8 ounces frozen orange juice concentrate
1-ounce sugar-free, fat-free vanilla pudding mix (recommended: Jell-o)
1 (4-ounce) orange cream yogurt (recommended: Yoplait Orange Creme)
1 cup lowfat milk
1 cup vanilla flavored vodka
1/4 cup orange flavored liqueur
2 cups ice cubes

Steps:

  • Combine all ingredients in a blender. Blend until smooth. Divide among glasses.

MUSTARD SEED TUILLE WITH RASPBERRY SORBET



Mustard Seed Tuille with Raspberry Sorbet image

Number Of Ingredients 10

8 ounces softened butter, plus more for greasing baking sheet
10 ounces sugar
4 egg whites
8 ounces cake flour
2 tablespoons brown mustard seeds
16 ounces fresh or frozen raspberries
8 ounces sugar
1/2 cup water
1 lemon, juiced
1 egg white, optional

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium size bowl, combine the butter and sugar, and beat until fluffy. Add the egg whites one at a time, beating thoroughly before adding the next. Fold in flour and mustard seeds. Mix well, and refrigerate.
  • Grease baking sheet with butter. Drop spoonfuls of batter onto baking sheet, and smooth into desired shape. Bake for 5 minutes, until golden brown. Remove from the baking sheet with a pallet knife, and shape over a bottle turned on its side. Let tuilles harden over bottle, remove, and set aside.
  • To make the raspberry sorbet, puree raspberries and strain through a sieve. Combine the sugar and water in a saucepan and stir over gentle heat until sugar has dissolved. Turn heat up, and boil for 5 minutes until liquid forms a sticky syrup. Once the syrup has cooled, add the puree and the juice of 1 lemon. Freeze in an ice cream maker for 20 minutes. Alternatively, place mixture in a bowl and put in freezer. When edges begin to freeze, whisk an egg white, and fold into the partially frozen mixture. Return to freezer until frozen.

GRAPE ROSEMARY MARTINI

2 ounces vodka
1 small sprig rosemary, plus additional for garnish
1 ounce freshly made green California grape juice*
Ice
Green California grapes for garnish

Steps:

  • Combine the vodka, rosemary, grape juice and ice in a cocktail shaker and shake hard. Strain into a martini glass. Thread 1 grape on a rosemary sprig and place in glass. Serve.
  • *To make fresh grape juice, puree 1 cup seedless green California grapes in a food processor or blender and strain through a fine sieve. It will make about 1/3 cup.

1/4 pound butter
1 cup all purpose flour
1 cup chopped almonds
Zest of 1 orange and juice, reserved
Black sesame seeds
1 tablespoon Cointreau
2 bananas
1 pint strawberries
2 cups vanilla yogurt
1/2 cup orange juice
1/4 cup pineapple juice
Whipped cream for garnish
Martini glasses

Steps:

  • Preheat oven to 350 degrees F.
  • Cream sugar and butter together in a mixer. Gradually add flour and continue to mix for 2 to 3 minutes until thoroughly combined. Add remaining ingredients and mix just until blended.
  • Apply an even coating of nonstick spray to a sheet pan to prevent sticking. Drop mixture by tablespoons onto the sheet tray. Dip your fingers into cold water and pat down gently into a very thin layer.
  • Bake until lightly brown around edges and crisp for approximately 5 to 8 minutes. Remove with a spatula, take caution, these will be very hot! If you want, you can curve
  • cookies by laying them over a bottle until they set up (it only takes a few seconds).
  • In a blender combine sliced bananas, sliced strawberries, yogurt and juices. Pour into martini glasses and top with whipped cream and Orange Sesame-Seed Tuilles for garnish.

  • In a food processor, finely grind the sesame seeds. In a medium bowl, whisk the ground sesame seeds with the sugar and flour. In a small bowl, whisk the butter with the sesame paste until smooth. Stir the orange and lemon juices into the flour mixture, then stir in the sesame butter until the batter is smooth. Cover and let stand at room temperature for 1 hour.
  • Preheat the oven to 350°. Line 2 large cookie sheets with parchment paper. Scoop tablespoons of batter onto the prepared sheets, spacing them 2 inches apart. Using an offset spatula, lightly spread the batter into 3-inch rounds of even thickness. Sprinkle a pinch of black sesame seeds on each tuile.
  • Bake the tuiles for about 10 minutes, until evenly golden. Remove from the oven and let the tuiles stand until firm, about 3 minutes. Using a metal spatula, transfer the tuiles to a rack to cool completely; if the tuiles stick to the pan and become too brittle to transfer, simply reheat them in the oven until pliable. Repeat with the remaining batter and black sesame seeds.
