2 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 cup sugar
1 1/2 cups (3 sticks) margarine
1 cup brown sugar
3 large eggs
1 tablespoon vanilla extract
2 1/2 cups mashed cooked sweet potatoes
1/2 cup crushed pineapple, drained
1 cup raisins
1 cup chopped walnuts, plus additional for garnish, optional
16 ounces cream cheese, softened
1/3 cup butter, softened
1 tablespoon vanilla extract
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F. Adjust the position of the rack to the center of the oven. Grease and flour 2 (9-inch) pans or 3 (8-inch) pans. Set aside.
  • In a large bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and granulated sugar. Set aside. In the bowl of a mixer, cream margarine and brown sugar on low speed, and then increase speed to medium and beat until well-combined. Gradually add the dry ingredients and beat on low speed until just incorporated. Add eggs, 1 at a time, beating well after each egg and scraping down the sides of the bowl after the addition of each egg. Add vanilla, sweet potatoes, pineapple, raisins, and walnuts and blend on low speed until thoroughly mixed.
  • Pour batter into pans and smooth the surface with a metal spatula. Bake for 1 hour to 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean; when you touch the center of the cake, it should spring back. Allow to cool in pans for 10 minutes, and then invert onto a rack and cool completely.
  • For icing: In the bowl of an electric mixer, beat cream cheese and butter on medium speed until smooth. Add vanilla and beat until incorporated. Gradually add sugar and beat on low speed until smooth.
  • Icing the cake: Place 1 cake layer, top-side down, on a cake platter. Using a metal spatula, spread a layer of cream cheese frosting evenly over the top of the cake. Take the next layer and place it on top, rounded-side up. Frost the top and sides of the cake with the remaining frosting. The cake should be refrigerated for about 1 hour to make sure the layers are set. Sprinkle chopped walnuts on top of cake, if desired.

2 large Honeycrisp apples, diced
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
⅔ cup water, or as needed
2 tablespoons butter, diced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place diced apples and sweet potatoes in a microwave-safe glass or ceramic loaf pan. Sprinkle cinnamon and nutmeg over apple mixture; add enough water to leave 1/2-inch water in bottom of pan.
  • Cook in microwave until the potatoes have softened are easily pierced with a fork, about 8 minutes; drain. Dot apple mixture with butter.
  • Bake in preheated oven until potatoes and apples are completely softened, about 10 minutes.

3 sweet potatoes, peeled and quartered
½ cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 large cooking apples - peeled, cored and cut into 1/4 inch rings
¼ cup all-purpose flour
¼ cup firmly packed brown sugar
¼ cup butter
¼ cup chopped pecans

Steps:

  • Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
  • In a small bowl, mix brown sugar, cinnamon and nutmeg.
  • Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
  • In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
  • Bake in the preheated oven 30 minutes, or until lightly browned.

1 large apple, peeled, cored and grated
1 (3/4-pound) sweet potato, peeled and grated
1 teaspoon pure vanilla extract
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 350°F. Lightly oil an 8-inch baking pan with spray oil; set aside.
  • In a large bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg; set aside.
  • In a second large bowl, whisk together sugar and egg until well combined.
  • Stir in apple, sweet potato, vanilla and walnuts and then add apple mixture to flour mixture and stir to combine.
  • Transfer batter to prepared pan and bake until cake pulls away from the edges and is deep golden brown, 40 to 50 minutes.
  • Set aside to let cool and then cut into squares and serve.

This is a cake that will win the hearts of carrot cake lovers (and sweet potato doubters!). It is definitely one of my favorite cakes for fall!

Steps:

  • Instructions Preheat the oven 350°F. Prepare two 8-inch round baking pans by coating with cooking spray or butter. Use parchment paper rounds, if desired, or dust with flour. In a medium bowl, whisk together the sugar, flour, baking soda, cinnamon and salt. In a large mixing bowl, beat the eggs until light and frothy. Beat in the oil. Add the flour mixture in two additions, until just incorporated, scraping down the sides of the bowl. Stir in the sweet potato and apple. Pour the batter into the pans and place in the oven. Bake for 30 minutes, or until the cake is springy and a toothpick comes clean. When the cake is baked, remove from oven. Let it sit cool completely. Trim the top of the cake with a serrated knife for a flat surface. Invert onto your wire rack or serving plate. If preparing in advance, wrap the cake well and refrigerate until ready to frost. This can be done a day or two in advance. Make the frosting by whipping together the butter and cream cheese. Add the vanilla. Slowly add the powdered sugar and whisk well. Frost the cake and refrigerate. Remove the cake from the refrigerator about 10-15 minutes prior to serving.

  • Preheat oven to 350°. Combine pie filling, sweet potatoes, cinnamon and pie spice in a greased 13x9-in. baking dish. Sprinkle with cake mix and cheese; dot with butter. 1 1/2 teaspoons baking soda

1/3 cup raisins
1/2 cup butter, at room temperature
1 1/2 cups packed light brown sugar
3 eggs
1 1/2 cups leftover mashed sweet potatoes or 1 1/2 cups mashed candied yams
1/3 cup apple cider or 1/3 cup apple juice

Steps:

  • Preheat oven to 350 degrees. Coat 9x5-inch loaf pan with cooking spray.
  • In bowl, combine flour, pumpkin pie spice, baking soda, baking powder and salt; reserve.
  • In small separate bowl, combine apple and raisins; toss with 2 T. of the flour mixture; set aside.
  • On medium speed, beat butter and brown sugar until combined. On medium-low speed, beat in eggs and potatoes until blended. (Mixture may look curdled.).
  • On low speed, alternately beat in reserved flour mixture with apple cider until blended.
