OOEY GOOEY SAUSAGE MELT SANDWICH
This is a great fall off the diet sandwich...I have done so good as of late, so I decided I'd make something to satisfy my cravings, and reward myself, and yum!...did I ever!!...this sandwich was delicious! Ooey Gooey fresh mozzarella, lots of mushrooms, garlic and onions sauteed in wine, topping a nice juicy hot sausage...

- 1. In a medium sized bowl, add sausage and season with salt, pepper, thyme and basil. Stir to combine, add a few tablespoons chopped onion. Divide meat in half. Pat into 2 oval shaped patties.
- 2. In a medium sized heavy skillet ( I used my cast iron skillet.) Over medium - high heat, fry sausage 4 - 5 minutes per side or until no longer pink and browning well. Drain sausage on paper towels. Set aside.
- 3. In the same skillet add about 2 tablespoons olive oil and saute the onions, mushrooms, worcestershire sauce and garlic, until onions are translucent and mushrooms are browning. Salt and pepper as well.
- 4. Once veggies are cooked, add sherry and 1 teaspoon flour. Stir until well blended and sauce begins to thicken some. Set aside.
- 5. Place about 1 tablespoon butter in another skillet over medium to medium high heat. Swirl butter to coat bottom of skillet and add one slice of bread. Place sausage patty on top, then 1/2 the onion and mushroom mixture. Add a couple slices of mozzarella and continue cooking until bread is golden brown ( about 2 minutes ) Carefully , move sandwich enough to add another Tablespoon of butter and place top slice of bread on top of the mozzarella cheese.
- 6. Carefully flip the sandwich over to brown the other side. Remain cooking until other side is crispy and brown and cheese is thoroughly melted.
- 7. Cut sandwich in half and add your favorite condiments. I used mayonnaise and mustard. Repeat steps for other sandwich. Enjoy this yummy sandwich.
OOEY-GOOEY CINNAMON BUNS
These buns are sooo good hot from the oven when they're gooey and warm.

- In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
- In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
- Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

OOEY-GOOEY SANDWICH
The name says it all. And the thicker you spread the mixture the more ooey and gooey it gets, which is my own personal preference. This makes for a nice picnic or in my case a potluck in which everyone enjoyed. The spread doesn't have to be eaten all at once, so refrigerate whatever is leftover or want for later on.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine processed cheese food and diced tomatoes and green chiles in a saucepan over medium heat; cook and stir until cheese dip is smooth, about 5 minutes.
- Spread a layer of cheese dip in the bottom of a 9x13-inch baking dish; top with a layer of lasagna noodles and chili. Continue layering with remaining cheese dip, noodles, and chili. Top the final layer with Cheddar cheese. Cover dish with aluminum foil.

OOEY GOOEY GRILLED CHEESE
Just thinking about this killer grilled cheese makes my stomach growl! I came up with this idea after eating something similar at a soup and salad bar. Ideally this is made as a panini but works just as well with plain old white bread. Another good idea is to make this in a George Foreman grill.

- Butter one side of each slice of bread.
- Heat a skillet or grill, your choice, to medium heat.
- Spread softened cream cheese onto one slice of bread (not the buttered side) top with muenster cheese and assemble sandwich buttered sides out.
- Place on skillet or grill.
- Cook until both sides are golden brown and cheese is melted.
- Enjoy!

- Preheat a large grill pan or griddle over medium heat. Butter one side of each slice of bread. When the griddle is hot, lay the bread slices buttered side up and toast until just lightly browned. Flip the slices so they're buttered side down. Immediately lay one slice of cheese on each slice of warmed bread. Let the bread grill while you work on the sausage. When the cheese begins to melt, turn down the heat to medium-low so that the bread doesn't burn.
- Meanwhile, heat a small skillet over medium heat. Add the sausage and onions, and saute until the sausage is completely cooked through. Whisk the eggs, adding cream or milk (if using), then pour into the pan with the sausage. Turn heat to medium-low. Use a spatula to move the eggs around the pan, gently mixing in the sausage and onions while making sure the eggs are scrambling and not sticking to the pan. Season with a big pinch of salt and pepper.
- Divide the eggs and sausage mix into 4 servings, and transfer each serving to a slice of bread. Top the eggs and sausage with a slice of bread (cheese side down) to create four sandwiches, and press gently with a spatula to help the melted cheese glue the sandwich together. Check the underside of the sandwich to make sure it's nicely golden and toasted.
- Serve immediately. Try to restrain yourself from making more. Or don't. It's comfort food season, people.
KALE AND SAUSAGE GRILLED CHEESE SANDWICH - OLIVIA'S CUISINE

- Heat a large sauté pan, or skillet, over medium low heat. Add 1 tablespoon of butter and, once it melts, add the sliced onions and stir them gently to coat with butter. Cook for about 10 minutes, stirring often, or until they are soft and start to get golden brown. Add the balsamic vinegar and scrape any browned bits from the bottom of the pan. Continue cooking for an extra 5 to 10 minutes, or until they are caramelized and golden brown! Season with salt and pepper and reserve.
- In that same pan, over medium heat, heat the olive oil and cook the sausage, breaking it apart with a wooden spoon, until it is no longer pink. Then, add the kale leaves and continue cooking until the sausage is cooked through and the kale has softened. Season with salt and pepper and reserve.
- To assemble the grilled cheese sandwiches, spread the remaining butter evenly on all bread sides.
- Layer each bottom with cheese, sausage and kale mixture, caramelized onions and finish with some more cheese. Top each sandwich with its top bread slice and place them in a sauté pan, over medium heat. Grill for 2 to 3 minutes or until the bread is golden brown. Flip and cook on the other side for 2 more minutes or until golden brown and the cheese has melted.
