1 tablespoon canola oil
1 large onion, diced (about 2 cups)
1 medium red bell pepper, seeded and diced (about 1 cup)
2 medium carrots, diced (about 1 cup)
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1 clove garlic, minced (about 1 teaspoon)
1 teaspoon peeled and grated fresh ginger
1 large sweet potato, peeled and cubed (2 cups)
6 cups low-sodium chicken broth or vegetable broth
1 (14.5-ounce) can no salt added diced tomatoes, with their juices
2/3 cup creamy natural peanut butter
2 teaspoons honey
1/2 cup chopped scallion greens (about 3 scallions)

Steps:

  • Heat the oil in a large soup pot over a medium-high heat. Add the onions, bell pepper and carrots and cook, stirring until the vegetables soften, about 5 minutes. Add the cayenne, black pepper, garlic and ginger and cook for 1 minute more. Stir in the sweet potato, broth, and tomatoes and bring to a boil. Reduce the heat to medium-low and simmer until the potatoes are tender, about 20 minutes.
  • *Puree the soup in the pot using an immersion blender or in a regular blender in 2 batches and return the soup to the pot. Add the peanut butter and honey and stir, over low heat, until the peanut butter melts. Serve warm, garnished with the scallions.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

Harissa is a smoky North African chili paste made from smoked chiles, olive oil, spices, and sometimes tomatoes. Heat and flavor vary from brand to brand. This recipe was made with a French-produced harissa with a mild heat and extra sweetness from tomatoes.
2 Tbs. olive oil
2 medium leeks, white and light green parts thinly sliced (2 cups)
3 Tbs. tomato paste
3 Tbs. creamy peanut butter
1 ½ Tbs. harissa paste
2 cloves garlic, minced (2 tsp.)
1 tsp. ground turmeric
¾ tsp. ground cumin
2 medium sweet potatoes, peeled and sliced ¼-inch thick (5 cups)
3 ½ cups low-sodium vegetable broth
3 oz. spinach leaves, thinly sliced (2 packed cups)
Lemon wedges, for garnish
Blend mixture with immersion blender, adding more water if soup is too

Steps:

2 tablespoons unsalted butter
1 cup pecan halves
1/2 cup light brown sugar
12 to 14 leaves fresh sage
1/2 teaspoon ground cinnamon
Kosher salt
Two 1 1/2-pound steamable sweet potatoes in microwave steam bags
4 tablespoons salted butter, melted
1/2 cup light brown sugar, packed
1/2 cup heavy cream, at room temperature
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
2 large eggs, separated, whites whisked to almost stiff peaks
2 cups mini marshmallows

Steps:

  • Prepare the pan and coating. Preheat the oven to 375 degrees F. Butter generously the bottom and sides of a circular 1.75-quart or an 8-by-8-inch baking dish. In a food processor, add the pecans, brown sugar, sage, cinnamon and a pinch of salt. Pulse until crumbly like crushed cookies. Pour into the dish. Over a large bowl, tilt and tap the dish to coat all sides with the mixture. Add a bit more to the bottom of the dish to create a layer about 1/8-inch thin. Reserve the remaining mixture for the top. Refrigerate the coated dish and remaining topping until ready to fill.
  • Prepare the potatoes. Microwave the potatoes as instructed on the bag (usually 8 minutes). Once cooled to room temperature, break in half and place in a food processor with the butter, sugar, cream, flour, cinnamon and yolks. Pulse, and then blend until smooth. Taste and season with a pinch of salt if needed. Remove to a large bowl and fold in the egg whites. Pour into the prepared dish, smoothing out the top. Sprinkle the rest of the reserved topping evenly over the potatoes and gently press down to flatten.
  • Top and bake. Bake until the edges and top are golden, about 30 minutes. Raise the heat of the oven to 400 degrees F. Pour the marshmallows over the top and pat gently to an even layer. Bake while watching until the top is golden brown, 4 to 6 minutes. Serve immediately.

  • Heat oil in dutch oven over med-high heat. Add leeks and saute 5-7 minutes. stir in tomato paste, peanut butter, harissa, garlic, turmeric, and cumin cook 1 to 2 minutes stirring constantly. Add broth, sweet potatoes, and 1 1/2 c water. Simmer over med-low heat, partially covered for 25 minutes or until sweet potatoes are tender.
  • Remove from heat and blend mixture with immersion blender (add more water if too thick). Bring soup back to a simmer and stir in spinach.
  • Serve with lemon wedges.

I made this recipe in a recent Food Tech class and loved it. It's a very thick soup thats great for a cold winter.

1 tablespoon oil
1 large onion, diced
2 tablespoons curry powder
500 ml chicken stock
500 g sweet potatoes, peeled and cut into 1cm cubes
1 tablespoon coriander, stems chopped
1 tablespoon coriander leaves, chopped
1/4 cup coconut cream
1/4 cup unsalted peanuts
salt, to taste
pepper, to taste

Steps:

  • Heat the oil in a medium saucepan and add the diced onion. Cook until sauteed and add the curry powder.
  • Cook the onion until it has absorbed the curry powder and reduce the heat to medium/low.
  • Add the chicken stock, potatoes and corriander stems to the onion and cover with a lid for 20-30 minutes or until the potato starts to fall apart in the stock.
  • Remove from heat and add the coconut cream and peanuts. Stir until combined.
  • Use a stick blender or food processor to blend the soup until all the potato is pureed and the soup is thick.
  • If you are wanting a runnier soup, add some cream or milk to the mixture.
  • Serve immediately topped with corriander leaves and season with salt and pepper.

2/3 cup plus 2 Tbsp. extra-virgin olive oil
2/3 cup plus 2 Tbsp. harissa paste
2 Tbsp. white wine vinegar, divided
3 1/4 lb. medium sweet potatoes, peeled
Kosher salt
3 Tbsp. raw pistachios
2 tsp. sesame seeds
1 tsp. fennel seeds
Special Equipment
A spice mill or mortar and pestle

Steps:

  • Preheat oven to 400°F. Whisk 2/3 cup oil, 2/3 cup harissa, and 1 Tbsp. vinegar in a large bowl to combine. Slice sweet potatoes crosswise on a mandoline 1/8" thick. Add to bowl with harissa mixture and toss to coat; season with salt.
  • Arrange sweet potatoes so they are standing upright in concentric circles in a 2-qt. baking dish, packing tightly, and roast, brushing any accumulated harissa oil in dish onto sweet potatoes every 10-15 minutes, until soft and starting to brown on top, about 1 hour.
  • Meanwhile, toss pistachios, sesame seeds, and fennel seeds on a small rimmed baking sheet. Toast alongside sweet potatoes until golden brown, about 4 minutes. Let cool, then transfer to spice mill or mortar and pestle and coarsely grind. Set dukkah aside.
  • Whisk remaining 2 Tbsp. oil, 2 Tbsp. harissa, and 1 Tbsp. vinegar in a small bowl. Remove sweet potatoes from oven and brush with oil mixture. Sprinkle with reserved dukkah.

  • Dukkah can be made 3 days ahead. Store airtight at room temperature.
