SWEET POTATO FRIES WITH CHIPOTLE DIPPING SAUCE
Perfectly crispy baked sweet potato fries with chipotle dipping sauce is a delicious side dish

Steps:
- Preheat the oven to 425 degrees F.
- Place cut sweet potatoes into a large mixing bowl, followed by the rest of the ingredients for the fries. Use your hands to toss everything together until well coated.
- Spread fries over 1 or 2 large baking sheets, giving the potato wedges plenty of room so that they bake evenly. Place on the center rack of the oven and bake for 25 to 30 minutes, flipping the fries half-way through, or until fries are golden brown and crispy.
- Remove tray from the oven and allow fries to cool on the baking sheet for 5 minutes before serving with chipotle dipping sauce (instructions below)
- Add all ingredients for the chipotle dipping sauce to a small blender and blend until completely smooth. Use immediately or refrigerate in an air-tight container until ready to use. Sauce will keep in the refrigerator for 7 days.

OVEN-BAKED SWEET POTATO FRIES WITH HOMEMADE RANCH DRESSING
Steps:
- Preheat the oven to 450 degrees F.
- Put the sweet potatoes in a large bowl. Add the olive oil and toss to coat. Stir together the cornstarch, paprika, garlic powder, cayenne, 3/4 teaspoon salt and a few grinds of black pepper in a small bowl. Sprinkle the spice mixture over the sweet potatoes and toss to coat.
- Arrange the sweet potatoes on a baking sheet in a single layer, leaving as much space between the fries as possible. Bake, turning once about three-quarters of the way through, until the edges are browned and crispy, 20 to 25 minutes. Cool 5 minutes before serving.
- Serve the warm fries with the Ranch Dressing.
- Add the buttermilk, mayonnaise, sour cream, vinegar, onion powder, garlic, 1 teaspoon salt, 1/4 teaspoon black pepper and hot sauce to a food processor. Pulse to combine until smooth. Add the parsley and dill and pulse to incorporate, 4 to 5 times. Season to taste with salt and pepper. Pour into a serving bowl.

- Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
- Peel the sweet potatoes and cut them into 1/2-inch thick wedges.
- Put the potatoes in a large bowl and drizzle with the oil. Season with salt, pepper and your choice of other spices, if using, and toss to coat. Arrange the potatoes in a single layer on the prepared baking sheet.
- Roast the potatoes, flipping once if their bottoms darken quickly, until tender and crispy, about 20 minutes, depending on their size. Serve with ketchup and/or ranch, if desired.
BAKED SWEET POTATO FRIES WITH CHIPOTLE RANCH DRESSING

- To make dressing: Place all ingredients except the buttermilk in the blender. Blend for 10 seconds. Check consistency and blend in buttermilk (less buttermilk for dipping, more for dressing). Store in an air-tight jar in the fridge for a week or more.
- To make the fries: Coat a baking sheet with 3 tablespoons of oil, adding the last tablespoon if necessary.
- Peel and slice the sweet potatoes into 1/4 inch sticks (no longer than 5 inches long).
- In a large zipper bag mix the dry spices together. (I skipped the zipper bag and mixed everything in a large bowl). Add the sweet potato fries and shake the fries to coat evenly (I added a tad bit of oil to the fries in the bowl and the spices stuck nicely).
- Carefully put the fries onto the baking sheet and bake for 20 minutes, flipping halfway through.
- Turn on the broiler for the last 1 to 2 minutes, just until the tips of the fries begin to turn black. Don't walk away--they can burn in no time.
- Transfer to a paper towel-lined plate in a single layer until ready to serve. (I also skipped the paper towel because they weren't greasy and I thought it was unnecessary. Plus they disappeared so fast that was a pointless step in my opinion.).

SWEET POTATO FRIES
I love this recipe. I made it up from a version I had at a restaraunt. Great for kids too! I choose to dip into ranch dressing. I know it may sound strange, but try it, YUM!

- Put cut fries into large ziploc bag with olive oil, put in salt, garlic and cinnamon and shake to coat.
- Place fries onto baking sheet leaving space between fries.
- Put in oven for 10 minutes and then flip them over.
- Place back in for 10 more minutes.
- They should be soft on the inside and browned on the outside.
- Let cool for 5 minutes.
- You may also use regular potatoes or 1/4 packet taco seasoning to alter taste to your liking.

Taste of 2008! This is a nice change from regular fries and these definitely will tempt your taste buds. Served along with a nice spicy chipotle mayonnaise it satisfies many cravings! Although these fries are done in the oven if you prefer you can deep fry for a more crispy effect. Enjoy!

- Preheat oven to 425°.
- Mix together seasoning. In a bowl combine 1 Tbsp oil and 2 tsp seasoning per sweet potato. Toss and place on greased baking pans. Making sure that potatoes are spread out in pan. Bake for 30-40 minutes turning every 10 minutes.
- Serve with chipotle mayonnaise to prepare mayonnaise combine mayonnaise,* chipotle pepper, 1 tbsp adobe sauce and 2 drops Tabasco sauce. (*I use Chipotle peppers in a can that are in the adobe sauce already, found usually in Mexican food aisles of the supermarket).
- *Save remaining seasoning mixture in ziploc bag for next time.
