ASIAN GLAZED DRUMSTICKS
Soy sauce, vinegar and Sriracha hot sauce make these Asian-Glazed Chicken Drumsticks savory delicious - serve over rice or vegetables for an easy meal!

Steps:
- In a heavy large saucepan, brown chicken on high for 3-4 minutes with a little spray oil.
- Add water, balsamic, soy sauce, honey, garlic, ginger, hot sauce and cook on high until liquid comes to a boil.
- Reduce heat to low and simmer, covered for about 20 minutes.
- Remove cover and bring heat to high, allowing sauce to reduce down, about 8-10 minutes, until it becomes thick, turning chicken occasionally. (Keep an eye on glaze, you don't want it to burn when it start becoming thick).
- Transfer chicken to a platter and pour sauce on top.
- Top with chives and sesame seeds and serve.

STICKY SOY HONEY BAKED CHICKEN DRUMSTICKS
Sweet sticky baked chicken drumsticks marinated in soy and honey are guaranteed to become a regular in your dinner rotation.

Steps:
- Preheat the oven to 220°C/430°F.
- Whisk together the soy sauce, Hoisin, honey, lemon juice, crushed garlic and chilli flakes. Taste and adjust the seasoning by adding more soy, honey or lemon juice.
- Place the chicken in a suitable marinating dish and pour over the marinade. Make sure the chicken is completely covered.
- Cover with plastic wrap and allow to marinade for at least 30 minutes but up to 24 hours in the fridge.
- Transfer the chicken to a sheet pan and spoon over one third of the marinade. Place in the oven and bake for 15-20 minutes until cooked through.
- Pour the remaining marinade into a saucepan and reduce until thick and sticky (the consistency of honey is good).
- Remove the chicken from the oven and switch on the oven's broiler.
- Glaze the chicken then place back in the oven and allow to caramelize for a few minutes. Repeat this a few more times until the chicken is sticky and caramelized.
- Remove from the oven and scatter over sesame seeds and spring onion then serve.

JAPANESE MUM'S CHICKEN
We have a Japanese girl, Tomoko, living with us, and tonight she and I cooked a Japanese dinner for us and her friends. She phoned her mum,Toshiko, in Japan for this, as it's her favourite recipe, and I wanted to share it here. It's simple and so good, and Tomoko, who is only 16, did such a good job of cooking this, then translating the recipe to English for me. *The liquid will thicken to a glaze if you are patient. It just takes a bit of time. If you feel your chicken is cooked (and going to overcook) remove it before going on to reduce the liquid. Same thing, if you must use breast meat, remove it (so it doesn't dry out) and continue reducing the liquid . If you do it this way rather than thickening with cornstarch you will get a richer glaze and not need to add stock or broth instead of the water. It just takes patience. AND NOTE: A glaze is sticky and coats the meat, this is NOT a sauce.

- Place all the ingredients in a saucepan over a high heat.
- Bring to the boil, then reduce to a simmer for about 20 minutes.
- Remove any scum that rises to the surface.
- Increase the heat, turning the drumsticks frequently in the liquid, and cook until the liquid has reduced to a sticky glaze.
- Arrange the chicken on a serving platter, remove the garlic clove and chili from the liquid, and spoon the glaze over.
- NOTE It's a glaze rather than a sauce, so there's not a whole lot of it.
DELICIOUS EASY ASIAN GRILLED DRUMSTICKS
This is SO good! Plan ahead the chicken needs to marinate about 8 hours. This chicken is delicious both hot or cold! If you are doubling this recipe, and I suggest you do, this chicken is very good, prepare two separate marinades in two bowls and use two separate bags for marinating (10 drumsticks in each bag).

- In a bowl whisk together the first 8 ingredients.
- Add in green onions.
- Place the chicken drumsticks in a large resealable bag.
- Pour the marinade on top and seal bag; turn to coat evenly with marinade.
- Refrigerate for a minimum of 8 hours, turning occasionally.
- Set grill to medium heat.
- Remove the chicken and discard the marinade.
- Place the chicken on a baking sheet, and pat any excess marinade off with a paper towel.
- Rub the drumsticks with peanut oil on all sides.
- Season chicken with seasoned salt or white salt and pepper.
- Gill turning chicken until crispy and golden brown, or until the chicken is thoroughly cooked.

Steps:
- Rinse off chicken.
- Combine all ingredients, except chicken, and bring to a boil. Leave on a low boil for 15 minutes.
- Add in chicken drummettes. Let boil for one hour or more until it all thickens and becomes sticky.
- Then let it stand for about ten minutes and then refrigerate.
- Can serve warm or cold(I have had them both ways and either way is good).
- Sprinkle with sesame seeds once arranged on platter and garnish with parsley.
