DOUBLE DUTCH CHOCOLATE COOKIES
Your "chocoholic" friends will love these, and they are very easy to prepare! Around the holidays, I box and present them as Christmas gifts to neighbors.

Steps:
- Sift together flour, cocoa, and baking soda. Set aside.
- Cream butter and sugar with an electric hand mixer. Beat in egg and vanilla extract.
- To the bowl of wet ingredients, add about 1/3 of the dry sifted ingredients and the chocolate chips at a time, making sure they are well incorporated as you go along.
- Drop dough, a tablespoon at a time, on an ungreased cookie sheet. Leave about 2 inches of room between each cookie.
- Bake in a preheated 375 degree oven for 8-11 minutes, or until cookie is set. Cool for one minute on the cookie sheet before transferring cookies to a baking rack to finish cooling. Make sure cookies are thoroughly cool before you put them on a plate or in a cookie jar.
TWO-INGREDIENT PIZZA DOUGH
This beyond-simple dough requires no yeast and no rising time. Just measure, mix, knead and roll out.

- Put a pizza stone or inverted baking sheet on the center rack of the oven and preheat to 450 degrees F.
- Put the flour and yogurt in a large bowl and mix with a fork until a shaggy dough forms. (The dough may appear dry and crumbly at first, but it will come together as you mix it.) Turn the mixture out onto a lightly floured work surface and knead until the dough is smooth and slightly elastic, about 8 minutes, dusting with more flour if necessary. If the dough feels too dry, add water, a tablespoon at a time and continue kneading until it is soft and pliable.
- Divide the dough in half, roll into two balls, and then use a rolling pin to roll the balls out into two 10-inch pizza crusts. Dust the back of another inverted baking sheet or pizza peel with more flour, semolina or coarse cornmeal and place a circle of dough on top.
- Top the dough round with sauce and shredded cheese as desired, leaving a half-inch bare border around the edge. Slide the pizza onto the preheated stone or baking sheet in the oven. (Alternatively, roll out the dough on a baking sheet, top as desired and put the sheet in the oven to bake.) Cook until the crust is golden and the cheese is bubbling, 8 to 10 minutes. Using a large spatula, transfer the pizza to a cutting board and let sit 5 minutes. Repeat with the remaining dough round.
DOUBLE DUTCH PIZZA COOKIES
A really good cookie to take for a carry in..easy to throw together and can make with ingredients on hand..I like to use dried fruit, chopped finely...and when "cookie" is almost completely cooled..drizzle with either white or milk chocolate, which has been mixed with a small amount of canola oil and placed in a microwave proof resealable plastic bag..melt, then snip the corner and drizzle over top of cookie and toppings...

- Beat together margarine and sugar until light and fluffy.
- Blend in egg and vanilla.
- Add combined flour, cocoa, salt and soda; mix well.
- Stir in 1/2 cup of M & M's candy and nuts.
- Place dough on foil lined lightly greased 12-13" pizza pan.
- Spread to within 1 1/2" from edge of pan.
- Sprinkle cookie with remaining M&M candies, nuts coconuts, and mini marshmallows.

COOKIE DOUGH PIZZA
We've seen pizza in all sorts of varieties, but this has to be our favourite. Top your cookie dough pizza base with any treats that take your fancy

- Heat the oven to 180C/160 fan/ gas 4. Beat the butter and sugars together in a large bowl using an electric whisk or table top mixer. Pour in the beaten eggs and vanilla, beating well until combined.
- Sift in the flour and salt and fold until evenly combined. Scatter over the chocolate chips and stir until they are rippled throughout the dough.
- Roll into a big round cookie and place onto a large baking sheet covered with parchment. If the dough feels very soft at this stage pop it in the fridge for 30 mins to firm up. Bake in the preheated oven for 25 mins until golden at the edges and still a little wobbly in the middle. Leave to cool for a couple of mins before topping. Spread the melted chocolate over the cookie, sprinkle with giant chocolate buttons, mini marshmallows and strawberries. Cut into about 15 slices and serve while it is still a little warm.

Steps:
- Grease two 6-inch round or 1 12-inch round pizza pan.
- Preheat oven to 350°F.
- Cream together butter, and sugars together with electric mixer.
- Add egg and vanilla and blend well.
- Combine flour, soda and salt; gradually add to butter mixture, beating well after each addition.
- Stir in 1/2 cup each of semisweet and white chocolate morsels.
- Spread dough evenly onto greased pizza pans.
- Bake at 350°F for 20 to 25 minutes or until lightly browned.
- Working quickly, sprinkle crust with remaining semisweet and 1/2 cup of white chocolate morsels; drop peanut butter by tablespoonsfuls onto crust.
- Let stand for 5 minutes or until morsels and peanut butter are softened; gently spread evenly over crust.
- Decorate with desired toppings.
- Gently melt remaining 1/2 cup white chocolate morsels in microwave--watch closely and stir often--it doesn't take long!
- Spoon into zip-lock bag and snip of small corner to drizzle over top of"pizzas".
- Let chocolate set up before serving.

- Preheat oven to 350.
- Place sugar and butter in mixing bowl and beat until well-creamed.
- Add corn syrup, orange juice, vanilla, and egg and beat until well combined.

- Beat margarine and sugars until creamy. Add in egg and vanilla and beat. Add in dry ingredients and beat until smooth.
- Stir in apples and oats. Spread evenly on generously greased pizza pan. Bake 20 to 25 minutes or until golden. Remove from oven.
- While the crust is hot sprinkle with the butterscotch chips. Let stand until soft then spread. Sprinkle 1 cup chopped pecans on top of the butterscotch.
- Sift powdered sugar, add milk. Mix until smooth. Drizzle on top of pizza cookie.
