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.

2 2/3 cups semisweet chocolate chips (16 ounces), divided
1 cup (2 sticks) salted margarine, divided
1/4 cup unsweetened cocoa powder
1 teaspoon instant espresso powder or instant coffee powder
5 large eggs
1 cup sugar
Spiked Blackberry Coulis
Fresh mint sprigs
Fresh blackberries (optional)

Steps:

  • Preheat oven to 350°F. Brush 9-inch-diameter springform pan with margarine; line bottom with parchment. Stir 1 2/3 cups chocolate chips and 3/4 cup margarine in medium saucepan over low heat until smooth. Whisk in cocoa and espresso. Cool 10 minutes.
  • Using electric mixer, beat eggs and sugar in large bowl on high speed until thick, about 6 minutes. Fold in chocolate mixture. Pour batter into prepared pan.
  • Bake torte until dry and cracked on top and tester inserted into center comes out with some moist batter attached, about 42 minutes. Cool in pan on rack 1 hour (center will fall). Using spatula, press raised edges so top is level. Cut around pan sides; remove sides. Place plate atop torte and invert onto plate. Remove pan bottom; peel off paper, and cool torte completely.
  • Stir remaining 1 cup (6 ounces) chocolate and 1/4 cup margarine in small saucepan over low heat until smooth (do not overheat). Whisk in 2 tablespoons blackberry coulis. Cool glaze 15 minutes. Pour glaze into center of torte. Smooth top with spatula, allowing some of glaze to drip down sides. Refrigerate uncovered until glaze is set, about 1 hour. (Can be made 3 days ahead. Cover and keep refrigerated.)
  • Cut torte into wedges; spoon coulis alongside. Garnish with mint and berries, if desired.

3/4 cup sugar
18 ounces (1 1/2 pints) raspberries

Steps:

  • Combine sugar, berries, and 1/2 cup water in a saucepan; bring to a boil over medium-high heat. Reduce heat to medium low; cook until sugar is dissolved, about 8 minutes. Use a pastry brush dipped in water to brush down any sugar crystals on the side of the pan. Remove from heat; cool completely. Place mixture in the jar of a blender; puree until smooth. Pass through a fine-mesh colander, and discard solids.

BERRY COULIS

This is a flexible recipe for a classic berry coulis: use just one type of berry or a combination. Passing the mixture through a fine-mesh strainer produces a smooth, glossy sauce, but you can skip the step if you prefer something more rustic. The coulis will keep in the refrigerator for 4 to 5 days and also freezes well. Serve over ice cream, cheesecake, pound cake or other plain cakes.

12 ounces fresh raspberries, blackberries, blueberries or strawberries, or a mix (if using strawberries, hull and quarter them)
1/2 cup sugar
1 tablespoon fresh lemon juice
Pinch kosher salt

Steps:

  • Combine the berries, sugar, lemon juice, salt and 1 tablespoon water in a medium saucepan. Bring to a simmer over medium heat and cook, stirring constantly, until the berries begin to give off their juice, 1 to 2 minutes. Adjust the heat so the sauce is simmering rapidly and cook until the berries have broken down, 4 to 5 minutes. Let cool slightly.
  • Transfer to a blender and blend until smooth. Pour the mixture through a fine-mesh strainer, pressing on the solids to extract as much of the sauce as possible. Serve the sauce cold or at room temperature.

MIXED BERRY COULIS

Adjust the amount of sugar based on the berries you are using and what you want the finished product to be served with. I listed the amount I use, but I prefer it on the not too sweet side. Fresh berries would also work, but I would decrease the sugar further.

12 ounces frozen mixed berries (or some combination of strawberries, blueberries, raspberries, blackberries)
1/4 cup water
4 tablespoons evaporated cane juice (sugar)
1/8 teaspoon salt
2 teaspoons lemon juice

Steps:

  • In a medium saucepan, combine all but the lemon juice.
  • Bring just to simmer and cook until berries are warm and sugar is dissolved.
  • Transfer to a blender and puree until smooth.
  • Strain through a fine sieve (or line coarse sieve with an old flour sack towel).
  • Press as much through as possible, leaving only the seeds behind.
  • Stir in the lemon juice and adjust sweetness if desired with additional sugar.
  • Can be refrigerated for up to 4 days in an airtight container.

1 teaspoon brandy

Steps:

  • Place berries, wine and 4 tablespoons sugar in blender; puree. Pour into medium saucepan. Add cloves, bay leaves, and allspice. Bring to simmer, stirring occasionally. Reduce heat, cover, and simmer 8 minutes.
  • Strain into medium bowl. Discard solids in strainer. Whisk in brandy; sweeten with remaining sugar, if desired. (Can be made 5 days ahead. Cover and chill. Rewhisk before using.)
