BOBOLI PIZZA
Boboli pizza is a lifesaver when you need something quick for dinner. This somewhat thin and crispy pizza crust, still has plenty of "chew", but also lots of flavor. And the sauce? My favorite!

Steps:
- Preheat oven to 450. Set oven rack to highest position.
- Open tomato sauce and pour into a big measuring cup. Add seasonings and feel free to adjust to your taste. This makes enough for two pizzas.
- Top crust with ½ of sauce. Sprinkle with most of parmesan leaving a little to sprinkle on top when pizza is served.
- Top with pepperoni, peppers and onions. Add sausage.
- Sprinkle on mozzarella. Throw on pepperoncini.
- Place pizza into preheated oven directly on top oven rack. Bake about 10 - 20 minutes until as golden as you like. Take out and let rest for about 5 minutes. Slice and serve with more chile flakes and the extra parmesan.

Steps:
- Add all ingredients (except second parmesan cheese) to breadmaker in order listed by your manufacturer.
- (put the garlic down inside the flour so it does not slow the yeast) Set breadmaker on dough setting.
- When cycle is done, form two crusts on pizza pans, sprinkle with parmesan cheese, cover and let rise again.
- Bake 5-10 minutes at 450 F until light brown.
- Cool.
- Wrap tightly in foil and freeze.

COPYCAT BOBOLI PIZZA CRUST
Boboli makes a unique pizza crust that has become very popular over the past few years. Now you can copy their crust at home with this simple recipe.

Steps:
- Dissolve yeast in 1/4 cup warm water (105 degrees F is perfect) in a large bowl. Let it sit for two minutes. Add the remaining water, olive oil, flour, and salt and mix well. Turn out onto board and knead for ten minutes. Place back in the bowl and cover with a damp towel and let rise 30 to 40 minutes. Divide dough into 3 parts and place in 3 olive-oiled pie pans. Dimple dough with fingers. Sprinkle the dough with salt, pepper, rosemary, and thyme (using amount as desired). Let the dough rise another 50 to 60 minutes. Preheat oven to 350 degrees F. When the dough has risen, bake at 350 degrees F for 25 minutes or until done and just lightly browned. Remove from oven and let cool for a few minutes before removing from the pans. Place the crusts on a rack to cool. Use as a pizza crust or cut into slices and dip in olive oil like bread sticks.
