1 cup fresh apricots, peeled and chopped into chunks
1 cup fresh pineapple, chopped into chunks
1 cup fresh papaya, chopped into chunks
1 lime, juice and zest
1 jalapeno, seeded, deveined, finely diced
1/3 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all ingredients and store in the refrigerator at least an hour before serving.
  • HINT: This is a mild salsa if you want more heat leave the veins, if you want even more heat also leave in the seeds.
  • GREAT served on pork chops!

1 cup mango
1 cup red bell pepper
2/3 cup kiwi
3/4 cup red onion
1/4 cup cilantro
1 1/2 teaspoons fresh lime juice
minced serrano chili
salt and pepper

Steps:

  • Finely chop all ingredients with knife or food processor. Mix well, Add serrano chilies a little at a time to taste.

1 cup chopped peeled pineapple
1 cup chopped peeled mango
1 cup chopped yellow or red bell pepper
2/3 cup chopped peeled kiwi fruit
1/2 cup finely chopped red onion
1/4 cup finely chopped fresh cilantro
1 teaspoon fresh lime juice
1/2 teaspoon minced serrano chili* (with seeds)
Ground white pepper
*A serrano is a very hot, small fresh green chili available at Latin American markets and many supermarkets.

Steps:

  • Combine all ingredients in medium bowl. Season with white pepper and salt. (Can be made 3 hours ahead.)

1 cup peeled, diced cherimoya
1 cup peeled and diced papaya
1 cup peeled, seed removed, and diced mango
1 cup pineapple chunks, grilled
1 cup peeled, pitted, diced avocado, preserved by squeezing a lime over it to prevent browning
1 cup diced star fruit
1 cup peeled, diced kiwi
1 1/2 cups small diced white onion
2 red Thai chile, stem removed, diced small
1 red jalapeno, stem and seeds removed, diced small
1/2 cup roughly chopped cilantro
3/4 cup rice wine vinegar
3/4 cup olive oil
1/2 cup chopped scallions
2 tablespoons brown sugar
3 limes, juiced
Kosher salt and ground black pepper

Steps:

  • In a large mixing bowl combine all the ingredients. Stir and refrigerate until use. Best if used the same day it is made.

2 (15 ounce) cans pineapple tidbits, drained with juice reserved
2 mangos - peeled, seeded and diced
2 green chile peppers, diced
⅓ cup chopped fresh cilantro
½ cup freshly squeezed lime juice and pulp
½ cup fresh orange juice
¼ cup dark rum
½ clove garlic, minced
8 skinless, boneless chicken breasts

Steps:

  • In a bowl, mix the pineapple and the reserved juice from 1 can, mangos, peppers, cilantro, lime juice and pulp, orange juice, rum, and garlic. Let stand for one hour before adding chicken.
  • Strain the juice from the salsa to use for the marinade. Set aside enough salsa without the juice to use for topping the chicken. Marinate the chicken breast halves in the bowl with the remaining salsa and juice mixture for 2 to 6 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Discard salsa used for marinating, and bake chicken for 30 minutes in the preheated oven, or until chicken juices run clear. Top with reserved salsa to serve.

1 tomatoes (very firm)
1/2 red onion
1 whole mango (very firm)
1 bunch cilantro (inch thick)
2 tablespoons minced garlic
1 bbq teriyaki chicken breast
1/4 cup vinaigrette dressing
Tabasco sauce, to preference of spiciness

Steps:

  • Mix all ingredients into bowl as you go. Shred chicken breast. Chop all vegetables in appx. 1/4" chunks. Mix in garlic, vinaigrette, and Tabasco.
  • Best served with tortilla chips. Trader Joe's has great organic chips. Also good rolled in a tortilla. I have made just the salsa and served it over a whole baked chicken breast with black beans.
  • Cook time is for chicken breast.
