ORANGE-GLAZED GRILLED ACORN SQUASH

4 acorn squash, halved lengthwise, seeds and membranes removed
1/4 cup melted butter
Salt and freshly ground pepper
4 cups fresh orange juice
1/2 cup light brown sugar
4 whole allspice berries
1 stick cinnamon

Steps:

  • Preheat the oven to 350 degrees F.
  • Brush the cut side of each acorn squash with the butter and sprinkle with salt and pepper. Place squash, cut-side down, on a baking sheet and bake until almost tender, about 30 minutes.
  • While the squash is baking, combine the orange juice, brown sugar, allspice, and cinnamon in a medium saucepan. Cook over high heat until reduced to 1 cup, stirring often.
  • Preheat the grill to medium-high. Place the squash, cut side up, on the grill, and brush with the orange glaze. Cook for 5 minutes, turn over with tongs, and grill for 5 more minutes, or until tender and glaze is caramelized. Remove from the grill and brush with more of the glaze. Serve warm.

2 cups orange juice
3/4 cup hoisin sauce*
2 large garlic cloves, minced
1/2 teaspoon Chinese five-spice powder**
2 teaspoons minced peeled fresh ginger
3 1 1/2-pound acorn squash, each cut into 8 wedges, seeded
3 tablespoons oriental sesame oil
1 cup chopped green onions
2 1/2 teaspoons toasted sesame seeds
*Available at Asian markets and in the Asian foods section of some supermarkets.
**Chinese five-spice powder is available in the spice section of most supermarkets.

Steps:

  • Combine first 4 ingredients in heavy medium saucepan. Boil over medium heat until reduced to 1 1/3 cups, about 30 minutes. Pour into bowl. Mix in ginger. Cool. (Can be made 1 day ahead. Cover and chill.)
  • Preheat oven to 400°F. Place squash on baking sheet. Brush squash on all sides with sesame oil. Turn squash, 1 cut side down, and bake 15 minutes. Turn squash, skin side down. Brush squash with some hoisin mixture. Bake until tender and well glazed, brushing occasionally with some hoisin mixture, about 50 minutes.
  • Preheat broiler. Generously baste squash with hoisin mixture. Sprinkle with salt. Broil until bubbling, about 2 minutes. Baste with any remaining hoisin mixture. Sprinkle with onions and sesame seeds.

1 cup dates, coarsely chopped
1/2 cup butter
1 cup granulated sugar
1/3 cup tahini
3/4 cup brown sugar, packed
3 eggs
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1 cup plain yogurt
1/2 cup pistachios, coarsely chopped
1/4 cup orange juice
1 tablespoon orange zest, finely grated
2 tablespoons butter
1 ounce bittersweet chocolate
3 tablespoons orange juice
2 tablespoons heavy cream
1 1/4 cups powdered sugar, sifted
1/2 teaspoon vanilla
1 tablespoon orange zest, finely shredded

Steps:

  • For the cake, preheat oven to 350 degrees; grease and lightly flour a 10 cup bundt pan.
  • Chop the dates in food processor by pulsing several times; place in a small bowl and cover with hot water; allow to stand while preparing remaining cake ingredients.
  • In medium mixer bowl, combine the flour, salt, baking powder, baking soda, ground cloves and cinnamon; set aside.
  • In large mixer bowl, beat the butter and granulated sugar until light and fluffy; beat in brown sugar, tahini and while continuing to beat, add eggs 1 at a time.
  • Gradually beat in flour mixture, alternating with yogurt; beat for 2 minutes on medium speed.
  • Stir in 1/4 cup of orange juice and 1 tablespoon zest, drain the dates and stir into batter until evenly distributed; add chopped nuts and stir to distribute.
  • Turn into prepared pan and bake for 40 to 45 minutes or until tester comes out clean when inserted off center; cool 10 minutes and turn out of pan onto plate; allow too cool completely before glazing.
  • For the glaze, in a small saucepan, add the butter, chocolate, cream and orange juice; cook over low heat, stirring constantly, until the mixture thickens; remove from heat.
  • Stir in vanilla and gradually add confectioners' sugar; beating until smooth and thickened.
  • Stir in orange zest and pour evenly over cake, allowing glaze to run down sides, scrape up excess that drips into the center and round edges, pour over cake.

  • Preheat oven to 400 degrees. Line two rimmed baking sheets with aluminum foil, and brush with oil.
  • Lay squash pieces on baking sheets. Season with salt and pepper; sprinkle squashes evenly with half the sugar. Roast until sugar has melted, about 5 minutes.
