ORANGE PECAN WAFFLES
Orange flavored waffles. I found this recipe in a Round Waffle Bakers leaflet. I have not tried this recipe, but I'm posting this for safe keeping. This recipe did not give serving size or cook time. When I made this recipe I used Splenda in place of the sugar, the butter, I only used the grated zest of one orange, I also added 1 scoop of protein powder. I thought these were a bit heavy, so is the batter and when I scooped out the batter due to it being so thick I had to spread it. When I made these waffles I got 6 square waffles. Overall I thought these had great flavor.

ORANGE NUT WAFFLES WITH ORANGE SYRUP
All thoughts of calories must be set aside while you plunge into these interesting special-day waffles. Orange Nut Waffles with Orange Syrup were originally printed in Bon Appetit (December 1981). I haven't tried these waffles yet but am planning on trying this very soon. When I make them I will be omitting the liquor in the syrup, replacing with juice.

Steps:
- Preheat a waffle iron according to the manufacturer's instructions. Into a medium bowl, sift the flour, baking powder, and salt.
- In a separate bowl, beat together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add the milk, melted butter, and vanilla extract and whisk to combine. Add the flour mixture to the egg-milk mixture and whisk just until blended. Do not overmix. In a third bowl, beat the egg whites with an electric mixer until soft peaks form, about 1 minute.Using a rubber spatula, gently fold the egg whites into the waffle batter, being careful not to overmix. Coat the waffle iron with nonstick cooking spray, if required, and pour enough batter in the iron to just cover the waffle grid. Close and cook as per the manufacturer's instructions until golden brown, 2 to 3 minutes. (Do not open the waffle iron for at least 1 minute.) Repeat with the remaining batter.
- Serve immediately with Strawberry Syrup spooned over the top of each waffle.
- In a medium saucepan, combine all the ingredients and bring to a boil. Lower the heat and simmer until the strawberries are soft and the syrup is thickened and reduced by one-third to one-half in volume, 15 to 18 minutes.
- Remove from the heat and let cool to room temperature before serving. (If thinner syrup is desired, strain the hot syrup through a fine mesh strainer into a clean container and let cool.)

- sift or whisk the oat flour, almond flour, cacao powder, baking powder, and salt together in a large bowl. I recommend sifting at least the cacao powder and almond flour, to eliminate any large clumps.
- form a well in the center of the bowl, then add in the non-dairy milk, maple syrup, orange zest, and optional vanilla. Mix well, then fold into the dry ingredients. Continue to mix the batter until no large clumps remain.
- Pour 1/2 cup of batter into each waffle “segment” of your iron, then close and cook for 4 to 5 minutes; cook time will depend on the heat of your iron as well as your preference on doneness. Once the waffles have cooked according to your liking, carefully remove them from the waffle iron with a rubber spatula and transfer to a cooling rack. Repeat with the remaining batter.
