2 bunches fresh rosemary
1 large red onion, thinly sliced
2 lbs salmon fillets, with skin
2 large lemons, thinly sliced
1/3 cup olive oil
salt and pepper

Steps:

  • Place half of rosemary sprigs in a single layer in the center of a baking pan.
  • Place sliced red onion ontop of the rosemary.
  • Place salmon filet on top of the onion with skin side down.
  • Sprinkle salmon with salt and pepper.
  • Cover salmon with remainder of rosemary sprigs.
  • Place lemon slices over rosemary.
  • Drizzle olive oil over filet.
  • Sprinkle with salt.
  • In a preheated 500 degree oven, roast salmon for about 20 minutes or until cooked through.
  • Serve salmon with onion and lemon.

1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

1/2 cup Marsala wine (or white wine)
4 teaspoons capers
4 pieces of aluminum foil

Steps:

  • Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

1 1/2 tablespoons fresh rosemary leaves, ground, plus more for garnish
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups sugar
4 large eggs
1 cup vegetable oil
1 teaspoon pure vanilla extract
1 cup buttermilk mixed with 1 tablespoon lemon juice
16 ounces mascarpone
1/4 cup lemon juice
2 lemons, zested
1 cup smoked salmon, chopped, plus more for garnish
32 oz. cream cheese
2 cups heavy whipping cream
1 tablespoon concentrated chicken broth
Bunch chives, chopped
1 large lemon, zested

Steps:

  • For the batter: Preheat the oven to 350 degrees F. Line two 12-cup muffin pans with cupcake liners.
  • In a medium mixing bowl, combine and sift the flour, rosemary, baking powder and salt, and set aside. In another mixing bowl, combine the sugar and eggs. Using an electric hand mixer, beat on medium-high speed until blended. Add the oil and vanilla and beat together for 1 minute. Add the flour mixture a little at a time, alternating with the buttermilk and lemon mixture. Start and end with the flour mixture. Divide the batter evenly among the lined cups, filling each three-quarters full. Bake until a toothpick comes out clean, 18 to 20 minutes. Transfer to a wire rack and cool completely.
  • For the filling: Whip the mascarpone until creamy. Add in the lemon juice and lemon zest. Mix in the smoked salmon. Place into a piping bag and put in the refrigerator until ready to use.
  • For the frosting: Whip together the cream cheese, cream and broth until light and fluffy. Add in a handful of the chopped chives. Place into a piping bag fitted with a large round tip.
  • Once the cupcakes have cooled, pull out the centers with a cupcake corer. Fill the cupcakes with the smoked salmon filling. Pipe the frosting onto the cupcake and garnish with lemon zest, rosemary pieces and some rolled up smoked salmon.

4 lemon wedges

Steps:

  • Cut salmon into 4 portions and place in a shallow dish.
  • Wisk lemon juice, olive oil, chopped fresh rosemary, garlic, salt and freshly ground pepper to taste in a small bowl.
  • Use 2 tablespoons of the lemon juice mixture to marinate the salmon.
  • Cover and marinate in the refrigerator for 20 to 30 minutes.

This is a lovely light and flavorful recipe that's perfect for summertime dining. I have fun using pattypan squash, but any yellow summer squash will fit the bill. And if it's not asparagus season, consider substituting broccoli spears.

Olive oil spray
5 to 7 medium red potatoes, cut into 1/2-inch slices
Sea salt and freshly ground black pepper
1/2 to 3/4 pound salmon fillets
Pinch of grated lemon zest, preferably from an organic lemon
4 to 5 yellow pattypan squash
7 to 10 mushrooms, thickly sliced
8 to 10 asparagus stalks
2 or 3 fresh rosemary sprigs

Steps:

  • Preheat the oven to 450°F.
  • Spray the inside and lid of a cast-iron Dutch oven with olive oil.
  • Make a thick layer of potatoes in the pot and season lightly with salt and pepper. Lay the salmon on top. Spray the salmon with olive oil; then sprinkle the fish with lemon zest.

1 garlic clove , finely chopped
½ pack fresh tarragon , finely chopped
2 tbsp olive oil
4 x boneless salmon fillets

Steps:

  • Put the lemon zest and juice, garlic, tarragon and olive oil in a shallow, non-metallic dish and stir together. Season with salt and pepper, then add the salmon fillets. Turn them to coat in the mixture, rubbing it in to the fish well. Cover and set aside for 10 mins.
  • Remove the salmon from the marinade and wrap in foil, if barbecuing. Cook for 5-8 mins over hot coals until just cooked through.
