This is the ultimate Western omelet! You can even put red bell peppers and sausage in it, if you like.

2 teaspoons butter, divided
⅓ cup sliced fresh mushrooms
¼ cup chopped green bell pepper
2 green onions, sliced on the bias
¼ cup cooked ham strips
salt and ground black pepper to taste
2 eggs

Steps:

  • Melt 1 teaspoon butter in a small skillet over medium heat. Add mushrooms, bell pepper, and green onions; cook until tender, about 5 minutes. Stir in ham until heated through, about 1 minute. Season with salt and pepper. Set filling mixture aside in a small bowl and keep warm.
  • Beat eggs together in a bowl; season with salt and pepper.
  • Heat the same skillet over medium-high heat. Add remaining 1 teaspoon butter; heat until foaming. Pour in eggs and cook for 30 seconds. Lift the edges of the omelet so that the uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set but still moist and soft, about 2 minutes.
  • Spread the filling over one side of the omelet. Fold the other half over the filling and slide omelet onto a plate.

From "Prairie HOme Cooking" a book I picked up at the library but its on my Christmas wish list. Make sure to use the SWEET Hungarian paprika not the hotter more bitter kinds.

5 tablespoons butter
1 medium yellow onion, chopped
1 cup sliced mushrooms
1/2 cup sweet Hungarian paprika
6 eggs, beaten
1/2 teaspoon salt
1/2 teaspoon ground pepper
sour cream
chopped fresh parsley
green onion

Steps:

  • Heat butter in a large skillet over medium heat.
  • Add the onion and saute til golden, 8-10 minutes.
  • Add mushrooms and paprika.
  • Cook, stirring occasionally til mushrooms start to wilt about 5 minutes.
  • Whisk egggs, salt and peppers in a small bowl.
  • Reduce heat to low.
  • Pour in the egg mixture over the top of veggies in the skillet.
  • Cook omelet slowly for about 10 minutes, or until done enough to flip over without running.
  • Flip and cook 3-4 minutes on the other side.
  • Cut omelet into wedge and serve with a dollop of sour cream and sprinkling of parsley and green onion.

5 tablespoons butter
1 medium onion, chopped
1 cup mushroom, sliced
6 eggs, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sweet paprika, Hungarian

Steps:

  • Sauté onion in butter over medium heat in a large skillet until golden brown, 10 minutes.
  • Add mushrooms and paprika and cook until the mushrooms are soft, about 5 minutes.
  • Reduce heat to low.
  • Whisk eggs, salt and pepper and add to pan. Cook slowly for about 10 minutes.
  • Lift and allow uncooked portion to flow underneath until all of the uncooked egg has been moved.
  • IF YOU WOULD LIKE TO BROWN THE OTHER SIDE:.
  • Using a plate the size of the pan, carefully slide the omelet onto the plate. Turn skillet over and place on top of the plate. Turn skillet and plate at the same time, placing skillet back on burner while keeping plate on top until in place (as though it were a pot lid). Remove plate and cook a few minutes to brown that side OR place under broiler for a few minutes.
  • You will have circular omelet, not a half moon shape. Do NOT attempt top FOLD in half.
  • Cut into wedges and serve with a dollop of sour cream and chopped green onions.

Steps:

  • Heat 1 teaspoon olive oil in a saucepan and sauté the onion and pepper gently until soft. Add the tomatoes and paprika and cook gently for a further five minutes until the mixture is soft and pulpy. Add a little salt to season. Heat the remaining oil in an omelette pan. Beat two tablespoons of water into the eggs to lighten the mixture and then use to make an omelette. Fill the omelette with the tomato mixture and serve sprinkled with chopped parsley or chives.

800 g stewing beef, cubed
salt
pepper
800 g onions, chopped
1 medium potato, peeled and chopped
4 tablespoons vegetable oil
1 tablespoon sweet paprika
1 teaspoon hot paprika
1/2 teaspoon cumin
2 tablespoons tomato puree
1/2 liter beef stock

Steps:

  • Season meat with pepper and salt.
  • Heat the oil in a large pan and glaze the onions, add the beef and brown.
  • Add the spices, potato and tomato puree. Cook for 5 minutes.
  • Add the beef stock and leave to simmer for ar least 1 1/2 hour, stirring it from time to time.
  • Serve with boiled potatoes, pasta or knödel.
