1 cup sugar, divided
1/2 cup sliced almonds
2 large eggs, room temperature
3/4 cup butter, melted
1 teaspoon almond extract
1 cup all-purpose flour
1 tablespoon confectioners' sugar

Steps:

  • In a small bowl, combine the cranberries, 1/2 cup sugar and almonds. Transfer to a greased 11-in. fluted tart pan with a removable bottom. Place on a baking sheet., In a small bowl, beat the eggs, butter, extract and remaining sugar. Beat in flour just until moistened (batter will be thick). Spread evenly over berries. , Bake at 325° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack. Dust with confectioners' sugar. Refrigerate leftovers.

1 cup orange marmalade
1/4 cup sugar
1/4 cup all-purpose flour
4 cups fresh or frozen cranberries, thawed
2 sheets refrigerated pie crust
1 large egg white, lightly beaten
1 tablespoon coarse sugar

Steps:

  • Preheat oven to 425°. In a large bowl, mix marmalade, sugar and flour; stir in cranberries., Unroll 1 pie crust onto a parchment-lined baking sheet. Spoon half of the cranberry mixture over crust to within 2 in. of edge. Fold edge over filling, pleating as you go and leaving a 5-in. opening in the center. Brush folded crust with egg white; sprinkle with half of the coarse sugar., Bake 18-22 minutes or until crust is golden and filling is bubbly. Repeat with remaining ingredients. Transfer tarts to wire racks to cool.

FILLING:
1 to 1-1/4 cups sugar
2 tablespoons biscuit/baking mix
2-1/2 cups fresh or frozen cranberries
1/3 cup orange juice
2 tablespoons butter

Steps:

  • In a bowl, combine biscuit mix, sugar and water. With lightly floured hands, press mixture onto the bottom and up the sides of an ungreased 9-in. fluted tart pan with a removable bottom; set aside., In a saucepan, combine sugar and biscuit mix. Add the cranberries, orange juice and butter. Cook and stir until mixture comes to a boil. Cook 1-2 minutes longer or until thickened and bubbly. Pour over crust. 1 cup unsalted butter, softened
1/4 cup granulated sugar
3/4 cup finely chopped pecans
1 egg
1 egg yolk
1 teaspoon salt
2 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup cornstarch
4 egg yolks
2 cups milk
1/2 teaspoon vanilla
1 cup granulated sugar
2/3 cup currant jelly
1 orange, zested
1 pound cranberries

Steps:

  • Nut Crust: Mix butter, sugar, pecans, whole egg, egg yolk, and salt with a wooden spoon until barely blended. Add flour and knead until a small ball forms. Wrap in plastic and chill about 4 hours.
  • After chilling dough, preheat oven to 350 degrees F. Roll chilled dough to about 1/4 inch thickness or divide into 8 parts and press into 8 individual tart pans, 3-inch round x 1 inch deep. The crust should be thick.
  • Bake empty tart shells 12 to 15 minutes, or until edges begin to brown. Set aside to cool. Meanwhile make pastry cream, and prepare berries.
  • Pastry Cream: Mix 1/4 cup sugar and cornstarch in a bowl until smooth. Add egg yolks and mix until a paste is formed. Stir in 1/2 cup milk.
  • Combine remaining milk and sugar in a sauce pan and bring to a boil. Pour hot mixture into mixture in bowl, whisking constantly. Pour back into pan.
  • Cook over moderate heat, stirring constantly, until smooth and thick. Remove from heat and stir an additional minute. Stir in vanilla and transfer to a bowl. Cover with buttered parchment paper touching top and chill a minimum of 2 hours or as long as 2 days.
  • Cranberries: Combine sugar, jelly and orange zest in sauce pan and boil until thick, about 5 minutes. Fold in cranberries, and cook another 1 or 2 minutes. Remove from heat and allow to cool, then assemble tart.
  • To Assemble: Spread prepared nut crust with a layer of chilled pastry cream and top with cooled cranberries. Serve chilled.

Steps:

  • Topping;.
  • Pour 1/4 cup cranberry juice into small bowl;sprinkle gelatin over.
  • Let stand until softened,about 15 minutes. Combine 1/4 cup cranberry juice, cranberries and the next 5 ingredients in a medium saucepan;bring to boil, stirring until sugar dissolves.
  • Reduce heat to medium; simmer until cranberries are tender but still plump,about 5 minutes.
  • Strain into bowl;set cranberries aside.
  • Add gelatin mixture to hot juice in bowl; stir until gelatin dissolves.
  • Stir cranberries back into juice.
  • Chill until cranberry mixture is cold and slightly thickened, at least 8 hours or overnight.
  • Can be made 2 days ahead,cover and chill.
  • Stir chopped crystallized ginger into cranberry mixture.
  • Crust:.
  • Preheat 350°F; position rack in center of oven.
  • Combine chocolate wafer cookies crumbs,sugar and salt in medium bowl;add 5 tablespoons melted butter and stir until crumbs feel moist when pressed together with fingertips.
  • If dry add 1 more tablespoon of melted butter.
  • Press crumbs onto bottom and sides of 9 inch tart pan with removable bottom.
  • Bake until crust begins to set and slightly crisp, about 14 minutes.
  • Press with spoon if crust puffs.
  • Cool crust completely before filling.
  • Mascarpone Filling:.
  • Beat all ingredients except ginger in medium bowl just until thick enough to spread.
  • DO NOT OVERBEAT OR MIX WILL CURDLE!
  • This can be made 1 day ahead,cover and chill.
  • Spoon cranberry mixture evenly over mascarpone filling.
  • Chill at least 2 hours and up to 6 hours.

1 cup raw almonds
1 cup all-purpose flour
½ cup packed light brown sugar
½ teaspoon kosher salt
¼ teaspoon ground ginger
¼ teaspoon ground cloves
6 tablespoons unsalted butter, softened
12 ounces fresh or frozen cranberries
1 cup packed light brown sugar
¾ cup orange liqueur (such as Grand Marnier®)
¼ teaspoon kosher salt
½ cup unsalted butter, softened
2 large eggs
2 large egg yolks
2 teaspoons grated orange zest

Steps:

  • To make the crust, preheat the oven to 300 degrees F (150 degrees C). Spread almonds onto a rimmed baking sheet.
  • Toast almonds in the preheated oven until fragrant and skins have cracked, about 15 minutes. Let cool, about 5 minutes.
  • Combine almonds, flour, brown sugar, salt, ginger, and cloves in a food processor; pulse until mixture resembles coarse cornmeal, about 12 (1-second) pulses. Add softened butter and pulse until combined, about 5 (1-second) pulses.
  • Press dough into a 10-inch tart pan, using about two thirds for the sides and one third for the bottom. Prick the bottom with a fork and freeze for at least 30 minutes, or up to 1 week.

Place saucepan back over medium-low and cook, whisking constantly, until bubbly and thickened, 5 to 10 minutes. Stir in orange zest. If using immediately, pour into a shallow dish and let cool slightly, about 10 minutes. If making ahead, cool to room temperature and then cover with plastic wrap pressed tightly to the curd's surface before refrigerating.
  • Pour cooled cranberry curd into prebaked crust and smooth top with an offset spatula. Refrigerate until set, about 3 hours. Store at room temperature for up to 2 days.

Steps:

  • Preheat oven to 350 degrees.

  • Cook, uncovered over medium heat until the cranberries pop and the mixture thickens just a bit, stirring constantly to prevent scorching.

  • Turn under edges and bake for 5 minutes.
  • Spoon cream cheese mixture into phyllo crust, spreading evenly.
  • spoon Cranberry mixture over cream cheese mixture, spreading evenly.
  • Using a fork marble slightly but dont go too deep.
  • Bake for 25 minutes.
  • Let cool for 1 hour on a wire rack.
  • Cover and chill for 4 hours.
  • Remove and drizzle on both kinds of melted chocolate.
  • Garnish with candied orange peel.
  • Serve.
