6 slices prosciutto
2 oranges, zested
2 small oranges, juiced or 1 large orange, juiced
2 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic, peeled
3/4 teaspoon salt
3/4 teaspoon freshly ground black pepper
3/4 cup extra-virgin olive oil
10 to 12 ounces pre-washed spinach

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the prosciutto slices on a baking sheet and bake until just crisp, about 10 minutes. Let cool. Crumble the prosciutto slices into a container and store in the refrigerator.
  • In a blender, combine the orange zest, orange juice, balsamic vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, add the olive oil in a steady stream until combined. Transfer to a container and store in the refrigerator.
  • To serve, put the spinach in a large bowl. Toss with enough of the vinaigrette to coat the spinach. Sprinkle with the crisp prosciutto crumbles, toss again, and serve.

1 bunch romaine, torn
1 package (6 ounces) fresh baby spinach

3 cups shredded Swiss cheese
1 medium red onion, sliced
1/2 pound sliced bacon, cooked and crumbled
1 can (15 ounces) mandarin oranges, drained
POPPY SEED DRESSING:
1/3 cup white vinegar
1/3 cup sugar
1/4 cup finely chopped onion
2 tablespoons Dijon mustard
3/4 teaspoon salt
3/4 cup canola oil
2 teaspoons poppy seeds

Steps:

  • In a small heavy skillet, melt sugar over low heat. Add almonds and stir to coat. Cook and stir 3-5 minutes or until golden brown. Spread onto a greased sheet of foil; break apart if necessary., In a large bowl, combine the romaine, spinach, mushrooms, cheese, red onion, bacon and oranges. , For dressing, in a blender, combine the vinegar, sugar, onion, mustard and salt; cover and process until blended. While processing, gradually add oil in a steady stream. Stir in poppy seeds. , Pour dressing over salad and toss to coat. Sprinkle with sugared almonds. Serve immediately.

Add the almonds and stir to coat. Continue cooking until the almonds are fragrant and golden brown, about 1 minute. 1/2 cup semi-pearled cracked farro
1 shallot, peeled and thinly sliced
1 navel orange
4 ounces spinach, roughly chopped (3-4 cups)
2 tablespoons olive oil
1 tablespoon apple cider vinegar
salt and pepper

Steps:

  • Heat a large pot of salted water on high to boiling. Once boiling, add the farro and cook 16 to 18 minutes, or until tender. Turn off the heat. Thoroughly drain the cooked farro and return to the pot.
  • While the farro cooks, use a peeler to remove the rind of the orange, avoiding the white pith. Mince the rind to get 2 teaspoons of zest (or use a zester). Cut off and discard the remaining peel and pith. Dice the orange, removing any seeds.
  • In a medium non-stick pan, heat 1 tablespoon of olive oil on medium-high heat until hot. Add the shallot; season with salt and pepper. Cook, stirring occasionally, 2 to 4 minutes, or until softened. Add the vinegar and 2 tablespoons of water; season with salt and pepper. Cook, stirring frequently, 30 seconds to 1 minute, or until the liquid is slightly reduced in volume. Transfer the shallot and liquid to the pot of cooked farro.
  • Add the orange, orange zest and spinach to the pot of cooked farro and pickled shallot. Drizzle with olive oil and stir to thoroughly combine; season with salt and pepper to taste. Serve warm.

1 package (10 ounces) fresh spinach, torn
1 can (11 ounces) mandarin oranges, drained
1 cup sliced fresh mushrooms
3 bacon strips, cooked and crumbled
DRESSING:
3 tablespoons ketchup
2 tablespoons cider vinegar
1-1/2 teaspoons Worcestershire sauce
1/4 cup sugar
2 tablespoons chopped onion
1/8 teaspoon salt
Dash pepper
1/2 cup canola oil

Steps:

  • In a large salad bowl, toss the spinach, oranges, mushrooms and bacon; set aside. , In a blender, combine the ketchup, vinegar, Worcestershire sauce, sugar, onion, salt and pepper; cover and process until smooth. While processing, gradually add oil in a steady steam. Serve with salad.

Delicious, refreshing salad that can really be adapted to your tastes. I got this from a friend and have had many rave reviews whenever I serve it.

Number Of Ingredients 12

1/3 cup salad oil
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 dash pepper
1/2 cup slivered almonds
3 tablespoons sugar
4 cups torn spinach (or any combination you'd like of romaine, iceburg, spinach etc.)
1 cup diced celery
1/2 cup sliced green onion (or sometimes I use red onion)
1 (11 ounce) can mandarin orange segments, drained

Steps:

  • In a jar, combine all ingredients for the dressing.
  • Shake well and refrigerate for at least one hour to blend flavours.
  • (I make it the night before) In a heavy skillet, cook almonds and sugar over medium heat until sugar melts and coats almonds, stirring frequently.
  • Cool.
  • Break apart if necessary.
  • In large bowl, combine spinach, celery and green onions.
  • Just before serving, add almonds and orange segments.
  • Toss gently.
  • Pour dressing over salad and toss.
  • P.S.I always double the amount of almonds because they really add a wonderful flavour to the salad-- and because some mysteriously disappear before they make it to the salad!

1 avocado, peeled, sliced
1 small red onion, cut into thin slices
1/2 cup thin matchlike jicama sticks
1/4 cup slivered almonds, toasted
1/2 cup KRAFT Red Wine Vinaigrette Dressing
1 Tbsp. GREY POUPON Dijon Mustard
1/2 tsp. ground black pepper
1 tsp. sugar

Steps:

  • Remove 1 Tbsp. zest from 1 orange; reserve for later use. Peel, then slice all oranges.
  • Combine spinach, orange slices, avocados, onions, jicama and nuts in large bowl.
  • Mix reserved orange zest and remaining ingredients until blended. Add to spinach mixture; mix lightly.
